I have made this a few times now and have made some tweaks that made the last batch the best! I add 1 tsp of salt, and a tsp of vanilla extract. I also mix all the dry and all the wet separate and combine them at the end (mini-chocolates added last). I also start heating my oven only once the entire mixture is ready to go to let the mixture sit and hydrate the oats while oven heats, I feel it evens out the texture more! This latest one I made seems perfect!
Thanks for sharing. I made it for the second time today. First time I sprayed the cooking pan with heavily with spray and still had heavy stick-age. This time I used parchment paper. Next time I'll try your tweaks. They make sense.

Another small tip, if you want to spice up the chocolate bake, replace the melted chocolate topping with some rehydrated peanut butter (pb2 powder + water), its a great lower cal, high protein option that is nice to rotate in once in a while! (I would recommend rehydrating the Pb2 per slice as it dries out in the fridge.)
if no banana or apple sauce, pumpkin puree goes great in chocolate-based baking cake/brownie recipes. makes it fudgy, and the cocoa is strong enough to mask the pumpkin flavor
Apple sauce is definitely a thing down unda (look at basically any coles or woollies) but I’ve only seen pumpkin purée once in my fuckin life and it was $5 dollary doos a can

Quite the same, I am on my first week of meal prep. Spent 4 hours of cooking 3 meals on Sunday (first time making 2 of the 3 recipies then), but then I only need to microwave the dish, in some cases maybe make a two minute quesadilla with cheese and curry sauce. Great time saver, also much less time spent cleaning up the kitchen. I only wonder if eating the same meals over 6 days will not be too much for me, if so, I might try to mix things up a little.

I like to add 85g of Greek Yogurt and about 10-15g of maple syrup (mixed together) as a topping to these baked oatmeals. It ramps up the protein and helps if the oatmeal has dried out too much in the over (sometimes I over bake).
I presume added after baking lol Cause I don’t know if you’ve ever baked Greek yogurt. It makes for an interesting texture. One which I want to experiment with cause it’s an unusual outcome.
I know I’m a little late to the party but, I made this tonight. For people who are dairy sensitive, don’t be scared to use Plant based Protien (I used Orgain Vanilla) and lactose-free 2% milk. It comes out great!

I didn’t have milk so I am trying this with water and used honey instead. I also made my own unsweetened apple sauce at home. If this works I’ll try replacing the syrup with erythritol based syrup and add a a bit of erythritol. Update 1: It turned out great and doesn't seem to have anything wrong with it but I wish it had more of a chocolate taste. I'll add coffe to it next time.

I knew there had to be a chocolate version coming soon. Recommend you drizzle the base with a fruit jam or compote instead of more chocolate 😗👌. Or swirl it in like in the PB&J recipe 🤤. Strawberry or raspberry would be fantastic.

Apple sauce is super easy in nz/Australia it's literally plain apple baby food or take 3-4 apples, peel and dice them then cook in a pot with a splash of water until soft then blend and you have apple sauce. I also like to use sugar free chocolate chips and maple flavored syrup to cut the sugar content further
I didn’t feel like adding maple syrup, used Vegan Salted Caramel protein powder, which brought sweetness and flavor. Added crushed dark chocolate with nuts, which brought in great crunchy texture to this chewy brownie. And yeah, start your oven, when you mixed your ingredients, so that oats have time to soak up some liquid. The whole thing came out DELICIOUS!!
Haha - As an Aussie, I can confirm we have apple sauce. It's in the condiments section (served with roast pork) or in the baby food section. Or buy tinned apples and blitz in processor. So just let them know to look harder at the grocery store.

