    Homemade Vanilla Pudding Recipe
    • 3/4 cup organic sugar
    • 3 tablespoons organic cornstarch
    • 3 cups whole milk
    • 4 beaten egg yolks
    • 1 tablespoon unsalted butter
    • 1 tablespoon vanilla extract
    Whisk together the sugar and cornstarch in a medium saucepan. Whisk in the milk. Continue to stir over medium heat until it becomes thickened and bubbly. Cook 2 minutes more. Carefully pour 1/2 cup of the milk mixture into the beaten egg yolks and whisk. Repeat this 2-3 more times. (This is slowly increasing the temperature of the eggs without scrambling them)
    Pour the egg mixture back into the saucepan with the remaining milk. Bring to a gentle boil and stir constantly for 2 minutes.
    Remove the pan from the heat, stir in the butter and vanilla.
    Pour into small bowls or ramekins. Cover with plastic wrap (if desired). Chill for 3-4 hours or serve warm.
    This pudding recipe is the equivalent to approximately one box of instant pudding.

    I always add 1/4 t. of salt. Makes a difference in the flavor! Makes a fantastic banana pudding!

    You can’t beat home-made pudding. I always add my corn starch with enough milk to dissolve it, add my egg yolks, mix well, and then add the rest of the milk and other ingredients, except for the vanilla, of course. No need to temper the yolks. I always add the vanilla after the pudding is done and the heat is turned off. 💕

    Jill I'd just like to offer these words of praise: I've been obsessively listening to your podcast, I am on episode 117 (my chickens LOVE tomatoes too, I thought they were just weird but now I can tell them they're normal) and I absolutely adore that you're so real and that you're so willing to share you're failures along with your successes, you're not trying to "be" something, you're just sharing your journey and the knowledge you've accumulated so that others can have a better footing to start from. I also am falling in love with Lehman's, we are updating our Michigan farmhouse kitchen and I've got SO much in my cart waiting to be shipped right into my open arms! Please keep doing what you do, rocking it, my fiance and I love how you *roll* and appreciate what you're doing!

    In the Uk this is custard ( without the vanilla) and poured hot over fruit pies, cooling it is added to trifle..a mix of sponge, fruit , custard and cream,

      I think in the UK we would call this 'Egg Custard' and pour it into baked pastry case.

    I would pay $100 to try that vanilla pudding warm, right now. In fact, $10 just to smell it and the homemade vanilla. Yum. THE Best of Life! Tonight we had chili with base as beef bone broth I had rather than the tomato juice. It was different. It tasted lighter, which was unexpected.

    Classic cornstarch pudding. You can add chocolate too or other flavouring. It was one of the first things we learned to make in cooking class at school. The goal was to not have lumps!

    This tastes amazing! I made it with dairy free almond milk and an extra scoop of cornstarch to pull it together and I’m OBSESSED! This will be my go to from now on, thanks for sharing Jill!

    You're right it isn't difficult, it's worth it! I made this when I lived at home, later made a similar version if not the same of Cream Patisserie...Chocolate is really good too for pies, a simple chocolate pie. Memories.

    I add my whole eggs including whites and vanilla at the start. Microwaving in a large glass heat resistant measuring cup 3 minutes,stir, then 2 minutes repeating to desired thickness. Easy and no risk of scorching the pudding. Also works for making white sauce for scalloped potatoes melt butter or pour in olive oil, dried minced onion,parsley, milk,and corn starch. Layer potatoes,carrots,and protein for a one pot dinner

    This is very similar to a recipe that my Grandma has been making for years. It is sooooo good. I love to eat it warm! Love your videos!

    My grandmother always beated the egg whites and made a meringue to go on top of her homemade vanilla pudding.

    Hi Jill ,from the NE of England, hello!
    Love your blogs...clear ,practical.interesting and friendly. I've just made your butterscotch dessert......lets put it this way......my grandson called and took off his mask to have some and the bowl was emptied. I will certainly make it again , now that I can confidently temper eggs. I liked the strainer hint.
    My only difficulty was US cup measures but with the help of google and noticing the my Pyrex measuring jug ,as well as pints and litres , actually had cups on the side !

    Nice! We no longer buy packaged pudding mix so this recipe will definitely be used! Homemade is always better anyway.

    Egg whites can be frozen and later used for meringue or pavlova too. Our chooks have just started laying so hopefully we will have an abundance of eggs soon too.

    In UK we call this egg custard we put it in a pastry case too sprinkled with nutmeg

      I only use corrnstarch if I want it to set. If having pouring custard, I use cream, eggs, sugar and vanilla extract. Love custard tart, fresh nutmeg is just so delicious. I'm UK to.

    Try sprinkling some cinnamon over the top its yummy like that. You can do it while still warm before refrigerating 😉

    This is custard, try it with old bread, sultanas and cinnamon on top. Pour this over the bread and bake. I prefer to use brioche on special with chocolate bits. Bread and butter pudding.

    We have a corn sensitivity in our crew, so I used potato starch instead of corn starch and it turned out beautifully.

    Do you have a recipe from scratch for banana pudding like the vanilla and butterscotch ones you've shared? All I can find on Google and TH-cam are the banana pudding with vanilla waffles. But that's not what I want.

    Just wondering if you have any suggestions about chickens.... mine haven't started laying yet and we got them at chick days at tractor supply in early March. I have barred rock hens, I'm not sure what the roosters are because they came from a neighbor. I've started adding the laying pellets to their food ( kitchen scraps).

    i make my banana cream pie with homemade vanilla pudding. Thanks to my MIL for the old ways that she taught me. Homemade pudding has nothing on store bought. I will never eat store bought again.

    Do you clean your eggs at all? We have chickens too first timers and they are always dirty. But I know you can't keep them on the counter once washed. Just curious you have a ton of eggs!!!

    I laughed when you said pudding was invented by a homesteader. For as long as people have had cows and chickens, they’ve had excess milk and eggs in some seasons. So we have custard, flan, cream pies, French toast, quiche and so many other things.

    Are we channeling our inner Laura Ingalls Wilder again? Why not use the blender for the egg step? My first attempt at this recipe was an epic fail, but it wasn't the recipe's fault. Thankfully, it is PUDDING, which is super forgiving. I accidentally knocked the bowl of eggs on the floor, after I had put half the milk in it. So I got more eggs (thank you chickies) and made 1 1/2 batches. But the second round of eggs, I forgot to only put the yolks in. Yeah, it had chunks of egg white which wasn't that good. But I basically figured out that if I put it in the blender, I can put the whole egg in. So the next day, I did that. I used the blender for the egg step. That batch was much better. I forgot to put the butter and vanilla in. But it was very good and got eaten quickly. The day after that (today), I made a third batch, and I got everything right. It was really good. I put the whole eggs in the blender and then added the milk into the blender and blended it and then poured it back into the milk to cook some more then added vanilla and butter. It is awesome!
    Have you ever tried cottage pudding? It is the older version of bread pudding. That is a super simple recipe, and really good. But some people don't really like it (my husband). It supposedly originated around 1800??

    Looks good.
    But you feel for one of the fake organic products. There is no such thing as organic sugar. You either have raw sugar which is slightly darker and processed or bleached white sugar. What you had looked partially processed. Brown is just raw or fully processed sugar with thickened cane syrup add to it.

      - Sounds like you need a little more cornflour/cornstarch, add too much and you will have concrete so go gentle with it
