What I notice on all these videos is that the Japanese guys cook the steak completely opposite of what they do in Europe/USA. They always start it slow, instead of throwing it on a searing hot surface.
Because wagyu has so much fat, it needs to be rendered some. If you have it too hot, it will burn/overcook the meat before all the fat renders. So it's more about the type of meat than it is location!
That first spoonful of soup looked good, just the viscosity showing how creamy and thick it was. Wish I knew what the flavour was. Gotta echo some of the other comments and request subtitles, or even just a caption of each dish.
@jeromewagschal9485 I will never tell my guests how to eat their steaks, nor I would get upset because the want to use A1, Ketchup or whatever make them happy. I like my ribeye medium rear with kosher salt and pepper nothing more; that said if you like yours rear or well done I gonna make sure you will get it the way you like it nothing more or less.

They usually offer a bowl of fancy fried rice for a "top up" after the meal for that reason. It usually comes at an extra price though
