Thanks for the great guide! I've tried this twice now. The first time it didn't turn out so great. I smoked it following the medium well temps. I also let it rest for 2 hours covered which brought the temps up to high. It still tasted good but was not very moist. I also tried slicing it manually for sandwiches using an electric carving knife and just a plain carving knife. I just couldn't slice it thin enough so it was chewy and hard to eat on a sandwich. The second time I smoked and roasted it at the rare temps and I bought an electric meat slicer from Amazon. It turned out so great! It's very moist and not chewy at all.
I'm so glad to hear this! The lower temps really make a difference in the moisture levels and of course a meat slicer is a game changer for slicing super thin deli style meats. Enjoy!

Hello, i was wondering about the pellets. If one is using wood chips, do you also let the smoke out and then put the meat in? Or is it just when you are using pellets? Thank you so much. Have a lovely day.
That's a good question! I have never used wood chips for smoking before, so I don't have any firsthand experience, but I think you soak them first so they don't give off that initial heavy bitter smoke. If your smoker uses dry wood chips, I would let the heavy white smoke burn off. If you have the Ninja Woodfire, you shouldn't use wood chips, only pellets.
I kept them going the entire time. I refill when they are 50% gone so they light from the heat of the burning pellets and I don't have to hit ignite again.
Hi there - PLEASE HELP ! My 15-1 is not working as its says "lid not closed" when it is. On the FB page it referenced your goodself saying that you may have a fix for the levers? TIA

I don't think you will find an indoor smoker except the kind that are for small things and cocktails.
