OH MY GOSH!!! WINNER!! I made a big pot of chicken and mushroom soup and really wished I could have some rolls with it. I found this and set myself to making a batch since I always keep these ingredients on hand. The only thing missing was plain yogurt, so I substituted our keto friendly cottage cheese. Absolutely AMAZING!! Soup with hot buttered rolls on a winter evening.... absolute perfection.
I was so skeptical even after reading the many positive comments so I made half of the recipe which equaled 6 rolls. I am so glad I was proved wrong. I followed the changes from some of the comments below; I used sour cream because that's what I had, omitted the eggs and added 1/2 tsp of yeast because that's all I had left. Turned out great! I was very impressed and my husband who doesn't care for any keto or gluten free or alternative recipes said he liked this - to me that is a double win. This truly did look like bread on the inside. It's a little denser than regular dinner rolls but still soft and a delight to eat. I toasted it in a skillet this morning and it toasted beautifully, spread some butter and it was delicious! Try Miracle noodles for spaghetti substitute. Nothing like it. Make sure you rinse them well and and massage in 1 T of vinegar or lemon juice to completely neutralize the smell. Rinse again. Now you can also enjoy zero carb pasta.
Chaffles are delicious and the taste and texture is just like regular waffles. They can be used to make sandwiches too. Lots of chaffle recipes on Pinterest. The ones I like best are made with cream cheese, but there are recipes with several different kinds of cheese.
My sis and her bf came over and we had a cook out, we are all doing keto so I whipped this recipe up and made them bigger to substitute as hamburger buns and seriously these were so delicious. omg .. these rolls are excellent. my batch yielded 9 rolls. i weighed the 1/4 cup buttermilk which was 60g. doing the math, each roll contained 7g or 7ml of buttermilk which my keto app calculated at 0.4 net carbs per roll. they are worth it.

You can make a Keto buttermilk by adding 1 Tbs of vinegar or lemon juice to coconut milk to a 1 cup line. Mix and let sit in fridge for an hour. This will also help cut down further on the carbs and works as a great substitution. 👍🏻
Thank you so much for making this wonderful video! These are really good. Instead of making 12, I made 6 larger ones to use as hamburger buns for lunch tomorrow. I also substituted the buttermilk/yogurt with 1/3 cup of sour cream. I also added 3 tbsp of light butter. I cooked them for 20 minutes using my convection setting on my toaster oven. They are super moist. I spread the half slice I just ate with peanut butter and they were great.

I'm very thankful for the work you do. I've tried (as many others have tried) possibly two dozen bread substitute recipes. Almost always there will be 100's of comments about how "life changing" the recipe was. None have been very good - to me at least. Almost always they end up a waste. That being said, this recipe is one of the best. It's just a jazzed up fathead dough with buttermilk. You will be able to eat these without tossing them. These are not a waste of time. Plus they are really fast to make. My suggested additions : Add two teaspoons of Lorann's "Buttery sweet bread dough" emulsion to the dough. It makes them even more like wheat buns. Add a teaspoon of instant yeast to the buttermilk and let it sit for 10 minutes before you start the recipe. ( this will not make anything rise but will add yeast flavor)
I am more inclined to trust this comment as we have had such similar experiences. I have attempted so many keto breads with hundreds of comments expounding on how amazing the breads were and I was always left disappointed or wanting more. I can't wait to try this bread and I pray that it turns out well.

