    Complex and still sober, at least in the presentation. What amazes me it's the absence of fire, burn, smoke. Peated whiskey, paprika and speck give all the smoked flavor it needs. And, more than the smoke, it seems to deal with the balance, the pungent, the acid, the fat. A great barbeque, not just a smoky mess.

    What a lovely dish! I mean, pork with barbecue flavors is certainly not an unpleasant combination😂 I’m intrigued by the preparation of the broth, however. Normally I would say to just clarify it with a bit of egg white as the French do, but then as the dish develops I see that there is a very clear purpose for Chef Crippa’s preparation with the sac a poche. We need that fat to add richness, but in a very subtle (and visually pleasing) way only at the end. I would love to taste!!!!!! Bravo Chef!!!!!!

    Veramente unico maestro.
    Se posso esprimere un mio parere, preferivo il piatto senza tutti quei fiorellini o quanto meno non così tanti, gli agnolotti con le salsine ricordavano proprio la forma e colori di un fiore.
    Comunque un capolavoro.

      @@Zeus-p2m 1) ho* 2) evidentemente non sei mai stato in uno stellato. Quel piatto fa parte di un menù degustazione da più portate, quindi esci sazio e con un'esperienza incredibile alle spalle. Se vuoi fare l'abbuffata vai in trattoria, questi sono piatti di una potenza di sapori non indifferente, più di una certa quantità non riusciresti a mangiarne senza esserne nauseato.
