To maximize their nutrient content, cucumbers should be eaten unpeeled. Peeling them reduces the amount of fiber, as well as certain vitamins and minerals.

Used to I suffered from insomnia. Year ago I grew lots of cucumbers on my backyard and I was eating like crazy. One thing you didn’t mention that cucumbers detox the body. Shortly the insomnia was over and I was sleeping all nights until now. This year I’m planting cucumbers again because I make delicious salad with little salt, pepper, sour cream, dill and lemon juice and eat with dinner. You can add a little bit of chives if you like

I miss fresh cucumbers from my ex-husband's garden that I ate for 15 years. Cukes are one vegetable that taste every so much better when they are home grown without the wax that's placed on them in the grocery store. I would peel them and put a little salt and pepper on them and eat them without slicing, along with a big, beautiful Celebrity tomato!