I have heard, haven't tried it yet but, if you add a teaspoon of yeast it gives a flavor that can satisfy a true bread lover. I'm one of those that feels my day is completed by the aroma of fresh baked bread
Following a suggestion made by @William Klein, I added the yeast to the yogurt and warmed the yogurt just a tad bit by placing the mixture atop the stove as the stove was heating up (I depended on the residual heat to warm the yogurt a bit), and it bloomed beautifully. Tiny bubbles began to form inside the yogurt. Once I baked my rolls they were extremely light! I've also noted that not allowing the rolls to get too dark on top makes them more supple (a light, golden yellow works for me).
I made my first batch tonight. I used half the recipe for rolls and the other half for a garlic cheesy bread. OH MY ~~~ so tasty !!! I now have a new fav. Thank you for posting this.
These rolls are VERY good! Using what i had, i used sour cream and added yeast. Next time ill cut back the salt, i found them salty to taste , just out of the oven. Im delighted! Using the food processor was so labor saving on my flimsy wrists! I oiled the bowl i used to melt the cheese and it came out quite easily. They formed into rolls using the dampened hands as suggested.
I make these regularly, and love them. However, a couple of weeks ago I accidentally left the eggs out. The result is a texture that is much more bread-like. I will say, though, that the first time I noticed no difference at all, save the change in texture. When I made them this week, it seemed that they had not raised quite as much. However, it could be that I handled the dough more that time, too. In any case, I prefer them without eggs because the texture with eggs seems to me to be closer to a crumbly biscuit, and I like the bready texture without the eggs. I should add that it’s important to use very fine almond flour to achieve this. I used Anthony’s.
I prefer to keep my eggs for omelets or scrambles hence not using eggs here was something I had to try. I tried this recipe without the eggs after reading your comment and it turned out great! Thank you Cynthia.

Hey Annie! I wanted to make these for Thanksgiving, but ran out of time & totally forget them. So tonight, I decided to do it, but discovered after I'd mixed it together, that I used the WHOLE brick of cream cheese. Not wanting to toss expensive ingredients, I omitted the yogurt (my choice was going to be sour cream), added more almond flour -- 1/4 - 1/2 c. Also, I put in 1 tsp baking powder, thinking it was baking soda. Recipe made 14 & I gave them 15 min + 2 min more. I'm surprised that I have rolls. It's a very forgiving recipe! Thanks!!

I am very particular about my bread and I have to say - mind blown! These are so easy to make and are delicious! Mine had a biscuit texture, which was fine but I wanted a "bun" - I sliced some open and placed them in my air fryer (inside facing up) and let them go for 5 minutes. I made these today and heated the buttermilk adding 1/2 tsp sugar and 2 tsp yeast. Believe me, the sugar got eaten up by the yeast, I wasn't real fast making this and the yeast buttermilk mixture came up and out of the cup! Great flavor, this will be a staple in my kitchen.
These rolls were perfect. A mix between a kfc biscuit and cornbread. Tender and bread like. Not like cloud bread at all! I kneeded the dough by hand because it gobbed up my food processor and was awful to clean up too. So after microwaving just add dry ingredients and kneed a little then add eggs. Great recipe. Thanks!

I just made these and its an awesome recipe! I added 1 tsp of regular yeast for flavor, not rise as I do in all my keto breads. The smell and flavor of yeast makes it more legit!
I just made these to go along with a bone in rib eye roast...... You were 100% right they are phenomenal...... I opted to use the Greek yogurt instead of the buttermilk..... I will point out that 1 recipe I have calls for buttermilk but it specifically Said to put lemon juice in almond milk or your nut milk of choice... And let it set for 5 minutes to make your own keto version of buttermilk... I just wanted to comment about how amazing these are we are now getting ready to eat lol had to try one of those rolls.

Just made this and it’s spectacular. Had no mozzarella so I used Gouda and Havarti cheese, along with the cream cheese and I also used sour cream. It was very wet and sticky so I added a little more coconut flour. I tried using oil at first but switched to the water and it worked better as the dough was still very sticky. It was easy to make smooth round balls and rinsing hands’s after each ball. 17 mins 12 buns buttered as soon as the hit cooling rack. Thank you so much for this video best Keto bread I’ve had yet.

I used Greek jogurt and dry buttermilk with my dry ingredients and follow your recipe it smell so good, that is what my husband said. He went into the refrigerator to get his homemade biscuits and got bad, so he took 2 keto rolls and said quite good. 👍👍👍👍👏👏👏👏💓 it passed the non keto eater.
So i figured out a seeded wheat like dinner roll that LITERALLY has the texture of bread. You wouldn’t even know there’s cheese in it. I used your recipe but replaced a 1/4 of the Almond Flour with Natural Almond Flour and added 2 TBS of powdered Swerve and 2 TSP of Xantham Gum. I brushed the tops with butter and did a heavy handed shake of Everything Spice. Soooo good.
They are real BREAD. No egg flavor, no gluten, no oatmeal fiber, they toast well THANK YOU THANK YOU THANK YOU. I used home made Greek yoghurt and they work great.

