In Nigeria ( Yoruba tribe), we have something called “akara”. It’s made with Nigerian brown beans ( similar to pinto beans) or black eye beans that has had the skin removed. We then blend it to a smooth paste, then add the chopped onions, peppers, scotch bonnet and seasoning and fry. It’s so so yummy! These fritters look mouthwatering too. I’m thinking of using the blended bean paste to bind but still add the salt fish . It would be healthier than flour. But will definitely try the flour recipe too and update you. Also, it just shows our African heritage, that we are linked . Our ancestors were carted off to the Caribbean as slaves but still kept the name ‘akara’ or accra and adapted to what they had. It actually works. She added yeast to the mixture and sugar is what activates yeast. Very good 👍🏽
