I remember as a child...my mom's invited her friend to dinner...along with the meal mom served collared greens & corn bread...her friend is from the south (Georgia)...we were always taught to have respect for others on how one eat...this lady used her hands to mix her greens & corn bread together...it was surprising too see her do this... it's something that stayed with me throughout my growing years... that's exactly how I want to eat your greens and corn bread...lol!🙏🏽👏🏽🙌🏽😆😋💕
Made this whole menu yesterday - haven't had collard greens since we lived in macon ga and had never made them at home from fresh greens! Everything was great , my husband loved it. Used smoked turkey wings because that was what I could get. Thanks for the great step by step recipes! Gonna do more soul food Sundays this winter :-) thank you!

I love 7up cake, never made it from scratch, love collards, in my 70s, but never cooked them down like u do, always had pot lickker. But ur way looks delicious. Charlie, I'm old fashioned, w/fresh collard greens, I was taught to wash the green leaves whole, so you see any dirt & bugs, w/kosher salt & apple cider vinegar, as many times as it takes until the water comes out clear. Otherwise, you're good to go. You must get a commission pushing Tony C. Seasonings, I'm surprised you didn't put it in the rice & corn bread.😵

The tl;dr is: this was *good*. For Saturday night dinner, made the collard greens with Charlie's red beans, rice, and cornbread. (I had to substitute ham hocks for the neck bones as butcher didn't stock them). It all came together nicely, and man, was it good! Thanks so much for sharing, Charlie!

My grandmama never let us use a knife we had to pull the leaves off and then clean them since we were kids. This brings back memories...she has dementia now so she doesn't cook anymore but thanks for this trip down memory lane

Started cooking these collard greens that I got from my CSA this morning. Got the cast iron skillet cornbread in the oven. I do a lot of cooking in the morning because I no longer have the energy at night. Had planned on having something else for breakfast BUT those collards smelled soooo good as did the cornbread. Couldn't help it had collards and cornbread for a delicious breakfast!!!

I've always sweat my onions before I add any other ingredients to my collard pot. But I don't think I'm gonna do that next time. I'm gonna try it this way! (And yes you HAVE to add a little sugar to the cornbread 100 ;)

My grandmama never let us use a knife we had to pull the leaves off and then clean them since we were kids. This brings back memories...she has dementia now so she doesn't cook anymore but thanks for this trip down memory lane

My Nanni always greased her pan with bacon grease and even added some to the cornbread batter. She sometimes adds cracklings too. Looks delicious, thank you for sharing :)

Started cooking these collard greens that I got from my CSA this morning. Got the cast iron skillet cornbread in the oven. I do a lot of cooking in the morning because I no longer have the energy at night. Had planned on having something else for breakfast BUT those collards smelled soooo good as did the cornbread. Couldn't help it had collards and cornbread for a delicious breakfast!!!

All you can do is try your best to get to that flavor than if not try something new that can come as close to that particular flavor.
