I made this tonight, it is amazing and very easy. I used vanilla paste and doubled the recipe because I had milk I needed to use up. I am wanting to make chocolate pudding now too. Yum. Thank you for this recipe. So many recipes require tempering the egg yolks which I find challenging. I love that everything is added together and then put on the heat source no tempering required. I did beat my egg yolks before adding the to the mix to make it easier to incorporate.
Pudding from scratch is a million times better than those commercially produced offerings, you can change the sweeteners, the dairy and having the vanilla specks really make a big difference. In fact I made one using both the vanilla bean, pod and extract using my homemade vanilla extract.

I will also use the pudding for eclairs, and I would need a thicker pudding for those. I would probably only need to add more cornstarch to achieve this, is that right...? Thank you~
Honestly your best option here is to use my pastry cream. Adding cornstarch here isn't a great option. It's just not going to be thick enough. :( th-cam.com/video/hYIgDs_XcF4/w-d-xo.html
I wouldn't suggest adding beaten egg whites. You could try adding some whipped cream like I do with my banana pudding recipe--that would make it lighter texture. 🙂

Hi, can you advise how to soften putting?
Would you recommend the items to be sitting out at room temperature for a certain time before starting or recommend that they are cold?

How many grams of cornstarch? Sometimes they say 24 grams and then 21 grams. Also do you have to use whole milk every time?
I have all of the ingredients in the description below. I would recommend using whole milk instead of reduced fat.
What if i add beaten egg whites in the end , will it be like a mousse?
I wouldn't suggest adding beaten egg whites. You could try adding some whipped cream like I do with my banana pudding recipe--that would make it lighter texture. 🙂
