    Please note that;
    1. Yeast is a living organism and almost all recipes call for some sugar to feed the yeast. But this is actually not necessary as the yeast can feed on any bit of sugar from the ingredients of the bread. I have experimented with and without sugar and the rise in both versions are the same. A pinch of sugar will make the yeast bubble up, but this is just proving that the yeast is still active and good for usage. Sugar does not help to activate the yeast. But if you feel more comfortable to add sugar, feel free to do so.
    2. Salt does not kill the yeast. If you put salt directly over the yeast and leave them untouched for few minutes, then it will really kill the yeast. But if you mix them immediately, there's no damage. After many experiments, I found that dissolving the salt and yeast in the warm water is more effective. Due to the proportional concentration, there's no damage to the yeast. I learnt this method while doing lots of research from the internet hence, I did not invent it. But if you feel more comfortable to add the salt and yeast to the dry ingredients, feel free to do so.
    3. The temperature of water at 122 to 132 F or 50 to 56 C DOES NOT kill the yeast. Yeast thrives on a very warm and moist environment. This very warm water will wake the yeast up from their dormant state and get them started.

    NUTRITION INFO PER SERVING
    Total carb = 5.5 g
    Dietary fiber = 3.7 g
    Net carb = 1.8 g
    Calories = 99
    Total fat = 7.7 g
    Protein = 2.9 g
    DRY INGREDIENTS
    Almond flour = 300 g (2 1/2 cups)
    Coconut flour = 60 g (1/2 cup)
    Golden flaxseed (finely ground) = 40 g (1/3 cup)
    Whole Psyllium husks = 45 g (5 tbsp) (Note: The psyllium husks must be ground until half its original volume then weigh it)
    Baking Powder = 14 g (1 tbsp)
    Instant Yeast = 12 g (3 tsp)
    Salt = 2 tsp
    WET INGREDIENTS
    Apple cider vinegar = 45 ml (3 tbsp)
    Coconut or olive oil = 45 ml (3 tbsp)
    Very warm water = 480 ml (2 cups) (temperature at 122 to 132 F or 50 to 56 C)
    DIRECTIONS
    1. Preheat the oven at 212 F or 100 C and leave the heat on during the entire proofing process.
    2. In a large bowl, whisk the almond flour, coconut flour, flaxseed, psyllium husk and baking powder until well combined.
    3. In a small bowl, combine salt, yeast, warm water and stir until the salt is dissolved.
    4. Add the apple cider vinegar, coconut oil and yeast mixture into the dry ingredients and whisk until the yeast is well combined and a dough is formed.
    5. Shape the dough into a loaf and place into a loaf pan measuring 7x3.5x3" or any suitable pan lined with parchment paper. For Boule, mold the dough into a round shape. Sprinkle with 1 to 2 tsp arrowroot powder (optional) and make 3 cuts on the top of the dough.
    6. Cover the dough loosely with a dry towel. Sprinkle some coconut flour on the top of dough to prevent it from sticking to the towel.
    7. Pour sufficient boiling water into a baking dish that fits the oven.
    8. Place the baking dish with boiling water at the bottom of the oven and the dough above it. Close the oven door and let it proof for 1 hour. Do not open the oven door during the proofing process.
    9. After 1 hour, remove the towel and the baking dish with water. Turn on the oven heat at 350F or 180C to start the baking. It's not necessary to pre heat the oven. If the top is browning too fast, cover with foil.
    10. After baking for 1 hour, test with a wooden skewer. The top of bread should be hard and crusty. Internal temperature should be around 205 to 210F or 96 to 98C. Turn off the oven, remove the bread from the pan and let it sit on a sheet pan with the parchment paper inside the oven for about 40 to 60 mins. The residual heat will ensure the bread is properly cooked and the crumbs are drier.

    I'm a newly diagnosed diabetic who has to manage carbs very closely. I have made this bread twice and I must say it is amazing. I get zero sugar spikes from eating this bread. Last night I made garlic toast vegan pepperoni pizzas with it and they were amazing. Thank you for making eating bread a possibility again.

      Is It necessary to use a mixer? Also, The smallest pan I have is a Pullman Pan measuring 8 by 5. Will that work?

    Notice how she cuts her parchment paper to FIT !! Two pieces of parchment paper, one cut to the width and the other to the length of the pan is the way I cut mine too. That means there is no scrunched ends to deal with and the bread doesn't come out looking ragged or scrunched on the ends. Good job, lowcarbrecipeideas!!

    Thank you soooo much for this recipe!!! It is the best low carb bread that I have ever tried since I started keto, almost four years ago. And a special thanks for showing both shapes at the same time. I realized that the problem with having a lot of air on the top and a denser texture on the bottom could be solved by making the “boule” shape and my bread came out PERFECT! So, thanks again for easy and understandable recipes!!! You are great!

    Now this is an egoless and eggless awesome gluten grain free recipe. Great to watch - no incessant talking - awesome. Yeast info made me research gluten free yeast - as not all gluten free recipes have good gut yeast properties - especially in the case of candida - fermentation a no no - I am sure freezes well.

      And no..its not overprice. Its just regular price ( albeit slightly more expensive ). Its really not outrageusly expensive, and quite yummy too.

