Quality Cheese cloth will not leave anything behind. It is lint free. Actually you may run more of a risk with papertowels. “Cheesecloth is woven in a basket weave pattern which is light and airy” and that makes it perfect for straining things like cottage cheese. Also, You can get it almost anywhere. (Stores or online) Wash or boil -dry and re use.

I made these and added about 1/2 c of pumpkin purée, pumpkin pie spice and then lined a cookie sheet with parchment paper. Used avocado oil on paper, put batter the shape of pancakes on the sheet and cooked them 400 degrees about 20 minutes or so. Topped with sugarless syrup and sugarless whipped cream. They were delicious! Baking them in the oven and turning them over once they were brown on top held the pancakes together better than frying them in my cast iron pan.
I made pancakes with cottage cheese, cinnamon, vanilla, butter, some spoons of almond flour, coconut flour and baking powder. Also added some teaspoons of high protein pancake mix. They turned out delicious. They kind of reminded me of sourdough pancakes because of the cottage cheese. No straining of the cottage cheese was involved.

Caroline at All Day I Dream About Food says that they used 30g of erythritol in the study and that is WAY more then is ever used in an entire recipe. Even a whole cake doesn't have that much. So the amount we use on Keto is perfectly safe. Check out her video on this subject on TH-cam.
Coffee filters work well for getting the liquid out of your cottage cheese…and a whisk to mix your dry ingredients will make things easier for you. Love watching your vids!

My friend swears Allulose tastes chemically to her because "they use chemicals to make it" even though I told her it's a natural sweetener. Do you know how it's made by any chance?
Its a sugar-alcohol and completely consists out of carbs, same with erythritol but they cant be absorbed by the human body so it doesnt spike insulin or any like that

I make blintz pancakes; 1c cottage cheese, 4 eggs, 1c sour cream, 1c flour( I use almond flour) 1tsp vanilla( I use almond extract), 1-2 Tbsp sugar( I use stevia). Put all ingredients in a bowl, mix well, cook on skillet over low/medium heat. I love these and they r high protein, low carb. I add butter and a little powdered sugar or maple syrup, or fresh fruit or jam. Whatever u like. They r denser than regular pancakes. You can purer cottage cheese to smooth out if you want but not needed.
2 suggestions: Nylon mesh "cheesecloth", which is used to strain yogurt, etc. You can find it in bag shapes or flat and it is totally reusable and very inexpensive. Allulose for sweetening is the second. Excellent flavor with no aftertaste at all. Not cheap, but worth it. You have to use a little more because it is 70% as sweet as sugar. Thanks for the recipes. You are a huge help to filter out ones I don't want to try ;)

Im sure the tree huggers on here will come for me on this one…..but Walden Farms pancake syrup is probably the best TRUE no sugar syrup substitute and contains none of the awful sugar alcohols like maltitol or mannitol.
So, you know how whole almond’s are brown? Well, blanching removes that brown husk, and leaves you with a whitish almond. The product you used is blanched almonds ground fine, aka, blanched almond flour. ❤️🍀
Have you tried using a fine mesh strainer. Have to plan ahead but it does the job and less waste. Half an hour or overnight in fridge. Paper towels are bleached so I’d be concerned more about the chemicals leaching into food than possible fuzz from a flour sack towel that has been washed. Thanks for being a real human. it was me who suggested the salad spinner,,,,, best hack ever, takes out all the liquid and if needed you can add more back for certain recipes, most people have salad spinners or they are usually at used stores

Thanks for the recipe. I made those and turned out really good. I didn’t strain cottage cheese, add Xanthan gum. Batter was thick after 5-10min. Some were broken when flipping (my pan was not very smooth). Regardless, I really like the taste. I didn’t add any syrup but had them with blueberries.
Hi Dave, xanthan gum will thicken loose batter with a very small addition. Also, monk fruit will not raise your glycemic index and is keto friendly. Just a thought for your experiments.

My great grandma used to use a stainless steel mesh strainer to rinse away the whey from the curds in her cottage cheese... I did buy a Ninja Chop after seeing you use it, I was in the market for a smaller device. You've also inspired me to rethink how film my own cooking videos! ❤

Dave, I use a fine metal mesh cone shaped coffee filter, or sometimes a nylon mesh reusable coffee basket, to drain whey from yogurt to make greek style yogurt. It would work great for cottage cheese, as well. No paper towel shreds, no washing messy cheese cloth. I place the filled basket in the top of an empty quart container from cottage cheese or yogurt. I lay the lid across the top so it doesn't dry out. The whey drains into the container. I usually start these draining in the evening, so it'll be ready in the morning. If you have pets, they love the whey you drain off.
This made 6 plus of the little waffles (overflowed). I didn’t strain the cottage cheese…put blueberries in some and chocolate chips in a couple. Worked well I thought. And they do taste really good…one of the best tasting keto options yet!

