    Made this last night for dinner. Had to make a few adjustments due to a gluten allergy and no salt due to Dr.'s orders. Red onion, mushrooms, crushed garlic, no salt added beef broth in place of the wine and brandy. Thickened with a bit of corn starch, fresh ground black pepper, Sour cream and heavy cream. Delicious!!!

    Much respect to all chefs who have to cook on the fly. They make it look easy. On a side note that meat would have to be braised for tenderness. But he knew. RIP brother

    I add mushrooms...and fresh pearl onions. Makes the dish look better but Daddy Jack has nailed the taste...and that's what matters. Thank you chef.

    Who really gets mad about tasting off the big spoon. My grandma tasted off the big spoon, my aunties all taste off the big spoon, and my momma tastes off the big spoon. That said great recipe gonna try it this weekend.

    I was horrible when it came to cooking meals until I found this channel.
    In the last year, I've made a few of the recipes here. DJ made it real easy to make something incredible to eat. Feels like an old buddy is coaching me.

    Made it - loved it. I used to prep & pot wash at Swiss German restaurant. Always had a dinner roll ready for when those stroganoff pans when they came back. This was spot on to that authentic recipe.

    I took my wife to Daddy Jacks in Dallas for our First Date. 28 yrs. ago. I wish it was still there. Best Steaks ever and the Steamers were the best I have ever had went back many times. Jack can cook NO DOUBT ABOUT IT.

      Yes, actually ate at both Daddy Jack's (First Date) and Chaplins. To this day my wife measures every Steak Diane she orders by Chaplins. She always states none have ever come close.

    Just listening to him talk and not being so pretentious is art. He uses his hands doesn't use a bunch of cutting boards or utensils just cooks like he's in his own kitchen

      The fact that he stumbles over his words is a good thing. Some people are verbal, some people are visual, others kinesthetic. You cant be 100% best at everything, simultaneously. I think a cook is best in the tactile world, the physical world, where it's not about words. He feels good food, he knows it viscerally, how things should go, what the timings are, it's in his brain from decades of mistakes and successes. I'm glad he's not some chick in a thong in hawaii, talking a mile a minute, cooking something that looks plastic perfect. He has a plan, but then ad libs, be does variations, trying to tell us that it's almost always ok to go off script, if you know why...

    Great vid! I just can't help cringe when you touch everything without washington your hands after handling raw meat! Looks tasty though!! Wouldn't care if you tasted off the big spoon though, lol :p. I'm so used to home cooking. When you're getting the noodles ready, if amazes me how the stuff in the pan doesn't burn/stick to the pan! I would love some restaurant training!

    If ever there was a chef to give cooking a good name it's chef Jack. His love for the art of cooking and eating delicious food comes through in every video. If I was on a restricted diet and visited his restaurant I would ignore all dietary restrictions I had and chow down. Unfortunately I live in the desert southwest which is a long way from Chaplin's restaurant.

    Love this guy! It always reminds me of driving past an oil refinery with that huge flame burning 24 hours a day. He always has the gas burner on high.

      Most cooks in a restaurant keep the flame on high all the time. You control the heat by moving the pan to and from the heat.

    I like to add a bit more paprika ( Hungarian ) and a dollop of sour cream to the top. Try using pearl onions instead of red imo
    Great job though chef! Looks awesome
