This is the second time I saw beating dough with only half the flour, with a paddle. So I researched, and I had the same King Arthur recipe called “burger & hot dog buns TANGZHONG METHOD. This is when you cook flour, water, and milk on the stove to get a softer dough that lasts longer. Well, I think this method of making a batter first does just the same thing even better and easier. Thanks for sharing and asking what we think about the method. I think this is a new idea, and it’s great. 👏👏👏👏

I believe the vigorous beating at the beginning is for improved and faster gluten development. It likely cuts down on the amount of kneading required once all the flour has been added.
I need to try this at some point seeing as I am not entirely satisfied with store bought buns. It would be nice to have buns that remain light and fluffy while being able to take the juices from the meets and toppings without falling apart, which happens way too often especially with hamburger buns.
What kind of flour are you referring to? Closed caption is saying "spelled" flour. Yes, though I am not deaf I am hearing impaired. Thank you for the video!
I make these often and it’s so worth it! I could be wrong but I think they have you add that flour at the beginning to try to help you not add too much flour later? But I’ve never done hotdog buns! Can’t wait to try!
With the wheat issues on shop bought it is likely the processing that is the issue, to keep shop bought bread soft often they are delibrately very undercooked (if you squash some between your fingers shop bought breads go back to being dough) whereas homemade are usually cooked properly. And it is eating the undercooked dough that causes the issues rather than it being an actual intolerance. Look up the 'Chorleywood bread process' to see how commercial bread making was sped up.
If your busband likes bread products but has issues health and weight try using sourdough starter. sourdough which is fermented flour and water will digest the sugars in the carbs so the bread, rolls or whater don't sit long in your stomach waiting to pass through
You’re speaking my language! I usually make sourdough, but just couldn’t get the buns to be as light and airy with it. It might be that I usually use spelt. Any tips for me?!
Wow seriously? I really wanted to learn how to make these and you had no measurements in your entire video! Instead you put a link to go to a website for the recipe. It would have been far more helpful since I'm watching your video if you would have included the measurements for what you are adding on screen.
Seriously, you would rather watch the video and stop every second to and try to cobble the recipe together then go to the website and get a prepared recipe ready for you. Just enjoy the amazing job she did and stop complaining. Its free.

Yes! These are absolutely like that. Soft, but strong enough to not dissolve when liquids touch them. I just made a batch today!

I like them to be ready for eating when I thaw them, and we like the kind of hot dog with a slit in the top rather than from the side.

Hi, I'm confused, you say you use organic wheat flour but the flour bags on the counter say all-purpose.
Well it would work with any kind of all-purpose flour, but that one is organic. The label is a bit lower on the bag so maybe hard to see.
