Try this moisture method: easy way to keep Brisket moist on the Ninja woodfire is take an aluminum beer can and poor out the contents into a glass. Cut off a 1/3 of the top of can and fit it into your Ninja with your meat. Then pour what you can fit inside and drink the rest
From a Professional Chef ...Please put a damp cloth under your chopping board when prepping, it wil stop it moving around all over the place...hope this helps :-)
Dont use oil as a binder it can prevent the smoke from penetrating the meat. Use mustard instead. The best place I have found for brisket (and most meat!) is a local Brazilian butchers. Good prices for what you get. Looked like it turned out well!!
The only bit of the Woodfire grill that is dishwasher sage is the pellet scoop, you’ll probably damage your non-stick surface if you keep putting parts in the dishwasher. The brisket you bought is a rolled flat (if that helps).

I'm guessing the moisture level in the pellets affects the burn sometimes. I wonder if adding the pellets to the hopper (metal) and putting them inside the oven as it warms up & then put them into the side chamber & ignite. I have a wood fire oven & if you dry the logs out by putting them in the mouth of the oven they ignite instantly & burn much better. I haven't tried this, but I will next time. I second the point about filling to the top as the top level of pellets is ignited & they ignite others as they burn downwards.

I find You can smoke oil and fats really easily so iv never heard of or had this as problem

Do it!!! 🤣 But yeh you can just smoke. You get just over an hour on a full basket of pellets, so I guess you can keep topping up 👍🏻👍🏻

I did pretty much the same with a Tesco brisket and it was a little dry
Can be a bit hit and miss can't they the Tesco brisket.... what other stuff you cooked on the Woodfire?
What setting was the ninja woodfire on when you put the brisket in the tinfoil?

do you use smoke mod on ninja? i have used it last sunday for the first time, but it did not smoke out. the pellet did not burn, only some pieces.

I reckon we can get one bigger too! I'm on the look out at some of our local butchers!
See if you can find a full slab. They are usually around 5 kg
