    Nutrition Facts:
    One serving of full-fat cottage cheese contains
    Calories: 120
    Fat: 6 grams
    Protein:14 grams
    Carbohydrate: 3 grams
    One serving of skim-milk cottage cheese contains
    Calories: 90
    Fat: 2.5 grams
    Protein: 11 grams
    Carbohydrate: 6 grams
    Cottage cheese is made by adding an acid (lime juice or vinegar) milk which causes a separation of the milk solids from the whey.
    As the acidity of the milk increases, curds of casein protein separate from the whey.
    This can be done by adding a bacterial culture that produces lactic acid or a food-grade acid such as vinegar.
    After the curd is formed, it is gently cut into pieces that allow additional whey to drain from the curds.
    The curds are further cooked and pressed gently, and are then rinsed and salt is added.
    Note on Casein:
    Beta-casein proteins make up around 30% of milk’s proteins and comes in one of two genetic varieties: A1 and A2
    A2 is the original variety that all cows used to have, with A1 appearing somewhere around 5,000 - 10,000 years ago through a mutation.
    BCM-7 is a bioactive opioid peptide which is formed in much greater levels when we consume dairy with A1 beta-casein when compared to A2 beta-casein.
    BCM-7 has been linked to delayed digestion, gastrointestinal inflammation, pain and bloating.
    Benefits:
    Fat: ~50% saturated fat
    Study - The American Journal of Clinical Nutrition-
    Researchers studied the effect of dairy fat on mortality risk and cardiovascular health in over 2,900 U.S. seniors, aged 65 and above.
    The researchers measured the participants' blood plasma levels of three fatty acids contained by dairy products (pentadecanoic, heptadecanoic, and trans-palmitoleic) at the beginning of the study in 1992, 6 years later, and then 13 years later.
    During the 22-year follow-up period, 2,428 of the participants died - of these deaths, 833 were due to heart disease.
    However, none of the three fatty acids examined correlated with the risk of total mortality.
    In fact, high circulating levels of heptadecanoic fatty acid were associated with a lower risk of death from heart disease.
    Also, adults with higher levels of fatty acids overall were 42 percent less likely to die from stroke, revealed the analysis.
    They’re a small proportion of total saturated fatty acids in milk fat, but they are accepted biomarkers of dairy fat intake.

    Magnesium:
    Since keto diets mostly eliminate carbs, dietary sources of tryptophan are also eliminated.
    Magnesium binds to gamma-aminobutyric acid (GABA) receptors - GABA is the neurotransmitter responsible for quieting down nerve activity.
    Muscle Relaxation: Magnesium relaxes the muscles in the intestines, which can help to establish a smoother flow as the stool passes through the bowels.
    Stool Softener: Magnesium draws water into the intestines, working as an osmotic laxative
    Sodium:
    A reduced carb intake also results in blood insulin levels decreasing.
    And when under conditions of low insulin, the kidneys absorb less sodium and excrete more into the urine - the primary action of insulin on sodium balance is exerted on the kidneys to stimulate sodium reabsorption.
    A lack of sodium on keto can cause the brain to send signals to the adrenal gland to increase the release of stress hormones.
    Phosphorus:
    Phosphorus is a basic building block of your DNA, as well as ATP, the energy molecule that makes muscle movement possible.
    Specifically, all energy production and storage are dependent on phosphorylated compounds, such as adenosine triphosphate (ATP) and creatine phosphate.
    Selenium:
    This is a nutrient that's a key component of a healthy thyroid gland and it reduces inflammation by inhibiting NF-kB and its activation of interleukin-6 and TNF-alpha production.
    Selenium is also essential to the proper functioning of glutathione peroxidase - glutathione is 100% dependent on having a selenium atom at its core for proper function.
    rBST:
    rbGH (recombinant bovine growth hormone), is a genetically engineered hormone injected into dairy cows to increase milk production
    rBST raises the concentration of insulin-like growth factor-1 (IGF-1) in treated cow milk
    During development of the mammary system, IGF-1 increases cell proliferation and the formation of mammary ducts. IGF-1 has been shown to stimulate growth of human breast cancer cells.

    Good Stuff Cottage Cheese, Eggs, bacon, mushrooms, cheese, spinach, butter, chicken, ground Turkey, Him salt, keto coffee, green tea, ACV and a few pork rinds is all I needed to drop 23 lbs in 2 months! I was dropping so much weight so fast I had to add some hash browns to my eggs.

    I'm a big fan of cottage cheese and tried this brand the other day. It's HANDS DOWN the yummiest cottage cheese I've ever had. It's shockingly better than any brand I've ever had. Even if it had garbage ingredients I'd still eat it because it's that good lol

    So what about something in all grocery stores like DAISY COTTAGE CHEESE. Only 3 ingredients are cultured milk, cream, and salt. Is that not considered CLEAN?

