    [Ingredients] 8 servings
    ◎Doughnuts 
    125g bread flour
    75g cake flour
    2g salt
    3g dry yeast
    90ml lukewarm milk
    1/2 large egg
    30ml maple syrup
    25g unsalted butter
    ◎Maple glaze
    30g unsalted butter
    70ml maple syrup
    110g powdered sugar
    pinch of salt
    [Instructions]
    ◎Doughnuts
    1. In a large bowl, put all ingredients except unsalted butter, and mix well.
    2. Transfer the dough to a kneading board and knead well until it becomes smooth.
    3. Add unsalted butter and knead well until it becomes elastic.
    4. Return the dough to the bowl and cover with plastic wrap. Let it rise until doubled in size.
    5. Press the dough to release gas and divide the dough into 8 pieces. Shape each dough into a ball, and pinch the dough at the bottom to seal it. Cover it and rest for 15 min.
    6. Press each dough piece with your hand's palm and poke a hole in the center with a chopstick dusted with flour. Insert your finger to widen the hole and make it into a donut shape.
    7. Place donuts on each 2.5-inch square of baking paper. Let it rise until doubled in size. Do not cover the donut surface to dry.
    8. Heat oil to 170C/340F. Deep fry the donuts with the baking sheet for 2 min on each side. Flip the donuts over, and take out the baking paper. Place fried donuts onto the wire rack.
    ◎Maple glaze
    1. In a small bowl, put unsalted butter and maple syrup. Warm it with a hot water bath until the butter is completely melted.
    2. Remove the bowl from the water bath. Add powdered sugar to the bowl and mix well. Add salt to taste.
    3. Dip donuts into the warm glaze. Place the donuts back onto the wire rack to set.
