Just made these, I did add an extra tablespoon of coconut flour. They turned out pretty good. I had half with butter and half with cream cheese. I will definitely make them again. Thank you.
I wondered about adding extra coconut flour. It is supposed to absorb moisture or help thicken wet batters. The cottage cheese might have been on the wet side.

OMG so good. Currently, I go to a bagel deli type eatery and grab my favorite onion one ---- once in a while. Not even on a monthly basis. they are awesome, but i AM trying to bring my diabetes under control, so I don't let myself have them on the regular. Try this instead: Use a it in a piping bag or Ziplock bag with a hole cut out, brush insides with a tiny bit of oil, and pipe it big circles for better control.

I Love your chanel. For the begel you can try making them on your donuts mold or it will be easier if you put the dough in a ziplock bag and cut one of the bottom corner and form your begel directly on the parchment paper.
I like how you present your vids... I wouldn't have thought to snip the parchment paper that way, but that's a genius hack! I usually just struggle with a too big piece... So definitely, thanks for keeping it real... I also really loved your mess-up at the beginning, bc that's something we all do. Maybe, you could show how to salvage those ingredients, or turn them into something else at the end of your vid as an outtake, or what to do when you mess up remedy... we're all struggling with food prices so high, so it would make more sense to find a solution to mistakes than to toss out perfectly good food~ just an idea!

Your video was great. Mistakes give it charm and reality. I’ve been there and done that. Sometimes letting the mixture with almond and coconut flours sit for five to ten minutes great job.make them less sticky, for future reference. I wear kitchen cooking, (disposable), gloves when I need to shape these kind of doughs. They stay wet longer, and they tend to not stick so much. But I had learn it as well.

Maybe try piping the dough from a ziploc bag with the corner cut off? You could pipe it into the circle with hole and get it thicker.
