STRAWBERRY LOAF CAKE
Ingredients for 1 8x4 or 9x5* cake
For the dry ingredients:
1 1/2 cups (190g) all--purpose ("plain") flour
2 teaspoons baking powder
1/2 teaspoon salt
For the wet ingredients:
1 cup (200g) granulated sugar
The grated zest from 1 lemon
1 cup plain (not Greek) yogurt
3 large eggs at room temperature
1 teaspoon pure vanilla extract
1/3 cup (105g) strawberry jam
1/2 cup (120ml) neutral tasting oil (i.e., avocado oil)
For the Strawberry Glaze:
1 cup (125g) confectioners' sugar, sifted
1 tablespoon strawberry jam
The juice of 1 lemon (use enough to produce a thick but pourable glaze)
Center the oven rack, and preheat the oven to 350F/180C. Butter and flour the loaf pan, or spray it with "baking" spray.
The dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
The wet ingredients: In a large bowl, add the sugar and lemon zest. Use your (impeccably-clean) fingers to rub the sugar and lemon zest together until the sugar becomes fragrant. Whisk in the yogurt, eggs, vanilla extract, strawberry jam, and the oil.
Add the dry mixture to the wet, and stir just until the flour disappears into the batter. The batter will be slightly lumpy.
Baking: Pour the batter into the prepared loaf pan, and bake until the top browns lightly, and skewer inserted into the cake comes out clean -- about 1 hour for an 8x4-inch pan; 45-50 minutes for 9x5-inch pan. Cool to room-temperature on a wire rack.
Making the glaze: In a medium bowl, whisk together the sifted confectioners' sugar, strawberry jam, and lemon juice. Add more lemon juice (or just water) as necessary to achieve a thick but pourable consistency. Pour the glaze over the top of the cake, and let it drip down the sides.
NOTES: You will have a taller , and perhaps better-looking loaf if you use an 8x4-inch pan. If the cake seems to be browning too rapidly, cover it with a loose tent of aluminum during the last 10 minutes of baking. - แนวปฏิบัติและการใช้ชีวิต

I learned something today. I never thought about freezing celery. Glad to know about this. Sometime, maybe you should do a 'tour' of your freezer. There might be some things we should know about freezer worthy items we never considered. Lovely to visit with you today!

Once again, I thank you for twenty blissfully relaxing and informative (and mouthwatering) minutes! My favorite part of every week is a new, or often revisited video from Kevin! Your quince is showing appreciation for that sun-warmed wall! Where I am, in a valley at the opposite side of the country, the local blooms are a few containerized winter white and burgundy pansies cheering up the front doorstep. But three weeks ago I began beseeching my Arctic Blue Rose (it isn’t actually blue, more like a pink-leaning mauve) for “once more before winter please.” The experts claim Arctic Blue is deciduous, but here it wants to be evergreen. The other roses already started their long winter naps. This little rose just obliged me with a single bud. I’ll give it one more day before cutting with the knowledge that after bringing it indoors its colors will change at least twice more before fading.

Things are different here in Florida. I planted my winter garden at the community garden yesterday.
I went with black eyed peas, chives, radishes and collard greens. They're all cold hardy, and our chief gardeners recently redid all our beds, adding a drip irrigation system.
Gardening is always an experiment.:)

Yes, a white iris was in bloom last week. Our weather is the same as yours so it was a real surprise to see this spring bloomer. Lovely video Kevin, thank you.🙏❤️
In Louisville, KY my father's crabapple produced a few white blooms two weeks ago. It's snowed as late as April here, but never such a false spring.
Hi Kevin - Thank you for your videos - they offer a sense of calm, but also attention to the many details that make a house a home. You asked about things that are growing or blooming in our gardens right now that surprise us: well, here in Troy, NY we have a white lilac that is blooming for the second time this year. Gorgeous, full fragrance! No leaves! But blossoms all over the (large) shrub, all breaking into bloom; buds everywhere. Then, not too surprising, my rhododendrons are blooming for a second time; again with more large buds looking like they may open this week. My marigolds have died, but petunias are soldiering on, looking pretty darn healthy, too! (usually it’s the other way around with these two plants). Turf lillies are full of blue-black berries, nice to see. I’ve been a gardener for many years now (60+), and I’m seeing things that never happened before. Such an interesting time in the garden - all the “rules” are off!

I collect different varieties of iris and maybe your late blooming is a variety called "Immortality", I have one and it blooms in Spring and then again in Fall, sometimes pretty late like November. They are always white in color. Very large and beautiful.
