I just came here to say that I learned how amazingly good smoking them is compared to just baking them. Confirmed today after baking a big batch instead since my electric smoker broke in the rain earlier this week. That smoke adds soo much more depth to flavor than you get in the oven.
Use an apple corer to gut the peppers. Easy, less hassle, and you can plug the top back in after you stuff the peppers with whatever you like. Wrap with bacon or pat ground sausage or seasoned hamburger around them. You're welcome. :)

Here's a suggestion. Don't wrap the peppers in bacon right away. First, fill them with the mixture, then smoke on the grill for about 45 minutes, or until they appear to be ready. Do this on low, smoke only. Let's say 120 degrees. This allows the smoke to penetrate both the pepper, and the cheese filling without cooking them too much. This makes a huge difference in flavor trust me. That cream cheese filling just sops up the smoke. In the meantime, get your bacon started in the oven, just until its half cooked and not nearly crispy yet. Then when peppers are ready, wrap them in the half cooked bacon strips. There is still plenty of juiciness in the bacon, don't worry. then back on the smoker at about 350 to cook and crisp up. You're welcome!
I usually leave my peppers’ tails on, however, be aware that if you reheat any the next day in the microwave, the ends might start on fire. Just happened to me and scared the crap out of me. Couldn’t figure out why it was all smoky in there each time I checked on them until I saw it light up. So I cut them all off before warming them up in the microwave. These are so tasty though.

Sure does! Cool on indirect heat, so fire on one side only and then put the food on the cold side. If you wrap some wood chips in a foil pouch and put those over the heat with a couple toothpick holes on top, you’ll get that hint of smoke!
A good thing to tell people is overlap with the fat side showing. That way the fat side gets nice and crispy while the meaty side does the same thing but a little less
You must live up north here in Texas we do it somewhat the same way except we don't wrap the intire jalapeño. We cut in half the same way but after the filler is added we put back together then wrap. And we don't take all the seeds out being jalapeño peppers are not really a hot pepper.

The thing with these, is they can't be rushed. I let them roll till the bacon is a little on the well done side. Amazing everytime.

Can I bake them in oven n if so what degree?
Sure. To get smoke, you could put a small foil pack of wood chips in there too. Just cook at same temps as you would in the smoker and you’ll be fine.

can you prep these before hand like a day?
Absolutely, but don’t season the outside until ready to smoke. Seasoning the meat too early will draw out the moisture and start to cure the meat.