However, since I usually just want a nosch (and I NEED to drop those Pandemic Pounds) I cut the double Chocolate Brownies into 18 smaller pieces. I placed each piece on a small piece of parchment paper,stacked them in my containers and freezed them all. When I want one, I take it out of the freezer and microwave it on a paper towel on a plate for about 30 seconds and Va La!! A Snack with my afternoon coffee or after supper. With my already prepped dinners and all my snacks, It's getting kind of crowded in my freeze! I particularly like your recipes since it involves fresh food and not all the additives and chemicals found in most frozen dinners.
I've made almost all your baked oats recipes, blueberry and lemon being the one I make the most as I find it the quickest (don't need to cut the blueberries). I've also made a 'peach cobbler' style one with cut up peach and cinnamon. Was nice. Think I'll try this one with raspberries as the fruit, see how it turns out. Thanks for the vid.
OK so a while ago I asked if this would be good if you blended the oats and Josh said that it came out too gummy, this is true, but you can stop it from being gummy if you blitz the oats so there are a few larger bits in the mix and shorten the cook time by 5 minutes. (great recipe no matter how you slice it but I ate so many of them I needed to switch up the texture after 6 months)

I noticed that sometimes my oatmeals cakes end up finishing with the majority of the oatmeal at the bottom of the cake. To avoid this I leave the oatmeals to soak for 20/30 mins while I cook something else, this solved the problem for me

Made this this morning and it’s delicious! I used Optimum Nutrition Whey protein in Vanilla ice cream and bananas instead of applesauce (appreciate the suggestion!). Amazing. It will be a regular in my rotation for sure.
Made this once with lite syrup since I didn't have maple syrup. Tried finding this on your site but couldn't. I did purchase the one-year at $50 (you should charge more than that!) Anyway, love it, and will continue to make it. Tastes great with Greek yogurt on top! Update: I used regular syrup (Mrs. Buttersworth) not lite syrup. I'll try to send a pic.
I made this and tasted it, except I messed it up by not having eggs, using too much milk and maple syrup, and it still came out great. It's easy to make, you can't really taste the applesauce, and it's tasty, though regular brownies are tastier. I'll probably make it again.

Loving being able to bring baked oatmeal back into my diet. Just have a quick question. Since I'm lactose and soy intolerant, I have to use an egg based protein powder. What would be the best way to rework the egg white ratio? Or would I just eliminate the egg whites? I made the pb&j baked oats, and although the flavor was great the texture was a bit rubbery.

To cut calories even more, used skimmed milk. I also use a type of milk that has 50% more protein and 50% less sugar.

I started doing 50% whey and 50% casein protein and I think the texture comes out much better and it keeps me full for much longer

Made these once with applesauce and once with canned pumpkin. The canned pumpkin has a much softer/moister consistency.

You should try putting flax and/or chia seeds into stuff like this. They do a similar job to the applesauce and keep stuff really moist.

Add a fat free high protein yogurt on top like dannon triple zero, adds another 15g protein and vanilla flavor makes it feel like a brownie a la mode
Making this next week added plus I add some halo top ice cream on top for added flavor after I reheat it helps plus doesn’t add a lot of calories

I made this and tasted it, except I messed it up by not having eggs, using too much milk and maple syrup, and it still came out great. It's easy to make, you can't really taste the applesauce, and it's tasty, though regular brownies are tastier. I'll probably make it again.

Sounds great. I've been swapping chocolate protein sometimes (if that is what I have handy), but haven't been getting a huge chocolate flavor out of it. I'll have to add the cocoa and apple sauce and give this a go.
Coffee brings out the chocolate flavor more if you want to mix that with your milk 😉

Loving being able to bring baked oatmeal back into my diet. Just have a quick question. Since I'm lactose and soy intolerant, I have to use an egg based protein powder. What would be the best way to rework the egg white ratio? Or would I just eliminate the egg whites? I made the pb&j baked oats, and although the flavor was great the texture was a bit rubbery.
Bit late but from what I've seen online, Aquafaba or vegan "egg whites" are a thing and can be found at stores like Target

Just made this, the taste is very… ok… its macro friendly so I can’t complain but I think adding powdered sugar on top or vanilla extract in the batter would make it better

australia has apple sauce its sold in pretty much every supermarket lol. it is generally always sweetened though, so I just make my own and freeze it
