  • The onion soup is a dish whose origin is disputed between France and Italy. In this episode, the first of a mini-series dedicated to onions, we have been to Gaetano Trovato's' 2 stars Michelin restaurant in the province of Siena. The chef illustrates the original recipe of Carabaccia, the traditional peasant soup from Tuscany, and then rethinks the dish in a contemporary key starting from one of his greatest passions, stuffed pasta.

    Molti piatti provenienti da tutto il mondo, provenivano da tempi più magri, ma ora sono dei classici. Con gli ingredienti di base si può fare qualcosa di straordinario. Saluti!

    So the pecorino used is one without animal rennet? I’ll be surprised if that’s true considering how often Italian cheese is made with animal rennet, which would make it NOT vegetarian

    Per favore non parlate di sostenibilità perché tenete le cipolle 15 ore nel forno per ricavarci una polverina. Se conosceste le basi della termodinamica sapreste che sarebbe meglio buttarle piuttosto che utilizzarle in questo modo, sarebbe una scelta sicuramente più green.
    Gli stellati e la sostenibilità sono due mondi separati, che non si possono incontrare, alla faccia della cazzata della stella green della guida che è buona giusto per un’operazione di marketing e greenwashing.
    I due piatti rimangono incredibili, ma basta cazzate.

      Totalmente d'accordo, fa ridere parlare di sostenibilità per aver riutilizzato gli scarti di due ingredienti quando si fanno bollire litri di acqua per cuocere tre ravioli

    You know they usually don't cut the onion with the Berkel meat slicer. It was made bc they were paid by Berkel. But hey that's okay. They serve good food at, I hope, reasonable prices. Everything helps.

      They make them from the bottom of wine bottles. Then they polish it with Pecorino Romano.

      He explains it a bit. very thin slices of bread (salt-less) cupped into small discs, arranged on a baking tray. Pecorino cheese (aged), greaseproof paper sheet and a weight on top (presumably another tray) then mildly toasted in the oven

    I admire the art creating the new version of the soup, and i believe it is extremely delicious, however i felt it is too much for it. it is a onion soup done new way with extreme time investment of a person..and i do enjoy fine dining, i felt it is not right to overdo it this way.

    May I make a suggestion? It would be very helpful if the subtitles could be put up in a more prominent colour for people who are not fluent in Italian. I have found the sub-titles rather difficult to read because they are so faint. Wouldn't they be easier to read if they were in red, or some other colour which would bring the sub-titles to prominence. Of course, this is only a suggestion. With many thanks.

      @@fulvioscognamiglio1903 Actually, Fulvio, I cannot change the colour of the subtotles. I have just tried to do that, but I am not given that option. I work on a Mac. Maybe it is different on a PC.

    At some point, you can't call the gourmet version soup. It's so far detached to what the definition of soup is.

    Lo chef, persona carina e preparata mi perdonera', ma quanto è brutto quel ristorante. Quanto è più caldo e avvolgente mangiare in un vecchio locale del centro storico? Manca la pietra, il calore. Poi chapeau per la tecnica culinaria.
