Kevin, I'm 77 years old and still learning about cooking, thanks to you. I used to can and had my own garden. I don't do much of that anymore. But I am going to try your pesto recipes.

Sitting here drinking a St. Michelle Chardonnay table wine, looking out the window at my lake and thinking…Pesto is such a favorite gift to get and receive. The pasta dish is 100% health food.
    And that floral arrangement! Divine!

Making a pesto with chives is brilliant….I never know what to do with the masses of chives I have- we’re just coming out of winter and it’s about a week before spring weather comes- and the chives are already doing their thing! Thanks so much for the recipe! 🌱🌱🌱

Looks delish! You know what's really good? Making a layered dip with cream cheese, then pesto, then some roasted red peppers. I first blend the cream cheese in my food processor with some garlic cloves. You sure have the pesto and will have the roasted red peppers!

Nice trio of Pestos. Like the idea of chive pesto. You are better off freezing pesto, the heat used in canning "cooks" the pesto and you don't want that. I do a little Hot Water Bath canning of pickles and jam. HWB is very easy to do. Pressure canning is a lot more involved. I don't do it.

  • @cleanfreak2005
    @cleanfreak2005 11 หลายเดือนก่อน

Another nice way to freeze pesto is in ice cube trays, and then just throw in drained pasta (2 cubes per serving) or add to soups and sauces a cube at a time, depending on how flavorful you want the dish.
I keep a gallon freezer bag in the freezer. There is no way you can't have enough.
I use different nuts and cheese for different dishes.

  • @cynthiakammann7368

Thank you so much for sharing how you garden and harvest, and store the produce. Because some people can't have dairy products and certain nuts can be problematic, I process just the Basil with a wonderful EVOO in small containers and cover with a thin layer of EVOO- that seems to keep the Basil from oxidizing in the freezer. It's not as ready-made, but it gives me versatility of use throughout the winter. Basil is a wonderful stealth umami ingredient, especially in soups. Pasta Pesto is a favorite dish in my house, and so quick and easy.
Now you've inspired me to make chive pesto!! Thank you again❣️

    Hi Kevin
Have you looked into steam canning!! Less water and the processing times are the same.. Large pot with a rack. Place produce into jars and steam when water reaches a rolling boil.. A steam canner can be purchased but this is not necessary if you have a large pot and rack.. The instant pot can also be used as it has a rack... just use a glass lid from another appliance or purchase one of instant pots own.. Far less water required and produces the same result with the same processing times.... See what you think!! kindness your way.. Lochness Scottish Highlands..

You are a marvel and I just adore your videos. You've inspired me to grow chives next year❣️
I only make basil pesto, and I don't add anything except basil and a wonderful EVOO I buy annually, directly from Chaffin Family Orchards in northern CA. (They have a website, if you're curious.)
I like to freeze batches of just the herb and oil because I have folks who can't eat dairy, others who can't eat nuts, so I can be versatile, as needed.
I do put a layer of oil on top as it protects the basil from freezer burn and oxidation.
    Take care, Kevin.
