Cottage Cheese Keto Soft Pretzels! Fast & Easy low carb high protein recipe!

    Here's a recipe for keto pretzels that aims to be as delicious as Auntie Anne's, using cottage cheese to add a unique twist and ensuring the dough remains elastic before cooking:
    Keto Cottage Cheese Pretzels
    Ingredients:
    2 cups shredded mozzarella cheese
    2 oz cream cheese
    1/2 cup cottage cheese
    1 1/2 cups almond flour
    1 tbsp baking powder
    1 tsp xanthan gum (for elasticity)
    1 large egg
    1/2 tsp salt
    Coarse salt for sprinkling
    2 tbsp melted butter (for brushing)
    Instructions:
    Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
    Prepare the Cheese Mixture:
    In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring between each, until the cheeses are melted and well combined.
    Mix the Dry Ingredients:
    In a large mixing bowl, whisk together the almond flour, baking powder, xanthan gum, and salt.
    Combine Ingredients:
    Add the melted cheese mixture and cottage cheese to the dry ingredients. Mix until a dough forms. You may need to use your hands to knead it together thoroughly.
    Add the Egg:
    Add the egg to the dough mixture and continue to knead until fully incorporated. The dough should be smooth and elastic.
    Shape the Pretzels:
    Divide the dough into 6-8 equal parts. Roll each part into a long rope and then shape into a pretzel.
    Bake:
    Place the pretzels on the prepared baking sheet. Brush each pretzel with melted butter and sprinkle with coarse salt.
    Bake and Serve:
    Bake in the preheated oven for 12-15 minutes, or until the pretzels are golden brown. Remove from the oven and allow to cool slightly before serving.

      I use them as buns! I use mozzarella cheese instead and put everything bagel seasoning on it…omg! Amazing! Even my non dieting husband likes them. I am so thankful as I love bread. Best I have found so far. 😊

    Put some almond flour on the counter. Take your dough and roll it into a tube and cut the tube in even sections. Roll each section on the counter with almond flour. You would get better looking and even pretzels...can't wait to make these!

    I've been watching you lately...
    Just a gentle suggestion for you with this recipe. I have not made this recipe but I am always in the kitchen making something so I know my way around a spatula....lol...
    1) When it comes to your mozzarella and cream cheese mixture, I don't see any harm in adding the cottage cheese with them so that all three ingredients get melted together in the microwave. Better yet, blend the cottage cheese in your Ninja and then add it to the mozzarella and cream cheese and then toss it into the microwave. Everything will blend better.
    2) Crack your egg into a small dish and whisk it up before you add it into the bigger bowl. Everything will blend together better instead of trying to chase your egg around the dish and mash it up into the other ingredients. If your Ninja is still on the counter after blending the cottage cheese like I suggested then use that instead of a whisk. Smarter not harder.
    3) You need a stationary surface so roll the dough on your counter versus trying to roll it between your two hands while they're in the air. Add some almond flour if you need to and you can also wet your hands a bit if you find the dough a bit sticky.
    Your videos are very interesting. I hope you don't take my advice as criticism I am just trying to make it easier for you in the kitchen..
    By the way with regards to your apron I wondered if you were in between oil changes while you were baking 🤣🤣🤣🤣

    Great recipe! A little hint, really knead the dough thoroughly, I use the kneading paddle on my stand mixer for this. It really works the Xanthan gum into the dough to give it a chewy and stretchy texture. I roll my portions out into a disc and roll them into a tube, dusting them with almond flour on top before I roll. I then twist it into shape. To get the browned crust, mix 1 c of warm water and 1/2 tsp of baking soda until dissolved. Brush each pretzel with it and top with salt. Once they come out, cover them with a dish towel and let them rest for 10 minutes so the insides can steam as they cool. I think you might like this for texture.

    Loving the keto content Dave. Been keto for 7 years. (Came over from your reselling channels). Just an fyi, you can use cinnamon sugar if you use your alternative sweetener. I make keto cinnamon sugar donut holes with a cake pop appliance I thrifted (they’re always some at Goodwill). Maybe that would be a good AI video. I would suggest if you have a Costco nearby you’d get a much better price on a large bag of almond flour and get their monkfruit blend sweetener also in a bigger bag. This is much more cost effective than buying the small sweetener you’re getting at your local grocery store. Keep the videos coming!😊

    So, if you are going to do Keto, stop using Pam! It contains seed oils which are unhealthy. Try getting an avocado oil spray instead. In fact, stop using seed oils all together! Only use animal fats like butter, ghee, bacon grease, beef fat or tallow, duck fat, or lard. Also olive, avocado, and coconut oils. 😊

    I've enjoyed watching your attempts at new recipes. Your procedure reminds me of my baking/cooking. Hey, that's how you learn! And I believe the more you do it, the better at it you become. I've already seen you improve. Just a tip: Usually a recipe calls for 1/2 dozen or dozen, etc. What I would do to make things look in proportion - I would roll out my "dough" on a parchment paper, making a tidy log, then if I'm looking for 6 pcs, I'd cut the "log" in half and half again until I reached the number of pieces I need. Then I would take each length and shape the pretzel. Hope this helps. This is good for making buns of any type too. You are doing great and anything keto, low carb or gluten-free I'm all in. Thanks for your recipes. I'm snatching everyone I can get that in the end you say is good! :) YUM I just started to watch my eating habits. Looking forward to all your help and input.

