    Hello I am a 14 year old boy from the states I made this dish last night and was completely mind blown from the flavors and how well the incorporated, instead of using rabbit, ducks, and others I used chicken, i bought the chicken whole and fillet the chicken myself, I just want to say I love your channel and what an amazing recipe!

      Well done my man! Just 14 year old and already doing this is badass. A little tip for you. After Christmas the supermarket freezers are filled with unsold ducks that they sell at bargain prices. I usually buy 3 or 4 and chuck them in the freezer (after new years you get cheap oysters). If you liked the chicken your mind will be blown away when you try with duck. It is incredibly powerful in flavour. I use this ragu in ravioli and reduce the stock to a glaze to dress the ravioli. Try adding a bit of orange zest to the ragu and glaze - orange and duck are best friends. And since you are at this level already you might consider making some 'confit de canard' from the duck legs and fat. Serve with a simple french style green salad and some good bread. It will put a smile on your face guaranteed.

      So well said. I have cooked my whole life and when you discover a series like this your level of cooking is transformed. I too have such a hard time going out to a restaurant now because it is soo disappointing..

      There are Italian restaurants in America that are not Olive Garden, and try their best to dial up the quality level. But, for the most part, a family run restaurant is going to follow their family traditions and recipes, and those are the ones that I search for. Those that are in it just to make money aren't going to have the same "heart and soul".

    When we entertain, I spend 7 hours making Chef Spigaroli's Michelin Star lasagna from scratch. The flavor is so simple, so subtle, and so different from restaurant lasagna. I appreciate his love for cooking and his dedication to the ingredients.

    This is why I learned to cook. I'm a 36 year old man from the woods but I have been cooking for more than twenty years. Occasionally, I'll go out and eat but I'm almost always disappointed because the things we can make at home with recipes like this utterly outshine next to everything. I made a traditional Irish corned beef and cabbage boiled dinner for St. Patrick's Day and authentic Chinese Bao the next day with a dipping sauce. I'll go shopping again soon and pick up the ingredients for this recipe that I am missing and I can tell just by looking that it will be phenomenal.

    Thanks to Massimo educating me on lasagna al forno I have made my American Italian friends mad and can never go back to using ricotta. It’s such a wildly better version. Additionally, I’ve found a fantastic wine that pairs extremely well(bought all the bottles) in making a chicken variant for the bolognese of that same dish. Also my pasta making skills have also evolved due to making that recipe so I’m excited for this. I will definitely visit this place one day.
