You're a brave man, cutting a whole front end off and not knowing how to weld yet haha. I think you should keep some of those scrap bits of the donor and practice welding on them a bit before you tackle the main job.
With the thin metal on a Fiat even with that low powered MIG you will get burn through because the shitty metal Fiat used . A TIG would have been a better purchase as you have better heat control to stop burn through . Use copper on the back if you are going to continue using a MIG welder it will act a heat sink and minimize burn through .

Yes, thats the plan! i have an abundance of scrap laying around. I definitely dont want to be blowing holes in panels haha
Keep the out rigger jacking points as they are hard to get .
