I fixed the problem with a soaking in milk, sugar, and salt. 3 days later they went mellow and had a taste like Vidalia onions. We stuffed them with Galveston bay crab and East Texas Bayleaf (removed later) for Seasoning.

We just made the armadillo eggs tonight and they were good!! The only problem I had was my jalapenos were really big, so I ran out of sausage and beaten egg. I will be making some more for a neighborhood get-together this coming Saturday. Very tasty, sir!
