Dave, love your channel as a keto person and I've made a lot of “chaffels” which are savory waffles in a small waffle maker. My one tip would be - after you take your waffle out get a paper towel with some water in it. (You'll don’t have to put soap and just squeeze out water) and then place it on the iron and close it because that steam will get any dry bits that are your waffle maker :-)
I make French toast chaffles. I don’t always make savory ones. What I do is I mix a batter of cream, cheese and eggs and when I get on my little chaffles done I set them aside make an egg batter like you would French toast. Dip them in the egg and fry them in a pan with a little bit of oil or whatever kind of fat you want and they are fantastic. It’s just like French toast and you don’t miss your French toast at all.

I've watched a lot of keto recipe experiments & many have said its best to mix xanthum gum into the dry ingredients 1st to ensure better distribution & less clumping. The timers on the waffle irons were designed for cooking traditional waffle batters but longer time is needed for the cheesy batters. Most say its done when the steam stops. Thank you for showing your experience
Carnivore dieters, swap out the almond flour, coconut, and that thickener and use ground pork rinds. I used one batter with beef gelatin and one without, and both turned out awesome. Dave, I love your videos. They show me what not to do, so thank you for your screw ups. lol

I added another egg & it made all the difference. I was not using your recipe but doing something similar. It just needed more of a binder and so I added extra egg.
This was delicious! I made it in my regular waffle iron, & it made 2 BIG ONES & about 3/4 of another one. My husband & I split ONE each meal, with additional sides. So good! I made these ahead of time & re-heated in the toaster oven. Thanks for another keeper.
what a riot you are,,,,,,just a tip,, never use pam cooking spray on anything that is non-stick,, it ruins the non-stick coating and makes it stick even more, it already comes with non-stick coating so no spray needed,,,, wait until the steam stops, the light only indicates that the elements are on, not that the waffle is done, if at first you don't succeed try and try again, keep up the great videos
Dave, I'm really enjoying your content and your attitude with life. One thing you need to know about waffle irons is when you watch it cooking you can see the steam coming up even if the light goes off. If it's still steaming you have to wait once the steaming stops it's done
The kitchen utensils I cannot live without is my little metal whisk and my rubber scraper. It gets every bit out of the bowl. And you don’t have to use a fork for mixing. You can use the whisk and it’s wonderful.
I tried these the other day, I am mostly wheat free, and these satisfy the bread feel, as well as the bread like texture. The taste was great. After, I made, the first 2, I really had a hard time, saving, them, for my dinner, I kept picking at them. I will be making them again.
Love your videos. I feel like it needed more liquid. When I change Pancake recipe to waffle, it asks for more liquid, 1 cup milk instead of 3/4 cup milk. Glad it worked for you in the end.
The waffle iron is designed to cook on both sides but it generally needs 3 minutes per side. Use less batter. Close the lid and flip. Wait three minutes and flip again. Wait another 3 minutes and open once it stops steaming.

Took me quite awhile to realize if you open your waffle iron too soon it splits your waffle as you found out lol. Usually when it stops steaming it can be done but still that’s not always the case. just make keto waffles all the time and keto and I’ve been trying to get back on. I made a batch of waffles. Couldn’t remember how used to make them and they did not turn out very good so I would like to try these because I love savory waffles they’re a great snack. They make a great sandwich. You can put anything on them, they’re yummy and freeze well and if you want to just pop them in the air fryer or toaster for a minute to crisp them up you’re good to go Nice to see your so real❤
Sounds yummy! Looks like mine! Usually almond or coconut flour still takes patience. Each waffle iron is different too. But, it's needed at my house, as my Husband will eat whatever I cook. He needs to lose weight! But, sometimes he says please don't make that again. A savory waffle could still take a splash of Keto maple syrup! Chicken & waffles! I'll try it, as the waffle replaces all the breads I don't want to buy.

It really helps when you include those details so we can figure out the carb count and the protein, etc. It’s a lot to keep track of but you present a really clean kitchen and a delightful attitude with some humor, a wonderful & entertaining mix! Back in the day and I mean the 90s, I made cornbread waffles and topped it with chili, and I also made taco topped cornbread waffles. They were so good. Because I’m pretty much carnivore or maybe ketovore, but I don’t really eat potatoes or rice or salad or much veggies I probably would do it is carnivore as possible.
Use a scilicone basting brush to add better oil like olive or baccon fat. Cook till it stops steaming, should be a little crispy on the outside tendervin the center. And you can use a clean, basting brush to clean out the little leftover bits.

Instead of mixing the cheddar. First sprinkle half the cheddar then add the mixture, then sprinkle the rest of the cheddar. No pam needed. Makes it a bit more crispy. With that wet of a mixture, 7 to 8 minutes is needed. Mix the Xanthan gum with the dry ingredients first. It tends to gum up into a ball if it hits moisture. I bet you don't have to use both flours. Like 1/4 cup of coconut or 1 cup of almond flour should do. Xanthan gum is a keto replacement for baking powder.
Why replace baking powder with xantham gum as both are a corn product? This is a real question out of curiosity. I'm allergic to corn so I just make my own baking powder.

It's usually 4-5 mins before they are ready. The steam will just about have stopped. If you open it too soon, it hasn't had time to complete the cooking, so it'll end up with what you just saw.
Did you butter the grids first? Adding butter to the batter tends to make it stick less. Also, waffle batter is usually pourable. I've never seen it stiff as yours.
You might have to preheat your waffle maker. i have a Cuisinart. the light goes off when it's heated, then you add your batter & close it. The light goes back on when your waffle is done.
I know they say that you should not use Pam spray on nonstick, but I do my waffle iron. And you only sprayed the bottom one and not the top one and I think it’s stuck so when you opened it it ripped it apart. That’s my theory. lol. Love how you saved it though.

Put waffle maker in the sink (no water) and Use a old toothbrush or other kitchen brush. Tip it sideways to get the crumbs out easier.

I use bamboo skewers when making all types of waffles. Never metal.

WAIT FOR THE STEAM TO STOP. Also flip it to cook on both sides down/up. Itll help it loosen also.
