I found Daddy Jacks TH-cam channel about 6 months ago and was saddened to hear of his passing. He showed us his passion, love for cooking in his restaurant and home. After reading many of the comments here I have to weigh in. I've worked with many an old school chef just like this man. Their food was delicious and no one ever ever got sick.. on a whole we are too antiseptic. Have a look at someone wearing gloves and pay attention to how many of them go from handling money or cleaning and then back to the food. The glove gives a false sense of security to the wearer. NOTHING beats teaching someone how to properly wash their hands. The health industry has been ramping up their rules but not so much for the cook at the end of the line but because of the unsafe food handling procedures used at the big corporate farms or slaughter house. One mistake at a large facility can get hundreds of people sick. As a nation I think we were better off years ago when livestock and produce were handled more at a local level with smaller farmers more in touch with their products. What this man is doing in his kitchen is no worse than most of our mom's did in their own kitchens. Actually most home kitchens are far less safe than any commercial kitchen.
Very true, he still touches raw meat, the handle, his wiping towel and then other contact surfaces. During a rush, those are the mistakes that allow dangerous bacterias to grow. That's a great way to give someone hepatitis b. Society definitely has gone insane but these are habits that clean chefs dont have. If he's that lax during a fun video, imagine when it's busy and he has to move?

One of the best things was Daddy Jack would leave the mistakes in and roll with it.
Simply the best!!!😊👍❤️
Miss you Jack.....I and other people learned quite a bit from you. Rest in Pease .....
this guy clearly knows his stuff. great skills. I will have to come visit for a few days. check out the stuff on the menu . all of it every thing you cook looks like awesome, Italian comfort food. thanks for sharing your vision and your talent it is inspiring
For some reason every time I see this man cook all I do is Marvel and I think to myself all the questions that I would ask him and then I think about just one thing how lucky we are to have these videos because then we can actually see how real food is cooked properly and responsibly but also so darn good yummy.
This guy reminds me of cooks I worked for 60 years ago. As people say, "It is what it is." No subtlety. I do what I do. Neighborhood chef. Period.
Sheer accident I found this video, boy are you a great cook!
Live long and prosper.

I wonder if josh is still chewing that steak 8 years later
Josh, you’re not supposed to eat the grizzle.
Just a little bit
This is actually pretty funny.
Elijah P he is still trying to cut it up. Knife and fork skills of a Labrador puppy.
Well that's how Josh is keeping his slim girlish figure. He was taught to chew well and take small bites. It looked like he was so intent on trimming the fat off that bite he might have screwed up and got a big glob of gristle instead!
I can't stop watching this channel. It is cool to see how a restaurant works, especially a 2 man kitchen.
This is the greatest cooking channel, Jack seemed down to earth and an old school chef, and he's one of the very few youtubers that ever replied back about my compliments...
This guy was a true chef .... GOAT
This dude gets down! Been watching him for years. RIP
I feel like im watching youtube in the 90s
Nine years ago in New London would be nearly the 80s.
Thank you for taking the time to make and post your videos--you have improved my cooking skills, Thank you.
Keep em coming TH-cam and find Josh he needs his own show. Delicious.
I learn SO MUCH, every time I get to see you make it look easy! Thanks for sharing! Your friend from Texas. I went to Submarine School in Groton, btw. Worst winter I have ever experienced!
Daddy Jack, we all miss you terribly , just know you were loved.
