  • this chickpea omelette recipe will blow your mind, in a good way. Garbanzo beans flour is not a common ingredient in most kitchens, but we highly recommend that you try this recipe to experiment with it. It’s an amazing source of clean protein, fiber, iron, and calcium, and a great vehicle for lots of herbs, spices. My daughter, Sophie (@AlexandSophiasshow) and I sure had a lot of fun creating this video at their kitchen and we hope you enjoy watching it!

if you really want the Omlette to look and taste like a real egg omlette use Vegan peanut curd or coconut curd and /or use flaxseed gel. just take 2 teaspoons of flaxseed and boil it with a glass of water. for cooking purposes boil it for just about 5-7 mins. If you want to use flaxseed gel for hair and skin you need to boil it for a little linger to get a thicker gel consistency. Flaxseed gel behaves exactly like egg whites !! beating some vegan yogurt and flaxseed gel together with chickpea flour will allow the batter to hold a lot of air and your omlette will be nice and fluffy. Ive made vegan scambled eggs with this formula and nobody can make the difference. Try it

Make the batter quickly the night before. Save the baking soda for the morning. You’ll find by letting the batter and herbs meld over night, especially the chickpea flour that the texture improves substantially.
Also a tablespoon of tapioca flour and 1/3 cup of freshly ground flaxseed flour will improve the texture and the flavor remarkably.
I keep a jar of a mix that I prepared from ground chia, chickpea flour, ground flaxseed, tapioca flour and ground red lentil. I grind all my own flours, mix and keep in the fridge. Instant, healthy crepe or pancake mix for both sweat or savory meals, flat breads, etc.

Thanks for your super recipe. I have however discovered that the omelette will be even better if it is made with actual soaked, uncooked chickpeas ( not canned cooked chickpeas)!
Instead of chickpea flour, soak a cup of dry chickpeas overnight, then drain and rinse them, and put the soaked chickpeas in a blender with on cup of fresh water and grind this to a fine batter. Pour the batter in a bowl and add all the herbs and spices you mentioned, then and proceed to make the omelette the same way as you did with chickpea flour.
You are going to find that the resulting omelette will have a very close consistency to an egg omelette.
It took me two years to discover this secret as the vegan omelettes I was eating in some restaurants were so much better than what I was making! Finally, I found the alternative recipe on the web.
The same way, one can make Spanish Tortilla and Persian style Koukou ( Persian variety of Tortillas).

In india, we use this as a tempura batter. 1 part chickpea flour to .5 part rice flour + pinch of baking soda , salt,. chilli powder and turmeric., this will create perfect batter for frying veggies. Name of the dish is called as Bhajji. We just dip onions, eggplant, banana pepper, plaintain, raw banana, potato, cuban oregano leaf and then deep fry them

We call it **cheela** here in India. It is a common snack here in India.

That was a pleasure to watch, not least to witness the lovely relationship you have with your daughter I'm guessing. I'm gonna make this tomorrow for my son and I. We are both vegans and I couldn't get the very expensive omelette substitiute powder form the health store. Now don't think I'll be getting it again!

Mom, your daughter is a delight. So smart and funny, you're doing a beautiful job rearing her.

Say “raising her”. Rearing has nasty connotations!

@@Centerfiremedia Yeesh! It is perfectly acceptable to use the word "rear" in this context. Please get your mind out of the gutter.

Perfect for Vegans who are on Plant Based Whole Food. The perfect way to good health. What I like about it is: No eggs, No cheese, no dairy. One small change I will make: No Oil. One can cook this without even a dab of oil...!! I have made it in my kitchen for a change from the raw green leafy juice that I drink everyday. When I come off the 16:8 intermittant fast everyday, this is fantastic. One can savour every bite. Amazing. I urge everyone to try it. Delicious.
I have been a vegan all my life. I highly recommend this one.
PS - You two in the video are great together. Compliments...!!!

You inspired me to make it. I didn't have parsley or chives but I had a huge amount of cilantro which I love. This was WOW. Fantastic recipe. Thank you for doing this. Love the dynamics between you and your daughter. Will make the queso soon too and the burger. Looking forward to many more videos.
