Yeast Risen Keto Bread

  • Many of us on keto have been missing our bread. Real bread. Not the "bread" recipes we have seen online. Trust me, I baked through many many recipes that went in trash before this recipe became a smash hit in my house! This yeast-risen keto bread recipe is as close to regular bread as you will ever get!
    I use my Stand Mixer for this recipe. It is of course possible to knead the dough by hand as well, just know that this will take longer.
    Ingredients:
    • 1 cup water
    • 1 Tbsp instant yeast
    • 1 tsp. raw local honey
    • 4 Tbsp. Powdered Monk Fruit
    • 2 eggs, slightly beaten
    • 1/2 cup oat fiber
    • 2/3 cup ground golden flax meal
    • 1 1/4 cup vital wheat gluten
    • 1/2 tsp. xanthan gum
    • 1 tsp Redmond's Sea Salt
    • 2 Tbsp grass-fed butter butter

    I got 20 slices from this loaf of bread.
    Each slice comes out to 65 calories, 3g fat, 2g net carbs and 7g protein.

      FYI: the reason wheat and other grains are problematic is b/c of starch. Starch is a chain of simple sugars, so while starch doesn't *taste* sweet, the body metabolised it just like sugar.

      @@TheMrprez actually wheat gluten comes from wheat. Gluten is one if the protiens in wheat. The main one. "Vital wheat gluten" is produced by removing everything that isn't gluten. Vital wheat gluten does not contain starch. Is that what you mean?

    You don't need that hot water in your microwave. Just keep the door ajar so that the light in the microwave stays on. I put my plate in the microwave with the door ajar while I'm cooking my eggs so that my plate is warm when I put my hot cooked eggs on my plate. So I can use my microwave as a proofing and rising "oven" 😂

    I didn't like the taste of the bread with the flaxseed meal (my preference). So I altered the recipe a bit. I substituted it with hemp seed hearts, whey protein isolate, and coconut flour pretty much equal parts totaling the 2/3 cup amount. I also added extra egg (equating to about an extra 1/2 an egg lol). I also used active dry yeast and proofed it, which proofed really well. But, the loaf didn't rise as much as I prefer. But I will say the bread came out really well and had a much better taste and toasts well. I'd love to know why it didn't rise as well though.

      Update: the bread hardened a little too much. Might be the hemp seed hearts.

      @@OpinionatedOG184 Was this YOUR recipe??? I would assume if a person puts videos out there with recipes, they'd be able to offer insight on these issues. Not everyone can or wants to use certain ingredients, nor is everyone a food scientist. It's about being able to answer those questions if you're putting yourself out there. If you don't have the solution, let it go.

It was first published by Diedre's Kitchen here on TH-cam 7 years ago and has been copied and tweaked by several others (with atribution) such as Keto King, Gayle Mcleod, Thunder Iron Family and others. Sue Hall should have mentioned that this was Diedre's recipe.

    I dont understand why so many recioes contain vital wheat gluten when staying away from gluten and grains is so important for healing from all the inflamation that these grains cause. It isnt just staying away from the carbs, but healing our bodies thats so important.

      @@cassieoz1702 Maybe not, but it isn't good for you. I guess I'm really sensitized to the issue as my family is riddled with inflammatory issues, migraines, arthritis, fibromyalgia and psoriasis to name a few. Obviously, we react rather badly to it. But when weave it out, we clear up most of the issues pretty quickly.

    This is Deidre,s Kitchen bread recipe, and is not as good as she said. Having fun with Vernaz has a recipe of White Bread , that blends with whatever you will eat it with. It is no excelent as NOTHING will compare as a regular bread. Also check Sindy Arenas Pan doble queso or her 90 second bread.

    Local and raw honey is pretty pointless if you're going to bake it and 'kill/denature' any beneficials in the original honey

    It looks amazing, but when I eat gluten, I blow up and gain weight. Can't have that going on. I'm very thin now whereas before I started keto I was fat. Don't want to reverse that.

    Yes, the yeast eats the honey, but we eat the yeast. So where does the honey go? Also, QUICK-RISE yeast has a LOT of carbs, I think I remember reading about 66 carbs. The trick is to use ACTIVE DRY yeast... which has zero carbs. Another trick is to use recipes that are being used by people who have lost weight on the keto diet... not from people who don't know the ins and outs of keto and facts like I've mentioned about the yeast. It really takes someone who KNOWS the rules of keto and follows them religiously. That's what I do because I follow the keto diet without making such huge mistakes. And it has paid off tremendously. I lost over 80 pounds the first year of keto (about 25 years ago before it became popular) and have not gained ANY weight back. I also lost ALL of my health issues.

      The sugar in the honey is consumed by the yeast and converted into carbon dioxide to rise the bread and a little alcohol which evaporates during baking. The difference between quick rise and active dry yeast is method of drying and the fineness of the grains, NOT the carbs. 1 packet of yeast has only about 4 grams of total carbs and 2 net carbs, no there's NOT a LOT of carbs! The trick is to not listen to people who don't know their facts about yeast as well as they think they do. Yeast is VERY keto friendly in the amounts used in baking recipes.

      The original recipe was created by Diedra’s Kitchen 4 years ago. She only has 2 bread videos, one with a kitchen aid and another with a bread machine, then is taking a break due to surgery. You may consider giving her credit because you make it sound like you invented this recipe yourself. The recipe has gone wild in the keto community. Keto King has finally given Diedra credit later in his description after tons of comments accusing him of stealing the recipe.
