1 thing to remember when you cook a wagyu.. you paid the 100 dollars for it so you can cook it however you want to and put whatever you want on it for seasoning.
If well done steak is the best then enjoy eating the shittiest cheapest cuts of meat because it doesn’t matter what you choose it all ends up the same if you cook it well done. Leave the expensive soft tender cuts of meat to the people that actually know how to cook.
It’s actually over cooked. Wagyu has so much fat marbling that you barely want to cook it. If you render the fat, it loses lots of flavor. These are like $100 a piece. Buy something else if you prefer your steak more cooked.

There is so much intramuscular fat on Wagyu that if you cook it to well-done (as most people do in Japan), it will still be very tender and juicy. Personally, I like my American steaks cooked medium-rare but I like my Wagyu steaks cooked to medium.

Actually if you cook wagyu to medium well (although I wouldn’t recommend it) you’re in less trouble than any other type of steak. It’s a pretty hard to dry out and will still taste great. It’s just that for the price you’ve paid you won’t be optimising the experience but some people will in fact think it tastes better.

I've had A5 wagyu a couple of times at a Yaki Niku restaurant in Kumamoto. Cooked on a small grill in the centre of the table. It was excellent. When you actually go to Japan and eat real wagyu (not this half bread stuff) you will see there's plenty of fat to cook it anyway you want.
Do not stray from the grill or cook further than the low side of Medium Rare... Feel free to use a Prezzmolata or Chimichuri. Grassy herbs will enhance the flavor. I recommend using these accutemond as a side. S&P but nothing else whilst cooking. Js

Real wagyu is cooked slightly to medium. The meat has so much fat in it, you want to melt all that fat down. People who tell you to cook wagyu medium rare don't know anything about wagyu. Wagyu specialised chefs in Japan even cut the meat into smaller strips and cook the unexposed sides further.
Is that A5, A4 Japanese Wag-You or is it American/Australian Wag-You ? I agree that the high fat full Japanese Wag-You should not be grilled but I have grilled both American and Australian Wag-You without any issues to medium well. No gas, good lump charcoal at super high heat. Good sear on bother sides and done. I also agree on the seasoning, whether full Japan Camera Fujifilm Wag-You or American/Australian Wag-You, only good salt like a good quality truffle salt and maybe freshly ground black pepper. No fou-fou seasoning

@@embersliving No worries, I have seen the same grade have more and sometimes less marbling. It’s constantly changing it’s hard to keep up sometimes

we seared it on the flat top for more direct contact
