- Viral Low-Carb Cottage Cheese Bagels Recipe
Ingredients:
1 cup cottage cheese (full-fat for creaminess)
1 cup almond flour
2 tablespoons coconut flour
2 teaspoons baking powder
1 teaspoon salt
2 large eggs
1 tablespoon apple cider vinegar
1 tablespoon sesame seeds (optional, for topping)
1 tablespoon poppy seeds (optional, for topping)
1 tablespoon everything bagel seasoning (optional, for topping)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Cottage Cheese:
In a blender or food processor, blend the cottage cheese until smooth. This will help it mix better with the other ingredients.
Mix Dry Ingredients:
In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well.
Combine Wet and Dry Ingredients:
Add the blended cottage cheese, eggs, and apple cider vinegar to the dry ingredients. Stir until a thick dough forms. The dough will be sticky but should hold together well.
Shape the Bagels:
Divide the dough into 6 equal portions. Wet your hands to prevent sticking and shape each portion into a ball. Flatten slightly and use your fingers to create a hole in the center, forming a bagel shape. Place the shaped bagels onto the prepared baking sheet.
Add Toppings:
If desired, sprinkle sesame seeds, poppy seeds, or everything bagel seasoning over the top of the bagels.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
Cool and Serve:
Allow the bagels to cool on a wire rack before serving. Enjoy them as is or with your favorite low-carb toppings, such as cream cheese, avocado, or smoked salmon.
Tips:

Going to try these! For a "rounder" and thicker bagel, try rolling the dough into a long tube and THEN take the tube and shape into a bagel.

Just need to add a little more almond flour or coconut flour...
Try this instead:
Use a it in a piping bag or Ziplock bag with a hole cut out, brush insides with a tiny bit of oil, and pipe it big circles for better control.

Your video was great. Mistakes give it charm and reality. I’ve been there and done that. Sometimes letting the mixture with almond and coconut flours sit for five to ten minutes great job.make them less sticky, for future reference. I wear kitchen cooking, (disposable), gloves when I need to shape these kind of doughs. They stay wet longer, and they tend to not stick so much. But I had learn it as well.

Maybe try piping the dough from a ziploc bag with the corner cut off? You could pipe it into the circle with hole and get it thicker.

My friend got me hooked on your channel. I do like the way you make the same mistakes I would. It's funny you forgot to drain the cottage cheese in your bread video, and it didn't call for that in this video.
I do not suggest you try to make bagels unless you're not too picky about the taste. Being a NYer living in Fl and LOVING NY bagels, I've been trying to make them, and they need to rise twice. And if you want that amazing yeasty sweet flavor, you let your last rise go overnight in the fridge. If you really want to try making them, get a good mixer with a dough hook. Kneading dough can take a while. I do enjoy trying to make them though.

I'm so glad I found your channel. I have Celiac Disease and I LOVE bread and pizza is my favorite food!! NOW I CAN HAVE THEM AGAIN!! You might need to dehydrate the coconut before blending into a flour. Let us know how it works out

I have used silicone pans in shape of bagel or donut and worked for me. Thicker also. Thanks for the recipe , will try. Adding a 1/4 tsp of guar gum OR 1/4 tsp beef gelatin might give it that “chewyness”.

Thank you for your channel I really appreciate it I just wanted to let you know that you can take your dough and wrap it in Saran wrap and I guess you would have to use more to get a bigger bagel but you can wrap it up in Saran wrap and then you possibly could put in the freezer to make it more solid but I usually just take a knife and cut it and then kind of squish it down and then take the end of a wooden spoon to make the hole I definitely want to try your recipe and see the difference thank you again for your channel I really appreciate it and you just keep going.

It's so frustrating when I see someone making something I might want to try and they do not include the recipe. However, I am pretty good at figuring things out so for the most part it all works out but sometimes low-carb or keto recipes are a bit more difficult or nearly impossible without a recipe. I just found your site today with the cottage cheese flat bread recipe. I enjoy the realness of your videos. Just a suggestion, Have you ever used silicone baking molds? They make one for donuts, that I think would work perfectly for your bagels. They do need to be set on a flat baking sheet for stability.But the finished product pops right out, no spray or oil needed. I wanted to post a picture of the ones I have, but it won't let me. I look forward to watching many more of your videos. Thanks!❤

Gentle FYI, the baking powder can has a lip on the top so you can scrape the measuring spoon to level it.
I think I'm going to try this in my mini waffle maker. I bet it will be the best "Coffle" I have ever eaten.

Love your recipes. Awww.. I did learn something though, and that is wet your hands thank you.. last time I made chicken and dumplings and I made Bisquick dumplings. I couldn’t couldn’t roll them and get much of them put into the boiling stew because it just all stuck to my hands.. hey- where’s your wedding band?
