I think all people that were raised on a budget or still have grandparents that grew up during the great depression teach use everything and will use the broth to clean out the excess. I know my grandmother taught me. I think the fancy cooks are just cooking to cook they aren't cooking with the mindset of a way of life. You know what I mean?

The reason I like to clean the chicken is because of the modern packaging of chicken, so often the chicken has excess water that just doesn't look or feel right. We don't have a old school butcher to get meat from , at least in smaller cities.

I suspect that many of the people who claim they can get daepa are actually mistaken, and think they are the same as leeks, which they’re not. Daepa (aka negi in Japanese) are basically giant green onions. They have more or less the same flavor, and the same delicate, juicy texture, as regular green onions, and are commonly eaten raw or cooked. Leeks look similar, but are much tougher, denser, and drier, and have a different flavor. They’re essentially always cooked, to soften them.
Antonio Tejada I was gonna ask if its leeks but ure right they look like large green onions. However I love leek soup yumm. Some of the stuff Mangchi shows us is a challenge to find in the Vietnamese store I go to:) I moved away from the city and theres no Korean stores around me. I just love how you don’t waste anything. I’m from the Caribbean so we wash everything meat and fish with lime,lemon ( it gets rid of the freshness especially if you at some to the meat when seasoning before cooking ) ,sometimes we use vinegar too or even a mixture of salt and flour ( it keeps meat soft and cleans it well with out making it tough .
In Michigan my mother and I used to pick fresh gosari!!! It’s so good fresh!! I miss picking with her. It’s all over our state. And gonamul. I was so lucky to get fresh vegetables for Korean dishes as a child. Thank you!

Catch fresh water into the basin to rinse of the lime or vinegar. Pat dry and season to your preference. And always after handling meat, fish or poultry. Wash the counters with soapy water and bleach. Or to be environmentally friendly, diluted vinegar.

For those who can't find gosari, I tried it with dried Lilly flower and it had a similar texture and was delicious! Didn't taste too different from what I had in Korea.

My grandma not only washed the chicken with salt, she also put it on open flame ( like how you make crispy "kim" to put it in porridge as decoration). It ads some amazing flavour. I like the shade that Maangchi threw !🤣🤣

In the Philippines, we also wash our chicken with tap water (temperatur is not too hot and not too cold), but nothing also happened. But chefs said, chicken should not be washed and should be mainatined in cold temperatur before cooking to prevent Salmonella contamination.
I'm a biologist and I can tell you these chefs are right ! Washing chicken can be dangerous and don't wash away bacteria at all... The cooking kill them.

My grandma not only washed the chicken with salt, she also put it on open flame ( like how you make crispy "kim" to put it in porridge as decoration). It ads some amazing flavour. I like the shade that Maangchi threw !🤣🤣

I haven't tried your recipes yet but I love watching your channel. Your food looks excellent, I enjoy your personal stories and information about how the food works and your culture. You give options for people with different tastes and diets or ingredients that might be hard to find. Every time I think "I wonder why/how/what" you end up explaining what I was wondering later in the video! Also you always seem very relaxed and confident so it makes me think I'll be able to do that too! And your English is so good, I never have trouble understanding anything. In the Philippines, we also wash our chicken with tap water (temperatur is not too hot and not too cold), but nothing also happened. But chefs said, chicken should not be washed and should be mainatined in cold temperatur before cooking to prevent Salmonella contamination.
I'm a biologist and I can tell you these chefs are right ! Washing chicken can be dangerous and don't wash away bacteria at all... The cooking kill them.
