I've had a few people tell me that their chips didn't flatten out. I've asked them what brand of cottage cheese they used and to list the ingredients, but no one has replied. If this recipe doesn't work for you, please reply to this comment with the brand of cottage cheese you used, whether it was full fat, and list the ingredients. It shouldn’t take long to narrow down the culprit. Some of the brands that don't work are: Member's Mark, Good Culture, Great Value, Prairie Farms, Knudson, and Kroeger. What all of these brands have in common is that they use skim or fat free milk. My hypothesis is that these brands then use more thickening agent (usually guar gum) to offset the thinner milk.
My chips did not flatten. I'm using 4% milkfat, large curd. After reading this comment I checked the ingredients and was a bit surprised: cultured nonfat milk, cream, whey, salt, maltodextrin, guar gum, citric acid, carrageenan, mono and diglycerides, locust bean gum, polysorbate 80, potassium sorbate, flavors, enzyme.
For sour cream and cottage cheese I use Daisy, their sour cream is just cultured cream and their cottage cheese is cultured skim milk, cream, and salt. I've found most other brands to use some sort of extender/filler product (guar gum, locust bean gum, carageenan, etc,). There are probably other good brands out there, you just need to check the ingredients. Fun Facts: if you were a kid in the 80s you'll know guar gum as the key ingredient of toy store slime E.G. Ghostbusters slime, Masters of the Universe Slime Pit, etc.
Mine spread out a bit, but didn't flatten. I used Daisy 4% milkfat. Ingredients: cultured skim milk, cream, salt. They were very crisp, but not as flat as yours.

This was great, Steve. I've also been inspired in making these by the wonderful Keto Twins. My method is to mix a 32 oz container of cottage cheese with 1 tsp each of garlic powder, onion powder and black pepper. I use however much I need and put the rest of the seasoned mixture back in the cottage cheese container for next time. I can't wait to try your baked method! Try this seasoning mixture, it's really good.
PS: I make mine by spreading out a thin layer of the seasoned cottage cheese mentioned above onto an air fryer parchment insert, slide it onto a plate and microwave it for 8.5 to 9 minutes. Let it cool and break it apart into 'rustic' pieces. I'm excited to use your method and bake some perfectly round chips. Thanks again!

I suspect it's because we are all more into content creation than administrative tasks. If an angel investor and someone who could handle the business aspects (accounting, payroll, publishing, etc.) would come along, I'd totally be for that. Or if America's Test Kitchen wanted to start a keto show...
I just ran downstairs to whip up some cottage cheese chips after getting inspired by this vid. I'm impatient, so I just used the microwave method. I miraculously had all theses things: the cottage cheese, the ranch powder, the pork panko crumbs, and some pecan flour. No measuring, I put in just a sprinkle of this and that. Stirred it up and put on Silpat rounds . Tasted great, but not as beautiful as Steve's oven baked chips but, hey, they were done by the time the coffee was ready. Thank you Steve for sharing your experiments with us.
I sure would have liked to see a little bit of the dehydrator experiment! I have a big one that I’m using more. I tried your chip experiment in it with pepperoni. When I left thin pepperoni in at 158 F for about 6 hours, I got a delightful snack. It seems like a weird universe where we spend our days making crackers out of pepperoni and cottage cheese on YT, but I sure do appreciate you!

I’ve never been able to make these in my microwave. Steve’s 30-second tortillas don’t come out evenly either so I’m pretty sure the problem is my microwave. So glad to see I can try them in the oven! Thanks Steve for all your efforts 😊
For those of you who are lactose intolerant, the Lactaid bend carries lactose free products for their sour cream and cottage cheese. You can see it at the supermarket in the cold section. Lactaid’s brand color is with blue label on the carton.
I checked ingredients when buying my cottage cheese today and noticed quite a few brands add guar gum and other additives besides just cream and salt. I didn't check Lactaid since I bought Daisy which is just cultured cream.
I 've made the chips 3 times now, all using Daisy brand full fat. I just used a Macaroon silicone mat & spread them out to the large circle with a spatula. They turned out great, thin & crisp! Thank you!

Variation ideas: SAVORY: Add chopped kalamata olives & a bit of rosemary. SWEET cookies: Add non-calorie sweetener of choice & vanilla or almond extract. Drizzle or dip one end in melted keto chocolate, or adhere 2 cookies with melted chocolate (like Milano cookies). 😋
Thanks for the experimenting Steve. Other videos that I've seen with cottage cheese has inconsistent chips. I like how your version takes care of that problem. It actually doesn't take longer when it comes to time you spend working on it... it's much less... and you can get more at one time. I got some One On One flavors, so this should be a good way to use some of them. I've got a potato flavoring in my collection, so that should make a good potato chip version that's much healthier.

You've improved the process and I just tried it with Pork King Good's ranch pork rinds and a tablespoon of their ranch seasoning and they are delicious. Love the keto twins. I’m still waiting for a chip that can replace potato chips. If you have one, please let me know. I have some salt and vinegar seasoning just waiting for a good faux potato chip. Have I missed one, I don’t always get online, so it’s easy to miss things. They tried adding instant potato and so did I but I wasn’t taken with the result. Potato chips have always been my addiction, and oh how I miss them. About once every three months I give in and buy a bag and devour the bag. Doesn’t fulfill the need, but it helps, with everything but the guilt.