    Thank you for this recipe, Dave! Hot pretzels are one of my favorite snacks - often eaten with a slice of cheese for breakfast. I just restarted Keto last week, already my arthritic aches and pains have lessened. (Probably due to zero sugar, rather than the four pound drop in body weight.) I have been doing low carb off and on for 54 years and it is so much easier now because of new information and better products. When I was 19, I lost 44 pounds (in maybe six months) due to low carb and it changed my life. The new cottage cheese recipes are very exciting. Thanks for your efforts, which are worthy. Please stop with the references to poo by any word, I beg you. This is a food channel.

    According to AI yeast can make keto doughs rise and probably even taste more like traditional doughs. Apparently you have to add a little sugar or honey because that’s what makes the reaction so the dough will rise, but the yeast consumes it lowering the carbs.

    Might want to try dipping these in a dilute lye mixture like real German pretzels. In the normal pretzel, the lye chemically cooks the outer layer of flour giving you that delicious brown, rich, chewy skin on the outside of a pretzel. Not sure if it would react with any of these ingredients in this recipe, though, so you'd have to experiment. (Some people who are afraid of lye use baking soda instead. It's less reactive but still gives you some of the benefits of a lye dip.)

    I just found your channel, and I like how laid back you are. Try Victoria's keto 2.0 flour blend. Follow instructions exactly with a food scale. I made yummy keto bread that didn't stick to the roof of my mouth. 🤢I hate that. She's on TH-cam, and explains it well. So far I've made bread, biscuits, chocolate cake, and pancakes. I also breaded chicken once and had some great fried chicken!!! One more thing, you could've put your dough on a waffle maker, and had yummy chaffles! Great job on your channel. But pleeease make Victoria's flour, then make bread!!!! Keep on being you, and your channel will keep growing fast!!!!!!

    Great video as always. I would only say that the pre-shredded cheese has potato starch in it to keep the shreds from sticking together. I know you are not always keto, but when and if you are, shred your own blocks of cheese to avoid the extra carbs. Thanks for sharing!

    Total clickbait on that picture of regular Pretzels for Keto..’really thought you were better than that.
    But the reason n regulars looks stupid brown is because they get boiled in salt water first..then baked..Maybe if you did a quick smallish spritz of salt water, before baking might make them look a bit more color wise to your “ fake” picture!😂

    Ramp down your carbs slowly over the course of a couple of weeks until you're under 20g total carbs (not "net" carbs) .... give your gut microbiome a chance to adjust. That should help you with your tummy issues.

    When making any kind of Fathead type dough. I mix ingredients in a food processor, and it works really well well. Rolling on a silicone mat helps too.

    I am on the Keto Diet for Health reasons. Finding Keto bread and foods is hard and expensive. So we have to make our own. None Keto, you can just go order or buy it, so that is probably why the Keto ones do so well! Love your personality and content. Keep it up!

    Keto carnivore is awesome for me and I can lose weight if I use gluten free non gmo flour, because a Dr once said almonds can be very harsh for stomach and I listened

    I would chill the dough first then roll into thinner ropes on wax paper (maybe sprinkled with almond flour) and shape- then brush dough with beaten egg & sprinkle sea salt /pretzel salt on top before baking which would make it look/taste more like a pretzel and the salt makes it for me= yum , or you could also brush with butter instead of egg wash!

    Hahaha... I just use my favorite sugar-free sweetener to substitute for the "Real" sugar whenever I make Cinnamon Sugar to add to something.
    Although Garlic Parm sounds good, but so does Cheddar; heck almost anything on a pretzel sounds good... maybe even Everything Bagel Seasoning, or is that taking things too far!?!?

    This video is labeled COTTAGE Cheese Keto Soft Pretzels....did I miss the cottage cheese being added? You put CREAM Cheese in it, but not cottage cheese, at least I didn't see that part.

    Thanks for the recipe, but please don’t use thumbnails with pictures of the real thing hat don’t look at all like the final product of your recipe. That’s very deceiving.....

    Thank you for your recipe. If I can make a couple of suggestions. Change your salt to either Himalayan pink salt or Redmond Real salt and ditch the table salt. Table salt has anti-aging agents. It's totally devoid of any mineral content, plus often has aluminum, and the iodized salt isn't real iodine. Sea salt isn't clean and can contain micro-plastics and other contaminate.
    You can exchange a good beef gelatine for the xanthan gum. Often, XG can cause issues or leave a funny taste to sensitive persons. To give a little more body to the dough, you could add some fiber like ground psyllium husks (fresh grind for best results) or some other of your choice. I like bamboo fiber or acacia fiber. It doesn't take a lot. Also, XG can be temperamental and can mess with some sensitive stomachs.
    If you are going to work with the keto, be sure to keep your electrolytes up. The easiest way is with the pink salt mentioned above. It has 85+ trace minerals, including potassium and magnesium.

    I think it's great you're trying! Good for you! Suggestion: Instead of the traditional pretzel shape you could make it easier and do sticks instead. Tastes the same and great for dipping in cheese sauce. 😊 You could also turn them into buns for burgers or sandwiches or even hot dogs! Yum. Bravo!

    The only reason I watched the video is because of the thumbnail. Because I thought maybe you had a way to make an actual keto pretzel look like a real pretzel but it was a lie and clickbait. Most baked Keto bread type stuff is gross.
