I have to drive 45 mins to get fast food. And then it's burger king. I love cooking and I cook every day. But man do I love me some dirty old greasy fast food.
Cooking at home is just one small sliver of good health. One could argue that while perhaps he may have cooked nearly all his meals, he certainly wasn’t eating cleanly at all and likely suffered the consequences as he had to get heart surgery which cost him his life.

I have been making Marcella Hazan’s recipe for bolognese sauce for years - no plan to change. It’s delicious! No red pepper (onion, celery, carrot, no red wine - white wine and milk). That being said... I learn so much watching you dice the 🥕 carrots and onion that I will use going forward! I always serve my bolognese over wide, ribbon like pasta. Daddy, you are like attending a class at the CIA at a fraction of the cost (no cost)! Thanks for all you do!
You are correct!! Rice is choice of cook. Always serve with pappardelle or tagliatelle. Absolutely no oregano. Angel hair doesn’t stand up to that ragu.

That's how my mom did it -- planned for a week ahead. She had the week's menu on her grocery list so she knew what to buy. I still remember being excited over what delicious dinner we were going to be having -- lasagna, spaghetti, Hungarian goulash, cabbage and pork, etc.. Heck even a pot of beans and cornbread was awesome when made by her and her hand me down family recipes. Seeing people feed their families junk food, fast food, and chicken nuggets and processed fries is sad.

canned tomatoes is not from scratch.. it takes 2 minutes to score and boil (little x on the bottom, hot water for 30 seconds, then in an ice bath to get the skins off) fresh tomatoes. i don't know what that factory is doing to their food nor do i know what they're adding to it.

If I have time, I will steam Romas with a bay leaf and chopped onion and then press all of it thru a sieve - it's the only way I can get my son to eat onions. But I digress.... Being from California it's great to see a chef on the East Coast giving credit to our tomatoes. Our beautiful state is in shambles in so many ways but there's some things that will never change thankfully - like our tomatoes. I live near Sacramento, and the climate here is perfect for growing them. I grow 12-18 plants a year. Lots of heirlooms but also at least a plant each of Roma and San Marzano tomatoes. The best ones for sauce in my opinion. I did a sauce similar to this one but with some elk hamburger given to me by a friend, and of course with the home grown tomatoes - I cheated a little and added some spaghetti sauce mix just for extra flavor. I never thought of cooking the pasta al dente and then finishing it off in the sauce, or adding cream to it, until this video. Now I really can't wait for the summer crop!

Bolognaise is a meat sauce made with stock, not a tomato based sauce. He even got the soffrito wrong- onions, carrot and celery not red peppers 😂 I’m a chef in london, if I served this to an italian chef at work and called it bolognaise, he would spit in my face. I like american cuisine but so many yank chef’s claim to cook authentic cuisine from “back home” when its pure bullshit. Italians are militant about their food culture, these recipe’s have been passed down from generation to generation since ancient Rome. Feel free to bastardise recipe’s as much as you want but don’t claim it’s authentic.
These are Americans. The finer points of Italian cuisine is beyond them. There is no red bell pepper, tomatoes, cream, in the authentic recipe. It's a meat sauce, not a tomato based sauce.
I make my bolognese differently, but he’s spot-on about the meal planning and prep. We shop on Sunday morning, make a meal plan, and prepare anything we can.
One of my favorite videos of Jack's that I've made my sauce from. I even ordered the right canned tomatoes he uses. Let me tell you, this is the best bolognese sauce I've aver tasted. Usually when ordered at a restaurant it tastes sharp and tinny to me. Not this one, probably because of the tomatoes and the simplicity. I have to confess though, I put a lot more Parm on mine after plated. and don't forget to finish in a hot skillet. I didn't one night and I could tell the difference. Take it to a family reunion or camping too' It's always better as leftovers and I like putting it in a nice Italian bread loaf or just eating it cold. Darn it's now 12:30 am and I'm craving it. RIP my old Friend. Don't forget that people, the girls are still selling Daddy Jacks seasoning (and merchandise). The best out there that you can put on everything and it just takes a little or like me I put on a bunch! Tomorrow night I'm making his Mom's meatloaf.

Sage advise - Plan your meals, its just part of my daily routine has been for a long time. Learned it from my Mom, rubbish you don't have time, get your priorities straight. Something that takes a little longer like spaghetti sauce, gets done on the weekend, make lots and freeze what's not used right away, that becomes part of your plan later in the week!!!!

Definitely not authentic. Real bolognese doesn’t use tomato sauce, red peppers or cream. But that doesn’t detract from how good this probably tastes. I made real bolognese a few months ago. Took me a few hours. This guy made it in 15 minutes and it still looks damn good.
@@Inverted314 It does look tiny in his hands, but that doesn't matter. He probably uses it because it's the best option and the one he trusts. I use an 8" chef's knife for just about everything, even when other knives might make more sense, just because I'm comfortable using it. I've been thinking about buying a second, because the first is so darn useful and there are times when having a second knife available is handy.
@dirk diggler I like a lot of with this guy Jack does but anything he does Italian is not it's Americanized that it's not Italian. How do I know this my grandmother is from Naples which by the way is where pizza was invented in 1870. Jack do yourself and the rest of us a favor and stay away from the Italian recipes. Otherwise fork on man
that's just cooking tomatoes in general...they end up a little bitter the longer you cook them. something about the lycopene breakdown into acid. Either way you can balance with a pinch or so of sugar. Be sure to add just a little bit at first and then taste.

