I just found out 30 miles ago that Daddy Jack passed away earlier this year. In my industry we’ve lost some huge personalities this year too & to pop over to one of my top 5 cooking channels and see Jack’s daughters’ video a few moments ago just fills me with sadness at 4:30am on a blustery West Coast Washington morning. The best way to honor this bonafide local legend is to cook up some of his dishes. Don’t forget to add lots of love (and chopped green onion)💔 🥘 🔥
The way this guy cooks is legendary. Rip. This is how I’ve seen some restaurant owners cook/ somewhat like my father. Non chalant and straight forward with their cooking. No bs. No measurements. Comes out surprisingly amazing with simple ingredients.
I've learned that while he lacks what some would call "finesse", aka he is kind of heavy handed with things like cream, if a big piece of onion falls in with the smaller diced parts etc, he doesn't seem to notice or care, but he NEVER takes any shortcuts on his recipes, if its meant to be made with cream, you'll get heavy cream, if its a pasta dish, you'll get fresh high quality pasta, lots of cooks do anything to short-change you and cut corners but this guy clearly LOVED to cook

Just tried this with ground beef and it is SO good. If anyone's worried about the hot sauce, it doesn't really come out as "buffalo" sloppy joe - it just creates more flavor depth and a nice background zing. Beats the pants off of regular sloppy joes

Chef Daddy Jack, I made these for my poker buddies last week, and they were a huge hit! Such a flavor explosion in the mouth. I didn't have red pepper flakes, so I ground up some dry Thai red peppers, and it was amazing. I used two heads of fresh garlic, and omitted the green onion because I don't like them. But wow, what a dish! I used Swiss cheese instead of American cheese, and it worked just as well. I can't thank you enough. From someone who primarily eats Tuna and Salmon and chicken, this was amazing on all levels! Full disclosure, instead of all hot sausage, I used a pound of 85/15 ground beef, and a pound of Italian ground sausage. I got the hot from using the Thai chili peppers and Frank's red hot. But that's the beauty of your dishes. One can add or delete flavors from them and they still turn out delicious.
After warning us not to keep the spoon in the skillet, what does he do? Ha, ha, he can probably get away with it because he knows it's hot. Love watching this man cook.

Frank's is great on chicken wings, but Diablo sandwich must use Tabasco or it is too mild.