      @@danitza.riquelme Hi Danitza! I think I'm a little bit used to the wet texture in keto breads, but what I like to do is to toast the slice of bread with butter before eating it, this way it becomes more crunchy

My family (not keto) is really picky and im trying to make they can eat keto breads instead of regular breads. Thats why I need something similar to the regular loaf :'(

      @@danitza.riquelme hmmm it's really hard for people that are not used to keto breads. Have you tried the recipe in Diet Doctor's website? Search for "diet doctor keto buns", they are really good too. I gave to some people that are not keto and they enjoyed it!

      lowcarbrecipeideas I purchased new baking powder and set the oven temp to 220 and last time I didn’t use the 2 cups hot water and just realized that when I was doing the recipe this time. I only use maybe a cup. Being in a hurry doesn’t pay. But I’ll have to say it’s all really pretty easy if you follow the instructions totally. Thank you 😊

      ​​@UTAH100 For me, it's that most recipes use 8 per loaf, which is a lot of eggs (and money!) for a week's worth of bread. Also, the bread often smells and tastes "eggy" and starts to liquify and ferment after 24 hours. 🇦🇺😬

      The only issue is that does not rise as much as you show. I made it 3 x.still was unable to get it rise. Out or inside the oven.

      Jay_G normal well Euro is metric. An American cup measurement of say flour isn’t as accurate as that flour weighed out in grams. You would zero the scale with the bowl on top, then measure out the first dry ingredient, then zero the scale again and add the second dry ingredient and so on. This also can be done with the wet ingredients as well. I noticed some Keto recipes offer both methods on there pages which is helpful. I hope I answered your question and didn’t give you too much info. 🙏❤️🔥✝️

      Not true; every country in the entire world is metric except for Liberia, Myanmar, and the US. (That's 3 who aren't out of 195.) Even so, Myanmar is slowly shifting from Burmese measurements to metrics.
      (In the UK we do know how to use both metrics and imperials and I'd be willing to bet we're better than most at converting them on the fly, but metrics are what's official for the most part. The idea of metrics being used only in Europe is a myth that's been perpetuated by easily-offended old people who don't know the 10 times table. What is funny though is that when we weigh people, we still informally use a stone and lbs system, where 14lbs make a stone, something I don't think the US actually uses, so somebody who weighs 145lbs would be "10 stone and 5." Also our roads are still in miles and we drive on the wrong side of them. It's weird.)

      Salt will only kill the yeast when you put them on top of each other and leave them untouched for few minutes. If you mix them immediately there's no damage. If salt is dissolved in water with the yeast theres also no damage due to proportional concentration.

    This is really great. I followed one keto bread recipe which asked me.to add 8 eggs to 2 cups of almond flour and although I used 6 itvwas difficult to eat it because it was too eggy.

      You can buy diabetic jams and marmalade. I find them very good . STUTE is one make , not very expensive. You can get it on Amazon and British supermarkets. K

    I tried this recipe last night and it turn outed well. The density is a bit like Dr Allison bread. And it looks good too! I made three mistakes though: not further grind the Psyllium to a finer powder, so the lower third of the loaf was still a bit moist. Secondly I used too big a pan. Also I used whole flaxseeds grinded to some level but not fine enough I guess. Like you say it is working within tight margins 😅. Without my mistakes it would have been perfect. This morning I enjoyed it for breakfast. It has a nice crispy crust and a good taste of its own. Thanks for all your work, it is by far the best recipe for low carb bread cravers like me and it avoids a ‘cake’ experience other recipes have. Keep it up!

      @@bijoudeaux1 Psyllium husk is an important ingredient as it acts as the gluten by holding everything together and provides elasticity to shape the dough. Without it, the bread will be crumbly with cake-like texture

    Thank you for the recipe. I tried it and we all love it!!! I have tried others on here but none was as good as this one!!
    Yes the measurements are different from the grams and cups but I tried both and they came out the same.
    I do not recommend to use cups and grams together it will not come out right. If you follow the grams then stick
    with grams and if you follow the cups then stick to all the cups. I love this recipe and I appreciate you for sharing.
    WE CAN EAT BREAD AGAIN!!!

      @@klingerp Did you use double acting baking powder? If you did you need to reduce quantity by half otherwise it will rise rapidly and collapse later with inside uncooked. Also what psyllium husk are you using?

      where I live I’ve never seen any baking powder telling if it’s single or double acting...
      I just read the ingredients now and in the Royal brand I see: corn starch, baking soda, monocalcium phosphat and sodium acid pyrophosphate. The other existing brand has: corn starch, monocalcium phosphat and baking soda...
      Here in Ecuador I can only get whole phsylium husk, but I did use an electrical coffee grinder to powder it super fine, and also my flaxseed is powder Luke

The thumbnail picture is exactly what you are experiencing.

    I can't believe it's gluten- free ! The really good looking keto breads here on YT are made with vital wheat gluten and I'm sad cause I think it's better to avoid it , so happy I found this recipe !

    Thank you for clearing up the salt and yeast part. I don’t put sugar in my keto bread either and it rises fine with just the yeast. I’m just wondering if you have a keto version to that marmalade? I so miss that on keto.

      just mix some berries with 1 tbsp of chia seeds, alcohol sugars and just a bit of water and wait till it has thickened. Done!
