      @@MsSexyDiva4Lyfe IKR, He will be the best in Home economics class. Even though they do not do that in black schools anymore, He would still be the best. The first time we cause a fire or make something explode in the chemistry lab, they take all that education away from us, claiming its a hazard. They still try to teach us using just books, but hands on is the best way to understand it. Their children can blow up the whole school but their lab and cooking class is always rebuilt and used in their schools.

    YOU have given the best advice on making roux I have ever heard of! Turning the stove off and continuing to stir and cook it ensures that is cooked to the right color without burning it.
    Man, you are an excellent cook!!

    I made this meal today... I put way to much salt in my tater salad so I'll add some eggs and taters to it.... everything else was PERFECT....Charlie this meal was absolutely delicious and much easier than the way I use to smother chicken....this is my go to recipe from now on...thank

    I used chicken legs I cooked on the grill. I followed your recipe & cooked it for about an hour until the meat fell off the bones. That was the Best chicken & gravy I ever had without using chicken stock or bouillon cubes. Thank You for another winning recipe . You Da Chef, Charlie !

    If u cold shock your eggs right after u take them out of the boiling water by rinsing it with cold water for about 2 minutes the shell peels right off

      As soon as I take them off the stove, I shock them by running cold water into the pot then while the cold water is running tap the egg and peel under the cold water and the shell comes off in two parts.

    Louisiana people can work that roux! I have seen you make rice before, but you showed me a different way to make rice, and the peas! We grew up on fresh or frozen peas. I enjoy learning new things and techniques. That is a meal made for a Queen, me! Thanks Charlie

    Charlie, you are awesome! I love your videos. I must admit I am used to making my southern potato salad with my diced potatoes, relish, miracle whip and so forth, so when I saw your potato salad I was a bit taken back, but I decided to tried it your way and now I am a believer. When I put it together I used the Toni's seasonings and some Lawry's seasoning salt and baby when i tell you it was the bomb I kid you not, it turned out better then I expected. Now I am torn on which way I will be making potato salad moving forward..lol. I would love to see you do a nice pot roast or beef and noodle dish. God Bless and keep making magic in the kitchen.

    My husbands grandmother was the worst cook ever, she RIP now. He and I never liked going to her home because she would always try to make us eat her food. She is the type to use people like we use dogs and cats, to get ride of left overs so we wont be throwing food away. One day I had to show her that she had mildew on the food she was trying to make us eat. But one day she had freshly cooked this meal. I gave her so much praise for it. She was so happy to hear that she can cook something we liked. She would always call us when she cooked this meal. I would ask her to teach me but she never did. I got the secret now. lol In fact, when I first seen this video two years ago, I tried it instantly. My family loves it. Thank you again.

    I'm glad I watched this. I just finished cooking smothered chicken. never did before. I didn't want to fry. so I seared it and added to my pot with chicken broth onions and bell peppers and made my gravy from the drippings of the seared chicken. whole time in thinking there's multiple ways to make smothered chicken it doesn't always have to be fried I came here just to see lol. and I was right. 😍 thank you !

    Charlie you did it again! I cooked the smothered chicken and gravy and the peas, white rice. I just want to say thank you for being honest about your recipes unlike some of the people who cook on TH-cam but it does not come out right. Will you do the same for smothered pork chops? Can you also, do dressing?

Im not going to post anything on here that doesn't come out or taste right. Gotta make sure it near perfect and if people need help they email me and I help them with whatever it is they need help with. Yes as far as Smothered Pork Chops goes yes you do the same thing but I may release a video on how to make that. Yes I have
      a recipe for dressing but the bad news is that right now im having serious computer issues so hopefully after Thanksgiving i can release videos again. Sorry!

    Outstanding Charlie! Sitting down now eating my delicious smothered chicken drumsticks, gravy, rice, sweet peas and potato salad. My meal came out perfect. Even had me banging the table! Excellent instructions Charlie! This is my second recipe I tried from you. The first was Strawberry Pound Cake. Sharing the site with two friends.

    Hey Charlie. I have never put onion or sugar in my green peas. I always use salt, pepper, butter of course, and a teaspoon of dill weed. All yall gonna have to try that cause its really good and brings the flavor up a notch. But the sugar is interesting too. I will try that the next time I cook peas. Thanks for a "new to me" idea!

    I enjoy watching your videos. Fyi when u clean your chicken legs. scrap the yellow layer off the legs. Let them soak with vinegar and salt it will come off easily

    Hi Charlie I always watch your channel your food looks amazing your gravy looks a lot like mine I always add a chicken broth or beef broth instead of water to my gravy..it gives it a lot more flavor

    I love the entire menu...except for the canned peas. i grew up eating canned peas.....but i prefer frozen peas.....i 've made frozen peas, the way you did the canned variety..and they work

      Thanks Judith. Yes Canned Peas works for me. Frozen peas ive tried them, yes they are good but they are mainly meant to be seasoned. Canned peas are kind of sweet and I like the flavor better when I cook them and I use no salt.
