    Cooked ribeye chicken legs on my wood fire. My wife loves the flavor. Going to do the beef roast today. Good job. You’re my only go to channel for the wood fire. Oh! The asparagus was amazing as well.

    BTW CJ: I cut off 1/3 or 1/4 of a beer can and use that with beer to keep moist - does a good job and takes up less space

    Hey CJ great video! I saw this and I had to try it! I switched it up and used a small cake pan lightly topped with foil and some consume instead wrapping. I kept feeding the woodfire pellets for the whole cook which was about 4.5 hours. I actually got a little smoke ring to show up and the meat was tender and delicious! Thanks!

      I use a honing steel and a drag through knife sharpener. I don’t have the time or patience to use wet stones. Lol

    CJ, Have you tried doing any sides while you are doing the meat?...potatoes, onions, carrots, mac'n cheese, etc.

      I did a post roast with veggies for a video and a prime rib with baked potatoes, but for the most part I’m just cooking one main item. Especially for videos.

      All good. Usually I only add one. But if I get a big cut of meet, sometimes I’ll throw a second scoop in.

    If I dont have beef stock, can I use the drippings mixed with some of the smokey water?
    Also, I have about 20min on hour 2, and temp so far is 172°F, is that about right?

      Yeah you can use any liquid that you like.

      Just one cup usually. And keep it on the smoker setting, it’ll still cook the food, just once the pellets burn out you’re not getting more smoke. But most people find one cups worth of smoke works great.

      I think it was 3-4 hours, and only did one round of pellets.

    CJ. What'd ya think of using the water pan? The others didn't think it was necessary/make a difference when i posted this Q in the FB Woodfire page.
    Im about to smoke a tritip brisket style. I might just try the pan if i have space.

      I don’t think it did much of anything. Probably give it another try to just make sure. But I don’t think it made a difference.

    CJ I have a question, the temperature values you use in your recipes are in degrees Celsius or Fahrenheit.

      He speaks in Fahrenheit, but also puts the Celcius temps on the screen. In older videos it's only Fahrenheit.

      When I’m filming I talk using Fahrenheit. I try to throw the Celsius on the screen. Also all my cookbooks have both options listed.

    Hey CJ I watched this video about 7 times and cooked on a pelet smoker. I used the same cook temp and probe temps. Though it came out juicy with flavor it was still very tough. Any thoughts on how I could avoid this next time?

      Try to drop the temp 25 degrees and cook it a little long. Even if it hits the internal, give it a little longer.
