Pressure Canning Chicken Vegetable Soup

  • I am canning homemade chicken vegetable soup and what could be better on a cold day! There is something about chicken soup that seems to help heal the body when you have a cold or just not feeling well. I canned this in quart jars and when I get a jar from the pantry, heat it up, and when it is simmering I add egg noodles and have Chicken noodle soup!
    As much as I try to go by the National Center For Home Food Preservations and/or USDA, I take no responsibility for how your product turns out. So, be sure to go by the National Center For Home Food Preservations at: nchfp.uga.edu/ before making this recipe to be safe.
    The ingredients I used:
    Carrots 1/2 cup
    Celery 1/2 cup
    onion...less than a 1/4 cup
    Minced Garlic 1 tsp
    Chicken 1 cup
    Add product to jars and then add Chicken broth (homemade or store-bought) - Fill to 1-inch headspace.
    Always remember to use a towel with vinegar and wipe off the rims of the jars. Place lids and rings on jars and tighten finger snug.
    At my altitude, for quart jars, I process at 10lb psi for 90 minutes (1 hr. and 30 minutes.
    After processing let cool until pressure is "0". Remove and place on a towel on the counter and let cool for 12 to 15 hours. After they cool make sure jars have sealed, removed rings wipe off jars, date and place in pantry.
    NOTE: (if the product you put into the jars is hot make sure the jars are hot before placing the product in the jars. If the product is cool make sure the jars are cool too. And the same goes with placing the jars in the pressure canner. If the jars are cool make sure the water is cool in the canner and place the jars in. If jars are hot make sure water is hot in the canner before placing jars in the canner). Hot-hitting cold or cold hitting hot can break the jars.

    It's always nice to have some soup at the ready. Yours look great. There are always days when you don't feel like cooking and you go "oh I've got some soup to eat"

    Your recent canning videos have brought my attention to a lot of great meals I have never thought of canning. With Linda in the hospital, I have been having to fend for myself when it comes to meals and this would be great after a long 12 hour day to come home and heat-up...ready to eat!       Thank you, Jim! This is a great way to have it ready just to open and heat up. For the last two days, we've had snow with temps down around 13° and as low as 8°.     Hail to the king of pressure canning! Chicken soup is a perfect one to can, egg noodles or wild rice sound real good with it. It’s definitely soup and stew weather here, been absolutely freezing. Have a fantastic weekend Charley!

    This video brought back some good old memories. I remember as a kid being on my grandparents farm and my grandmother spending the day canning items from her garden. For lunch and dinner she would always go to the pantry and pull out some canned goodies. Kudos Brother, great share 👍🏻

    this is great, chicken soup is a favorite of mine. Currently working on a chicken soup video myself and talked about the importance of having some on standby in the event we get sick or someone we know gets sick. Canning it seems like the perfect solution. Thanks a lot for sharing Charley!

    I'm new to this and trying to learn. I love how you pictured how many quart jars you fitted in that pot. Can you tell me what size pressure cooker that is? And can you tell me how much water you added to the pot?

    Would pints be a different amount of time?

      The USDA shows processing pints for 60 minutes and quarts for 75 minutes for my area (altitude) at 10 lbs. of pressure. Check out The National Center for Home Food Preservation nchfp.uga.edu/#gsc.tab=0 and go by their recommendations for canning. Thank you for watching and have a blessed day!
