This recipe makes a banana chiffon cake that's very fluffy and very banana-y.
INGREDIENTS (for one 18cm cake)
2-3 very ripe bananas, peel to yield 175 g
60 g egg yolks
15 g castor sugar
40 g corn oil
70 g cake flour
1/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
140 g egg whites
1/16 tsp cream of tartar

I really love banana cake but like it more if it is banana chiffon cake...this is PERFECT!

Made this today and turned out so good! I reduced the baking soda to 1/4 tsp instead as I was afraid the soda taste would be too strong. Definitely a keeper!

i love the brown crust on the sides of chiffon cake,but when I unmold,the brown crust always stick to the pan, not on the cake. I used a long ,flat metal spreader,those used for frosting.

hihi i tried baking this in the bullt in electric oven with fan function. it browned in about 30 mins.. o.0 is the timing 1hr accurate>?
Generally speaking, when using a fan oven, and using a recipe that does not, you decrease your temp by 10 so 160 becomes 150 if you can cook without fan do so and cook at 160. keep an eye on your cake and insert a skewer half way through cooking time to check doneness, continue to watch it until 10min before the 1hour mark and check it again with a skewer, then at 5-7min intervals check it until when pressed lightly, it springs back and squishes softly. Keep checking times quick, dont leave the door open for minutes at a time.

If you stay in Singapore,go Phoon Huat..cheap cheap good good..brand name is not important as long as dont get those non stick material one...dont ask KT stupid question she will bite haha.

Just may you say,a chocolate sponge biscuit will grow the same successfully with rice flour? We want to try to cook non-gluten cake..And also say please,without cream of tartar result of this banana cake is the same good?

The flour does not contain any baking powder or baking soda.
You can substitute your own cake flour with some corn starch and all purpose flour.

i bakes double the amount of ingredient. how long i have to bakes?
I would suggest putting half the double batch into the baking tin and cooking as normal, then once that cake is done, clean the baking tin and pour in the other half of batter and cook it. Unless you have 2 baking tins, then you just divide batter between the two and bake for normal time one at a time.
I had try two time it does fluffy like your, first time it rise but when i take it out from
the oven it go down, second time is rise and to end of baking the cake go down

a splash of lemon juice does the same
+carlina phoon , just add a few drops of lemon juice to substitute cream of tartar.

Please check your cake tin size, I don't think what you stated 18cm X 8 cm is correct. It looks way bigger than than that in the video.
