    I was so happy to come across this video. My mom back in the 50s, used to make this for me a lot when I had been sick and was just feeling a little better but not ready for food yet. She would make this and called it cornstarch pudding. The recipe was on the box cornstarch back then but now I have looked and looked and I couldn’t find the recipe anywhere so thank you so much I’m going to make some tomorrow.

    This was delicious!! I tried one vanilla pudding with 2 whole eggs and I didn't like the eggy taste that overpowered the vanilla flavor!! So I made your recipe and I had thought it was thick enough but for some reason after I added the vanilla it became too runny so I poured the pudding in a bowl and I added another Tbsp of cornstarch then I put it in the microwave on one minute intervals which actually worked! I probably didn't cook it long enough on the stove. I think this pudding is delicious and there is no eggy taste!! I don't want my pudding to taste like scrambled eggs! I think you could stir in some butterscotch chips and make a butterscotch pudding. I will try that next! 😊

    • @inthekitchenwithmatt

      A quick and easy way for butterscotch pudding would be to make this and then before taking it off the heat add butterscotch chocolate chips. The old fashioned butterscotch recipe is way more involved with egg yolks and uses brown sugar and butter to get the butterscotch flavor. In The Kitchen With Matt I tried this with Arroy-D coconut milk and it was delicious! It’s a light coconut flavor, but i loved it! I then added 1 tsp of coconut flavor and it made it a bit stronger but not needed. I wanted to eat the whole thing, but i added some whipped cream and mascarpone cheese for an icebox cake I had planned. Thank you for this recipe and I loved the tip of mixing the corn starch with the sugar first.

      It depends. In some countries corn flour is the same as corn starch. Here in the States they are definitely different.

    Lol, silly question but i habe an older cookbook my mother handed down to me, i see i mentions eggs/yoke... theres none in this one... is it not needed would adding egg yolks add or take away from this recipe?

    • @inthekitchenwithmatt
      @inthekitchenwithmatt  2 ปีที่แล้ว +1

      Yeah there are several recipes for pudding. This one doesn't use any eggs. :) But you can add 2 egg yolks. I recommend trying it first like this, before adding eggs to it.

    Way easier to get it lump free is to dissolve the dry mix in half cup of cold milk, boil the rest and when it is boiling add the cold milk mix. It gets the temperature down to the perfect spot. Dry stuff dissolves in cold milk so much easier.

    • @inthekitchenwithmatt
      @inthekitchenwithmatt  3 ปีที่แล้ว +2

      You can certainly do it that way if you like, but how I did it in the video is extremely easy, and you don't get any lumps. Also, sugar actually dissolves faster in hot liquid, not cold liquid. Cornstarch is generally added to cold liquid first to create a slurry then added to the main liquid, so you are partly right, not all dry stuff dissolves easier in cold liquids, however. But with this recipe, it works great combining the two first and then dissolving. The sugar along with the cornstarch doesn't create lumps.