I made these right after watching your video. They got too brown on the edges after the first step so I lowered the temp to 200’ (I knew my oven runs hot - my bad) They turned out exactly the shape and as crispy as yours. 👍🏻 They will be great for guacamole and cheese dips. I had made these in the microwave many times and they were great, but time consuming. I just tries them in the oven @325 and followed Keto Twins suggestion to add a tad of potato flakes, but they didn't crisp up. I am so excited to try this. Does ot mater what kind of cottage cheese, other than full fat. Thanks so much Steve.
Thanks so much. Mine never turned out well in the microwave or the air fryer or the toaster oven. I’m a person who needs crunchy food everyday. Sooooooooo. I will give this a try even though I decided cottage cheese chips were not for me and swore I’d never make them again. (Also. I don’t think this is necessarily more time since I had to stand and watch for timing before and only had 2-4 chips at a time. Lots of wasted time babysitting the chips!). I have left over cottage cheese so in the oven it’ll go. (I love watching Keto Twins as well).

I saw another recipe using an air fryer and I didn’t have full fat cottage cheese. They all ran together and were Chewy. Like you, I didn’t give up and found your cooking channel on TH-cam. Eureka! My first batch is cooking in the oven and I spiced it up with garlic powder and Italian seasoning. The kitchen smells amazing. I just checked on them and even though I used 2% cottage cheese, they are not watery and flattened out to thin wafers. I am new to keto. I made keto zucchini lasagna the other day. My son just found keto cheeseburger, lettuce boats on Tik Tok. I am hooked on keto. Never felt so good.
I've been doing this in my dehydrator for a while now & love it. I just spread it all out on silicone sheets & break it up. Sounds crazy, but spaghetti mix powder is my favorite, with Tajin a close second. I also do yogurt & sandwich meat in the dehydrator. I keep 8oz deli containers of each in my purse so i can snack when I need to.
I did SO MANY iterations of this recipe in a dehydrator and just couldn't get the texture I wanted. Once I went to an oven and got the time/temp dialed in, I was thrilled with the results. Also, I did a video on dehydrating deli meats into chips. 😉
Unfortunately, I hadn’t tried lowering the temperature. So glad that works. I’ve tried everything else, including using the food processor, which did help avoid inconsistent thickness, but finally gave up trying to get even baking. Thanks again!

I like many of The Keto Twins recipes... I tried these when I saw them do it. Not bad... Seemed like a lot of work and time for a few chips. I might try three sheet pans at once to speed up the process.
And if you don't care about presentation, u can save more effort by spreading the mix on the mat/parchment paper as a whole thin layer. U can par bake cut/score into even pieces and then return to oven to finish. Even less effort - bake as a whole and then break into pieces😅 I'm making these with peanut flour (pecans are awfully expensive here in Asia) Thanks, Steve!❤

How much everything seasoning did you use? I found when I did a batch with it, I pretty much just tasted garlic.

It’s actually about 5 minutes of work. The rest is passive time. And you can absolutely do two trays at once, doubling your output. 🙂

I made these right after watching your video. They got too brown on the edges after the first step so I lowered the temp to 200’ (I knew my oven runs hot - my bad)
They turned out exactly the shape and as crispy as yours. 👍🏻
They will be great for guacamole and cheese dips. Thank you for experimenting.
I also like the Twins version because they’re like potato chips, though too fragile for dips.
Look at your owners manual. Most newer ovens can be calibrated with just a few steps to correct that problem.
Every oven I have ever used has been different.

I had made these in the microwave many times and they were great, but time consuming. I just tries them in the oven @325 and followed Keto Twins suggestion to add a tad of potato flakes, but they didn't crisp up. I am so excited to try this. Does ot mater what kind of cottage cheese, other than full fat. Thanks so much Steve.
I've used a couple of brands (both full fat) and it worked out the same.

Have only microwaved these, may try in the airfryer. Good reason to get a double oven! Will try with the bread flavors of OOO flavors.

Thanks so much. Mine never turned out well in the microwave or the air fryer or the toaster oven. I’m a person who needs crunchy food everyday. Sooooooooo. I will give this a try even though I decided cottage cheese chips were not for me and swore I’d never make them again. (Also. I don’t think this is necessarily more time since I had to stand and watch for timing before and only had 2-4 chips at a time. Lots of wasted time babysitting the chips!). I have left over cottage cheese so in the oven it’ll go. (I love watching Keto Twins as well).

I saw another recipe using an air fryer and I didn’t have full fat cottage cheese. They all ran together and were Chewy. Like you, I didn’t give up and found your cooking channel on TH-cam. Eureka! My first batch is cooking in the oven and I spiced it up with garlic powder and Italian seasoning. The kitchen smells amazing. I just checked on them and even though I used 2% cottage cheese, they are not watery and flattened out to thin wafers. I am new to keto. I made keto zucchini lasagna the other day. My son just found keto cheeseburger, lettuce boats on Tik Tok. I am hooked on keto. Never felt so good.

I've been doing this in my dehydrator for a while now & love it. I just spread it all out on silicone sheets & break it up. Sounds crazy, but spaghetti mix powder is my favorite, with Tajin a close second. I also do yogurt & sandwich meat in the dehydrator. I keep 8oz deli containers of each in my purse so i can snack when I need to.
I did SO MANY iterations of this recipe in a dehydrator and just couldn't get the texture I wanted. Once I went to an oven and got the time/temp dialed in, I was thrilled with the results. Also, I did a video on dehydrating deli meats into chips. 😉

Unfortunately, I hadn’t tried lowering the temperature. So glad that works. I’ve tried everything else, including using the food processor, which did help avoid inconsistent thickness, but finally gave up trying to get even baking. Thanks again!

I like many of The Keto Twins recipes... I tried these when I saw them do it. Not bad... Seemed like a lot of work and time for a few chips. I might try three sheet pans at once to speed up the process.
This version is very low effort if you have the tools.
And if you don't care about presentation, u can save more effort by spreading the mix on the mat/parchment paper as a whole thin layer.
U can par bake cut/score into even pieces and then return to oven to finish.
Even less effort - bake as a whole and then break into pieces😅