Cheese cloth is a different type if cloth made specifically for cooking, you’ll see people use it for stuffing and turkeys. Totally safe for food! Love your videos

there is a press people use to make humus and soy cubes and stuff that may work for pressing the moisture out of the cottage cheese. it is primarily used to press the moisture out of beans, chickpeas and other stuff like that after they boil it to make tofu

It takes more planning, but you could try measuring recipe amount of cottage cheese into a sieve (fine-mesh strainer) place over a bowl to catch the liquid and keep in the fridge overnight. OR, I recommend an already thick cottage cheese such as Good Culture so you don't need to strain. Place a wet towel or dishrag under your bowl to stabilize the bowl when stirring one handed.
You mentioned lemon…lemon and blueberries would totally rock! Also you’ll have to play around with the mixture, I don’t use near as much cottage cheese because when I used a lot it was too runny so I keep adjusting the recipe and I think the ones I made today were probably the best yet.
You can strain your cottage cheese in a container used to strain runny yogurt to turn it into Greek yogurt. It works fantastic, but it does take time. I let it sit in the container and use it the next day. I bought mine off of Amazon. I’d send you a picture of it but I don’t know how to that. Love your videos.
I tried this recipe without straining the cottage cheese (by the way this is needed because usually they add a ton of gums to basically sell you water) and adding 1 teaspoon of gluten and increasing the coconut flour to 1.5 tablespoons. Almost good but still wet inside when golden outside. I found that if you put 60 g/2 oz of the dough in a small bowl, microwave it for 60 sec (700W microwave) THEN put it on a griddle, the result is surprisingly good. If you omit flavors, sweeteners and add more salt, this dough could be used for pizza.
Love your videos. Psyllium husk and coconut flour absorb a lot of moisture, that may explain why your batter was too thick. Have you considered not straining your cottage cheese and blend them with eggs in a blender?

You could just melt some of the chocolate chips with a little coconut oil in the microwave and spread it on top of the pancakes...makes me miss my mom's Chocolate Gravy, which is definitely NOT Keto! Love your videos, Dave, so fun!
Cheese cloth is a different type if cloth made specifically for cooking, you’ll see people use it for stuffing and turkeys. Totally safe for food! Love your videos
Paper towels have bleach and formaldehyde added for stiffness and brightness. Use a cheese cloth, works great.
Or get unbleached type.
A jelly strainer bag would help a lot! It's a nylon mesh, handy for all kinds of food draining - zuchinni, cucumbers. Thanks for the recipe, really enjoying your videos!

Suggestion for straining: put a coffee filter into a wire strainer, put the strainer over a bowl, and allow to drain.
Lemon zest, orange zest adds such a nice fresh taste to food!

there is a press people use to make humus and soy cubes and stuff that may work for pressing the moisture out of the cottage cheese. it is primarily used to press the moisture out of beans, chickpeas and other stuff like that after they boil it to make tofu

Just had to share the love for your channel, and wanted to help the algorithm. ❤ Keep doing what you're doing! I enjoy and learn from the successes and occasional fails.
It takes more planning, but you could try measuring recipe amount of cottage cheese into a sieve (fine-mesh strainer) place over a bowl to catch the liquid and keep in the fridge overnight.
OR, I recommend an already thick cottage cheese such as Good Culture so you don't need to strain.
Place a wet towel or dishrag under your bowl to stabilize the bowl when stirring one handed.
You mentioned lemon…lemon and blueberries would totally rock! Also you’ll have to play around with the mixture, I don’t use near as much cottage cheese because when I used a lot it was too runny so I keep adjusting the recipe and I think the ones I made today were probably the best yet.
You can strain your cottage cheese in a container used to strain runny yogurt to turn it into Greek yogurt. It works fantastic, but it does take time. I let it sit in the container and use it the next day. I bought mine off of Amazon. I’d send you a picture of it but I don’t know how to that. Love your videos.
I tried this recipe without straining the cottage cheese (by the way this is needed because usually they add a ton of gums to basically sell you water) and adding 1 teaspoon of gluten and increasing the coconut flour to 1.5 tablespoons. Almost good but still wet inside when golden outside. I found that if you put 60 g/2 oz of the dough in a small bowl, microwave it for 60 sec (700W microwave) THEN put it on a griddle, the result is surprisingly good. If you omit flavors, sweeteners and add more salt, this dough could be used for pizza.
Paper pieces (particles) will get into the food 100%...the fabric to use is a type specific to avoid lint .. it's not fluffy terry cloth etc.

Love your videos. Psyllium husk and coconut flour absorb a lot of moisture, that may explain why your batter was too thick. Have you considered not straining your cottage cheese and blend them with eggs in a blender?
