I’m with you on living alone and have recently started freezing my left overs but never have the greens. Some were getting wasted. It’s good to hear I can freeze them also and still be good. Guess I thought they would never hold up after being cooked. Thanks for the tip. 😊
Your recipe is Spot on ! A pressure cooker will cook those greens in about 18 minutes @ 10 lbs. pressure. I also save & chop all the stems. Michigan guy here that loves collards & grows them in my garden every year. They also do very well w/ Swiss Chard.
My family roots are from Southern Maryland in Charles County in LaPlata and my grandmother greens had Collards, Kale, Turnip, Rape and Mustard greens with neck bones and ham hocks 🔥🔥 and my family either used vinegar or Tabasco sauce

Lookin good, AB. I always add a lil apple cider vinegar to my greens and it gives it the best taste. Also, if anyone ever encounter tough greens or they take too long to cook, lightly sprinkle a tad bit of baking soda in the greens. That fixes it. Your greens will be so nice and tender. Don’t sprinkle too much though or you will have spinach greens.

I actually make mine similarly but, I use smoked turkey thighs. I pressure cook them and love the thighs because they are mostly meat! I cut it up in big chunks and chop up onions and minced garlic and have used all of the different chicken bouillons you showed. I use Tony Chacheras seasoning but I'm going to try adding the bacon fat and andouille sausage! I'm sure it will be fire! As far as the greens themselves, I usually mix my collards with either turnip or mustard greens.

Collards are so good, but I do love them turnip greens too. I'm the only one in my family that likes it spicy, so I usually have my own personal bottle of hot sauce to add to my bowl.

I don't blame you using paper plates when possible. To make cleanup less burdensome I also "clean as I go" with having my hot dishwater ready, soon as my greens are washed, slide all utensils used for cooking in dishwater, and while food is actually cooking all utensils having soaked in hot water, easier to clean and no pile up of dirty dishes in 1 swoop! Love collards, and thanks to you I learned how to actually cook them svrl yrs. ago. Never tried it w/ andouille sausage before. Hmm. Thanks, AB for all your videos!

Like you, collards are my fave, tho I do like to sometimes combine with other greens. My all-time meat of choice is smoked ribtips. There's nothing like them. But they are nearly impossible to find. I'm a Chicago Transplant to central Texas, and I can tell you beef reigns Supreme here. You can get bbq'd brisket all day long, but pork ribs are scarecrow and ribtips do not exist down here. 😭😭
I agree 😮with you that produce in the supermarket look like bad stuff! I broke my whole greens ,my okra , tomatoes blackberries ext.. In my backyard with raised garden beds! You would think something is going on with our food. City girl needs Country living 🤣

I make bacon braised collard greens, and let them cook for 6 hours. Can't wait to make this too!!

@@joanargilan9381 fry the bacon and add garlic and onions, S & P, chicken stock, a little sugar. Cook slow for 6 hours. It melts in your mouth!
