For a little change up I use pineapple cream cheese. Really helps out with the heat when you leave some of the veins intact. And the Shullsburg white cheddar spread is also an awesome cheese for poppers.

This is only the third thing we’ve cooked now on our new Traeger Silverton 620 from Costco. I was surprised, to get to the point where the bacon looked crisp enough before saucing, it took 3 hours not 1. Hmm tomorrow we are trying a brisket with your 300F guide, a little worried it will take longer than yours. Lol
I would check your temps, because it shouldn’t take 3 hours to cook bacon at 300°. At long as you’re running true 300° for the brisket, it’ll be money 👍🏼🔥
Awesome stuff Darrin. I tried armadillo eggs a month or so ago and thought the sausage was a little much. These might be right up my alley. I love the combination of sweet from the sauce and rub with the spicy jalapeño. I might try to leave some of the guts in for an extra kick

For an extra kick, I dehydrate the Jalapeño seeds and then powder them up...Add that to the cream cheese as a seasoning 🔥