When you said that mozzarela replace gluten chewiness I had eureka moment, In old days when I practised beauty therapy we used for hot masks before removing all the black heads , finely blended linseeds ( flaxseeds )mixed with boiling water and mixed till it was that consistency, the more you mixed the more elastic it becomes. I just used it plus yogurt . The smell was amazing and they taste exactly like brown rolls, so filling, plus it is sooo good for your gut, and everything..try..

These were so delicious!!! Mine came out quite dense though... if you’ve ever had, say... a popeye’s biscuit? That’s basically what these rolls felt like to me lol. Same super dense, heavy, filling texture. Very heavy which is not terrible but I wanted more of an airy bun... i am considering splitting the egg yolks and whites, beating the whites until fluffy before combining with the dough, and also adding some yeast with a dash of honey to make these guys rise and become more like a fluffy bread? So I replace the almond flour with macadamia nut flour and it is perfect for me. I have been on keto for 2 months. I have been trying to find a bread recipe that I could enjoy. This was it. I liked the original but I knew that the almond taste was not doing it for me. Once I switched them, this is now my holy grail. Finally, I have done rosted garlic and brie, grilled cheese, etc... I've tried (as many others have tried) possibly two dozen bread substitute recipes. Almost always there will be 100's of comments about how "life changing" the recipe was. None have been very good - to me at least. Almost always they end up a waste. That being said, this recipe is one of the best. It's just a jazzed up fathead dough with buttermilk. You will be able to eat these without tossing them. These are not a waste of time. Plus they are really fast to make.
My suggested additions : Add two teaspoons of Lorann's "Buttery sweet bread dough" emulsion to the dough. It makes them even more like wheat buns. Add a teaspoon of instant yeast to the buttermilk and let it sit for 10 minutes before you start the recipe. ( this will not make anything rise but will add yeast flavor)

I am more inclined to trust this comment as we have had such similar experiences. I have attempted so many keto breads with hundreds of comments expounding on how amazing the breads were and I was always left disappointed or wanting more. I can't wait to try this bread and I pray that it turns out well.

@@MsDropofrain I did! They rose quite a bit. Absolutely delicious out of the oven (almost akin to biscuits) but the flavour of the rolls get better as the days go by.

I have heard, haven't tried it yet but, if you add a teaspoon of yeast it gives a flavor that can satisfy a true bread lover.

Following a suggestion made by @William Klein, I added the yeast to the yogurt and warmed the yogurt just a tad bit by placing the mixture atop the stove as the stove was heating up (I depended on the residual heat to warm the yogurt a bit), and it bloomed beautifully. Tiny bubbles began to form inside the yogurt. Once I baked my rolls they were extremely light! I've also noted that not allowing the rolls to get too dark on top makes them more supple (a light, golden yellow works for me).

These rolls are VERY good! Using what i had, i used sour cream and added yeast. Next time ill cut back the salt, i found them salty to taste , just out of the oven. Im delighted!
Using the food processor was so labor saving on my flimsy wrists! I oiled the bowl i used to melt the cheese and it came out quite easily.
They formed into rolls using the dampened hands as suggested.
I make these regularly, and love them. However, a couple of weeks ago I accidentally left the eggs out. The result is a texture that is much more bread-like. I will say, though, that the first time I noticed no difference at all, save the change in texture. When I made them this week, it seemed that they had not raised quite as much. However, it could be that I handled the dough more that time, too. In any case, I prefer them without eggs because the texture with eggs seems to me to be closer to a crumbly biscuit, and I like the bready texture without the eggs. I should add that it’s important to use very fine almond flour to achieve this. I used Anthony’s.

Hey Annie! I wanted to make these for Thanksgiving, but ran out of time & totally forget them. So tonight, I decided to do it, but discovered after I'd mixed it together, that I used the WHOLE brick of cream cheese. Not wanting to toss expensive ingredients, I omitted the yogurt (my choice was going to be sour cream), added more almond flour -- 1/4 - 1/2 c. Also, I put in 1 tsp baking powder, thinking it was baking soda. Recipe made 14 & I gave them 15 min + 2 min more. I'm surprised that I have rolls. It's a very forgiving recipe! Thanks!!

