Charlie, I have to tell you, I choked when you said you put 2 tsp of cayenne pepper in your stew ! I can’t eat spicy, but a pinch would have been a lot for me. Then when you said the difference between yours and your grandmother’s was that hers was spicy, I couldn’t even imagine that. But, besides the red pepper, that stew looks delicious ! After watching a lot of your recipes, I think Tony and Paul owe you a free, lifetime supply of their seasonings ! You have probably done more to promote their products than anybody !
Hey there! Yes, the amount of heat added to the recipe should be adjusted to suite your taste. That's totally understandable. My grandmother made some spicy stew that's for sure. Really good clear instructions, Charlie. Nice chunky vegetables. I make up a batch of dark roux, then pour some into silicone cupcake molds to freeze for later use. You can freeze some of that delicious stew, too. Very good video!
Thank you! :) Wait you freeze your Roux??? I just make mines, put it in a glass jar then I place it in a room temperature place! :) As of right now I can't freeze my stew. I'm a bit under the weather so I'm eating it all lol I just may store some in the freezer! It's crazy that I created this recipe while I was sick lol.

+GizmoBee1702 Me either. I like to take my breaks inbetween lol oh okay. I just store mine in my dry food cabinet. Yes I have a dark roux because of my pot and pan set but once I reached 15 minutes it was very near the dark brown stage. I turned my fire off and I still had to stir for an additional 5 minutes so it is more like 20 minutes lol
I love this recipe, but I made the roux in my power pressure cooker xl after searing the meat inside it, then jut added all the ingrediants and did the stew setting for 30 minutes and OMG so tasty good.. thank you very much

I don't have the greatest results with meatloaf but the one I like the best is just mixing a box of Stove Top Stuffing into my meat with a few other ingredients and It always has the best flavor! But I'd love to see you making a great southern meatloaf!

Really good Charlie, and this comes from a Nawlins native like you. I like my beef stew a little thicker though, using 1/4 to 1/3 cup flour for each lb of meat. So if I cut up a 3lb roast, I'd use 3/4 to a cup of flour (in equal parts oil, of course). Also, I prefer red potatoes in my stew - new potatoes if they are in season. I started using that Better Than Bullion too, cause you know, it's not as salty as bullion and richer than canned - and a lot easier than boiling bones and reducing stock. The only thing I do a little different is, I brown my meat a little more, browning about 1/2 the meat at a time, so as not to crowd the pan. Then I sweat down my trinity in the same pan I browned off the beef and deglaze it with a little red wine or beef broth if I'm out of wine. The second date with my now wife of 23 years, she made me her Texas inspired version of beef stew. It wasn't bad, but lacked the familiar NOLA seasonings (though she did add the bay leaf, to her credit). When it was just about done I said, "It looks great, where's the rice?" She said apologetically, "I didn't make any rice." I replied, "Don't worry about forgetting the rice (being kind). We've got time to make some!" I don't care how many potatoes you put in the stew, I gotta have it over rice!

Really good clear instructions, Charlie. Nice chunky vegetables. I make up a batch of dark roux, then pour some into silicone cupcake molds to freeze for later use. You can freeze some of that delicious stew, too. Very good video!
Thank you! :) Wait you freeze your Roux??? I just make mines, put it in a glass jar then I place it in a room temperature place! :) As of right now I can't freeze my stew. I'm a bit under the weather so I'm eating it all lol I just may store some in the freezer! It's crazy that I created this recipe while I was sick lol.

+GizmoBee1702 Me either. I like to take my breaks inbetween lol oh okay. I just store mine in my dry food cabinet. Yes I have a dark roux because of my pot and pan set but once I reached 15 minutes it was very near the dark brown stage. I turned my fire off and I still had to stir for an additional 5 minutes so it is more like 20 minutes lol
I love this recipe, but I made the roux in my power pressure cooker xl after searing the meat inside it, then jut added all the ingrediants and did the stew setting for 30 minutes and OMG so tasty good.. thank you very much

I don't have the greatest results with meatloaf but the one I like the best is just mixing a box of Stove Top Stuffing into my meat with a few other ingredients and It always has the best flavor! Really good Charlie, and this comes from a Nawlins native like you. I like my beef stew a little thicker though, using 1/4 to 1/3 cup flour for each lb of meat. So if I cut up a 3lb roast, I'd use 3/4 to a cup of flour (in equal parts oil, of course). Also, I prefer red potatoes in my stew - new potatoes if they are in season. I started using that Better Than Bullion too, cause you know, it's not as salty as bullion and richer than canned - and a lot easier than boiling bones and reducing stock.
The only thing I do a little different is, I brown my meat a little more, browning about 1/2 the meat at a time, so as not to crowd the pan. Then I sweat down my trinity in the same pan I browned off the beef and deglaze it with a little red wine or beef broth if I'm out of wine.
The second date with my now wife of 23 years, she made me her Texas inspired version of beef stew. It wasn't bad, but lacked the familiar NOLA seasonings (though she did add the bay leaf, to her credit). When it was just about done I said, "It looks great, where's the rice?" She said apologetically, "I didn't make any rice." I replied, "Don't worry about forgetting the rice (being kind). We've got time to make some!" I don't care how many potatoes you put in the stew, I gotta have it over rice!