It should be called American Bolognese really, as in Italy they would not know what that was, except possibly something close to what goes in some versions of Lasagne. He hinted at it with the milk, but the Ragu of Bologna would usually have milk and celery, some have no tomato at all.
Also he is using a metal spon for the metal pot and he put meat and than onions and other vegetables. Also cream... Nothing to do with Italian kitchen or professional cook.

I used to make a very similar recipe in my family cabin located in the remote woods of Minnesota. Those were the best days of my life!

It is a tragedy seeing kids being stuffed with chicken nuggets and turkey twizzlers or what ever, their parent crying they "don't have time to prepare fresh meals everyday" when they spend it with their faces fused to their smartphones or on the sofa watching the idiot-box. Parenting has taken a real swan-dive in the 21st century.
@Jerry Thomas I was generalizing quite a bit, particularly about my native UK, it is a shame that the work-life balance is so skewed in many circumstances, particularly in the western world. But there are many who blantantly need to make more of an effort with these things.

canned tomatoes is not from scratch.. it takes 2 minutes to score and boil (little x on the bottom, hot water for 30 seconds, then in an ice bath to get the skins off) fresh tomatoes. i don't know what that factory is doing to their food nor do i know what they're adding to it.

If I have time, I will steam Romas with a bay leaf and chopped onion and then press all of it thru a sieve - it's the only way I can get my son to eat onions. But I digress.... Being from California it's great to see a chef on the East Coast giving credit to our tomatoes. Our beautiful state is in shambles in so many ways but there's some things that will never change thankfully - like our tomatoes. I live near Sacramento, and the climate here is perfect for growing them. I grow 12-18 plants a year. Lots of heirlooms but also at least a plant each of Roma and San Marzano tomatoes. The best ones for sauce in my opinion. I did a sauce similar to this one but with some elk hamburger given to me by a friend, and of course with the home grown tomatoes - I cheated a little and added some spaghetti sauce mix just for extra flavor. I never thought of cooking the pasta al dente and then finishing it off in the sauce, or adding cream to it, until this video. Now I really can't wait for the summer crop!

Bolognaise is a meat sauce made with stock, not a tomato based sauce. He even got the soffrito wrong- onions, carrot and celery not red peppers 😂
I’m a chef in london, if I served this to an italian chef at work and called it bolognaise, he would spit in my face. I like american cuisine but so many yank chef’s claim to cook authentic cuisine from “back home” when its pure bullshit.
Italians are militant about their food culture, these recipe’s have been passed down from generation to generation since ancient Rome. Feel free to bastardise recipe’s as much as you want but don’t claim it’s authentic.

These are Americans. The finer points of Italian cuisine is beyond them. There is no red bell pepper, tomatoes, cream, in the authentic recipe. It's a meat sauce, not a tomato based sauce.

I make my bolognese differently, but he’s spot-on about the meal planning and prep. We shop on Sunday morning, make a meal plan, and prepare anything we can.

One of my favorite videos of Jack's that I've made my sauce from. I even ordered the right canned tomatoes he uses. Let me tell you, this is the best bolognese sauce I've aver tasted. Usually when ordered at a restaurant it tastes sharp and tinny to me. Not this one, probably because of the tomatoes and the simplicity. I have to confess though, I put a lot more Parm on mine after plated. and don't forget to finish in a hot skillet. I didn't one night and I could tell the difference. Take it to a family reunion or camping too' It's always better as leftovers and I like putting it in a nice Italian bread loaf or just eating it cold.
Darn it's now 12:30 am and I'm craving it.

Sage advise - Plan your meals, its just part of my daily routine has been for a long time. Learned it from my Mom, rubbish you don't have time, get your priorities straight. Something that takes a little longer like spaghetti sauce, gets done on the weekend, make lots and freeze what's not used right away, that becomes part of your plan later in the week!!!!

I finally actually made this recipe and its 10/10 delicious. The red pepper makes it fantastic. Not sure if its authentic though.
Definitely not authentic. Real bolognese doesn’t use tomato sauce, red peppers or cream. But that doesn’t detract from how good this probably tastes. I made real bolognese a few months ago. Took me a few hours. This guy made it in 15 minutes and it still looks damn good.

@@Inverted314 It does look tiny in his hands, but that doesn't matter. He probably uses it because it's the best option and the one he trusts. I use an 8" chef's knife for just about everything, even when other knives might make more sense, just because I'm comfortable using it. I've been thinking about buying a second, because the first is so darn useful and there are times when having a second knife available is handy.

Little tip , tomato paste is quite bitter so I recommend sweating it for like 10 to 15 seconds to get out that tart bitter flavor
that's just cooking tomatoes in general...they end up a little bitter the longer you cook them. something about the lycopene breakdown into acid. Either way you can balance with a pinch or so of sugar. Be sure to add just a little bit at first and then taste.

Kitchen god? Show an Italian this video they would laugh at you. He makes so many basic mistakes.
It should be called American Bolognese really, as in Italy they would not know what that was, except possibly something close to what goes in some versions of Lasagne. He hinted at it with the milk, but the Ragu of Bologna would usually have milk and celery, some have no tomato at all.
Also he is using a metal spon for the metal pot and he put meat and than onions and other vegetables. Also cream... Nothing to do with Italian kitchen or professional cook.