    I am on a low carb diet but i still take all your tips and it's working great so far
    I hit a wall 4 weeks ago and i came across this great Chanel since then i dropped

    OMG, I was craving cottage cheese and mixed nuts last week and decided to go to my local Publix grocery. I must have looked at four different brands and chose this one because of the low carb content, attractive packaging, and price 😂 Then I fell in love with the taste so much it was almost criminal so I had to click on this video--so glad I made the right choice.

    I love cottage cheese. I'll use it instead of ricotta for Italian dishes and for sour cream in dishes like taco salad. It's also great blended and frozen in an ice cream machine.

    Thanks for the informative video. I’ve lost 40 lbs in the past 18 months . I started out avoiding fast food restaurants, that was the most effortless 15 lbs I ever lost in my life. Thanks to Covid-19, they closed & when the drive thru’s reopened my habit was crushed along with me hating lines and not wanting to be the 21st car in line at McDonald’s. The rest of the weight come off and has stayed off by being careful and walking. Again thanks for educating me.

    Hey, Thomas, paneer or curd is quickly and easily made at home during meal prep:whole, organic milk curdled with lemon juice, curds scooped into cheese cloth and pressed. Traditionally fried in ghee, absorbs flavors, insanely delicious with veggies, used universally in Indian cooking. Sounds like a go, right! As easy to make as your mayo. Good Culture cottage cheese is the bomb though!

    I stopped cottage cheese due to the carragean. Now I use whole milk Greek yogurt no carragean in that for my salad dressing. I learned yogurt is awesome in savoury dishes.

    Thank you very much for this video. Cottage cheese has been THE goto for me since I started keto and I have never been quite sure if this has been good or bad. Unfortunately, the cottage cheese that tastes the best, surprisingly it is the store brand of 4%, also has carrageenan in it. Luckily, there is a sprouts very near me that I already shop at, so I'll be checking out the "good" brand very soon. BTW, given your recommendation, the "Daisy" brand conforms quite well and is very affordable comparatively speaking.

      @@Teramydog The issue I have with Daisy is the inconsistency of the product: one time it is soupy and very thin and the next it will be too thick and I have to add cream in order to mix in the turmeric, cayenne, ginger and salt that I add. And, it will be of the full spectrum in between at any given time.

    Great, thank you so much for this video. I'm a cottage cheese lover and I'm on keto since 5-6 days... I couldn't rid of the cottage cheese from my diet, because I love it so much and it has good macros... Here in Poland we've got a lot of good quality cottage cheese - just curd, some cream and culture bacteria, maybe salt... no carrageenan or stabilizers whatsoever. Now I'm ok with eating my cottage cheese on keto... :)

    Good culture is my absolute favorite cottage cheese. I actually found it a couple weeks before I heard you mention it. I tried it on a whim as it was on sale at New Earth. Now I will go ahead and pay full price for it occasionally. I did notice the last batch was more watery and one of the things I previously liked about it was it’s low water content so hoping that was just a fluke.

      Homemade kefir is the way to go. I use half & half. Use heavy cream to a butter like cream

      Homemade kefir from full fat grass fed milk is great. It is loaded with K2 MK-7 if it is grass fed. Goat milk is also great, just depends on how the goats are raised and what they eat. The traditional kefir from over 2000 years ago in the caucasus mountains was from goat milk.

      If you make your own using milk kefir grains (as opposed to buying it from the store) you can control the amount of sugar it contains with long ferments upwards to 1-3 months, which makes it perfect for keto. Add grains to milk. Leave to ferment on counter 2-3 days. Remove grains & put them in a new batch of fresh milk. Transfer your fermented milk to the fridge & leave for 3+ weeks before you even touch it. The longer you leave it the more sour it becomes, meaning trace sugars. To get the most fat & protein always use full fat milk (35% 18% 10%). Sheep contains more fat & protein but goat, water buffalo, & cattle milk is good too.

    Just a clarification.. cheeses that are not cut by acidity, which are most of them, don't contain casein at all since rennet splits the casein molecule between amino acids 105 and 106.. so you end up with two halves of it, which chemically are a completely different protein.

    I had a lightly breaded & fried Chile relleno yesterday & cottage cheese with pineapple for desert. I woke up with a stuffed nose & it’s lasted all day. I also felt depressed and emotional to the point of crying and moping around today. The breading could be the culprit, and/or hormones in the cottage cheese, and/or the seed oils the Chile was probably fried it.
    *wow he recommended good culture but that’s the one I ate that I believe contributed to my symptoms. I think primarily the congestion. I’ll give it another try after I’m on only meat & eggs for a while.

      Try sprinkling it with Stevia and cinnamon, mix well then put it in your freezer for twenty minutes per half cup serving. I eat three half-cup servings so I freeze mine for an hour. Eats like ice cream. Let me know what you think of it.

    You guys should really try blending cottage cheese with protein powder, half and half/or milk (optional for consistency), and ice. You end up with a killer dessert which you can also add other toppings. For those of you not doing keto, an alternative to protein powder could be fat free sugar free pudding mix. Regardless, keep on keepin' on, my dudes.

