I've tried a few few different chickpea omelet/egg recipes and they never work. This one was no different. I follow the recipe exactly and all I get is a dried out crumbly mess. I've tried adding more water..even tried adding a little oil to the mixture but same results. Not sure if it's a specific brand or type of chickpea flour that is being used? I've been using Herbaila natural gluten free chickpea flour

I have a unopened bag of chickpea flour that I purchased recently and cannot wait to try this omelette with some vegetables. My mother used to serve veg omelettes with a light drizzle of Worcestershire sauce over top with toast as a lunch dish. So tasty. Of course I will use a vegan Worcestershire, Boudin’s sourdough toast and Miyoko’s butter (my Northern California staples). Looking forward to watching all of your videos. Thank you!

nice play on the italian farinata or the french socca. i wonder if aquafava --the liquid in a can of chickpea, could be whipped like eggwhites and incorporated into the batter to create an omelette even more closely resembling a traditional french omelette--or even pushed to be like an omelette soufflee? hmmm... i think im going to be playing in my kitchen soon.

125g of flour is roughly 1 cup. Chickpea flour = Garbanzo bean flour. Teaspoon in the UK is the same as teaspoon in the US.