I am very particular about my bread and I have to say - mind blown! These are so easy to make and are delicious! Mine had a biscuit texture, which was fine but I wanted a "bun" - I sliced some open and placed them in my air fryer (inside facing up) and let them go for 5 minutes. I ended up with the perfect slider bun for my burger. Thank you!

I made these today and heated the buttermilk adding 1/2 tsp sugar and 2 tsp yeast. Believe me, the sugar got eaten up by the yeast, I wasn't real fast making this and the yeast buttermilk mixture came up and out of the cup! Great flavor, this will be a staple in my kitchen.

I would leave in the baking soda, it aids in browning. The rolls may be colorless without it.

These rolls were perfect. A mix between a kfc biscuit and cornbread. Tender and bread like. Not like cloud bread at all! I kneeded the dough by hand because it gobbed up my food processor and was awful to clean up too. So after microwaving just add dry ingredients and kneed a little then add eggs. Great recipe. Thanks!

I just made these and its an awesome recipe! I added 1 tsp of regular yeast for flavor, not rise as I do in all my keto breads. The smell and flavor of yeast makes it more legit!
I just made these to go along with a bone in rib eye roast...... You were 100% right they are phenomenal...... I opted to use the Greek yogurt instead of the buttermilk..... I will point out that 1 recipe I have calls for buttermilk but it specifically Said to put lemon juice in almond milk or your nut milk of choice... And let it set for 5 minutes to make your own keto version of buttermilk... I just wanted to comment about how amazing these are we are now getting ready to eat lol had to try one of those rolls.

Just made this and it’s spectacular. Had no mozzarella so I used Gouda and Havarti cheese, along with the cream cheese and I also used sour cream. It was very wet and sticky so I added a little more coconut flour. I tried using oil at first but switched to the water and it worked better as the dough was still very sticky. It was easy to make smooth round balls and rinsing hands’s after each ball. 17 mins 12 buns buttered as soon as the hit cooling rack. Thank you so much for this video best Keto bread I’ve had yet.

I used Greek jogurt and dry buttermilk with my dry ingredients and follow your recipe it smell so good, that is what my husband said. He went into the refrigerator to get his homemade biscuits and got bad, so he took 2 keto rolls and said quite good. 👍👍👍👍👏👏👏👏💓 it passed the non keto eater.

So i figured out a seeded wheat like dinner roll that LITERALLY has the texture of bread. You wouldn’t even know there’s cheese in it. I used your recipe but replaced a 1/4 of the Almond Flour with Natural Almond Flour and added 2 TBS of powdered Swerve and 2 TSP of Xantham Gum. I brushed the tops with butter and did a heavy handed shake of Everything Spice. Soooo good.

When you said that mozzarela replace gluten chewiness I had eureka moment, In old days when I practised beauty therapy we used for hot masks before removing all the black heads , finely blended linseeds ( flaxseeds )mixed with boiling water and mixed till it was that consistency, the more you mixed the more elastic it becomes. I just used it plus yogurt . The smell was amazing and they taste exactly like brown rolls, so filling, plus it is sooo good for your gut, and everything..try..

These were so delicious!!! Mine came out quite dense though... if you’ve ever had, say... a popeye’s biscuit? That’s basically what these rolls felt like to me lol. Same super dense, heavy, filling texture. Very heavy which is not terrible but I wanted more of an airy bun... i am considering splitting the egg yolks and whites, beating the whites until fluffy before combining with the dough, and also adding some yeast with a dash of honey to make these guys rise and become more like a fluffy bread? Has anyone tried something like this before 👀 guess I’m gonna have to experiment!
Almond flour is very dense
Anything made with it will disappoint
So I replace the almond flour with macadamia nut flour and it is perfect for me. I have been on keto for 2 months. I have been trying to find a bread recipe that I could enjoy. This was it. I liked the original but I knew that the almond taste was not doing it for me. Once I switched them, this is now my holy grail. Finally, I have done rosted garlic and brie, grilled cheese, etc... Just perfect. Thank you, thank you, thank you for this recipe.

So I make it my own. I pulse up some of the nuts in a food processor. If you leave it on regular speed, it turns to butter quickly. Quick question, how do I make this recipe into a loaf?