    Hmm....2:12....did that person get fired?? 😎 BTW, the only two clean brands of cottage cheese I've found are Good Culture and, oddly enough, Daisy. I love that they both offer 5.3 oz containers, as I find it way too easy to go overboard with the larger ones. Coincidentally, Daisy's sour cream is also very clean.

      @@tazboy1934, thanks for the heads-up. However, the only peanut butter I eat contains one ingredient: peanuts. But I do see carrageenan in so many ingredients lists! It's one more reason to just stick to whole foods.

    I just love your videos!! As a medical sales exec and a health coach, I really appreciate how you rely on literature or facts to come to your conclusions.     I've been plateaued on keto after losing 120 lbs. I've started adding in 3 PSMF days per week and finally started losing again. I have a lot of whey isolate on hand already, so I've been using that and so far, it doesn't appear to be hindering my weight loss. So if it's spiking my insulin, I'm not feeling it yet

    Thomas, thank you for cracking the nut for me on sleeping difficulties on Keto. You are the only one to do this, which is why I see you as a Guru.
    I do IF every day and regularly do EF either 48 or up to 72 hours. I have found myself to be a bit of an insomniac all the time on Keto. Other than a bit of heavy cream in coffee, the only dairy I eat is cottage cheese, high quality, but I crave this stuff. You are correct that it helps to promote sleep.
    I have some Magnesium arriving today and I am going to begin taking this. I had no idea that the Kto diet was contributing to my difficulty sleeping., especially during extended fasts. Thank you.

    Thanks for the great info! I live on the Oregon coast so don’t have lots of quick access to the kinds of products you mention BUT today I went to our local grocer and while looking at the cottage cheese I found a brand that has the same ingredients as the one you mentioned! It’s called Green Valley creamery organic cottage cheese: made with organic skim and whole mills and organic cream, lactase enzyme, Celtic sea salt and live and active cultures!!! 7.00 but it tastes great! 6 g fat, 3 g carbs in a half cup!!!! Yay!!!😀

    Publix and Kroger has a brand called Daisy with 3 ingredients:
    Cultured skim milk
    Cream
    Salt
    Daisy at 16oz it is a great deal compared to Good Culture in 4oz.

    Most western European cow breed yeild A1 milk even if grass fed organic.

    Especially for animal products, there is a huge difference when it comes down to organic grass-fed or wild-caught animals. Studies show that we have more omega-3 and more vitamin D and so on...

    I know it's not grass fed or whatnot, but the Daisy 4% is great tasting cottage cheese. Only 3 ingredients, cultured skim milk, cream, and salt. Hard to beat that!
    I've never tried the double cream Good Culture, but the 2% is.... not tasty. I'd be reluctant to spend the extra on it again for another try.

    Hi, Thomas, That was a really well balanced, in-depth commentary on the pros & cons of this particular food (and, just as you said, Cottage Cheese can be a real question mark for most people, that is whether its good or bad, especially on a Keto regimen). Also, I certainly appreciated your recommendation when it comes to selecting an actual product.     Daisy does not have carrageenan in it and is easy to find, taste great and the price is right. I will checkout the Good stuff and see how it tastes thanks for the video and the cottage cheese breakdown.

    As an Indian, I am so relieved cottage cheese is good. It is part of my keto diet almost every day
    Also, add the word "paneer" in your title which is the Indian name for cottage cheese, it will substantially increase your views.

    The good culture cottage cheese uses organic skim milk. That confuses me I thought we wanted organic whole milk? Can someone clear this up for me?

      Migrant mit Hintergrund my health drastically improved after consuming raw milk, raw cheese and raw grass fed butter.
      Please explain to me how getting rid of these super foods is going to be better for you? Do you even know what raw is? Hint: it’s not the white milk you see at your local supermarket.
      It’s funny how you people are trying and failing to link RAW milk with all kinds of cancers but this was never an issue in nature, not even 80 years ago when raw milk was more prominent. It’s also funny that you guys can’t make the same link to seed-derived foods like bread, soy, almonds, olive oil, coconut oils. All of those foods would be impossible to obtain in nature and tastes like garbage without proper ingredient mixtures. How can you ignore grass fed butter in place for olive or avocado oils when it is almost impossible to obtain oil from the latter? We were never meant to eat those kinds of foods.
      Yet here we are, sicker than ever, hanging on by a thread, taking supplements and taking medicine all produced by the agricultural industries you so love to defend. Thomas is a sellout and the sooner you realize that, the better you will be.

    Good Cottage cheese on a low carb salad with eggs and fish is so good. Topped with Some good dressings like hot sauce, Worchestershire, Olive oil and Vinegar, and I have a happy weekday meal.

    I love cottage cheese and have made it a staple in my keto journey. However, I did not know most of what you talked about. I love your “clean keto” recommendations and I will look for the good culture brand at my super Kroger. I wish the FDA would just ban carrageenan. It needs to go from our consumption.     I LOVE dry cottage cheese. It has no sodium, no fat, and no carbs. It's a very versatile protein, much like tofu. But, it's casein, pure casein.
