    Have you seen the video of soaking Meju
    to make soy sauce in February?
    Today is the day to separate the meju that were soaked at that time.
    Normally, the meju are separated between 40~60 days after soaking.
    It's been about 50 days,
    It was a meaningful time to be with my daughter
    during the soy sauce making.

    Soybean Paste Making
    Ingredients
    9 lumps of meju removed from the soy sauce
    1 kg of meju flour
    500 g glutinous rice (7 cups of wet glutinous rice flour, 630 g)
    4 liters of water
    1/4 cup of red pepper seed powder(20 g)
    3 slices of kelp
    a pinch of coarse salt
    Preparation
    1. Glutinous rice is soaked the day before to make flour
    2. Pour water into a pot, loosen the glutinous rice flour, and stir to stir the glutinous rice paste
    3. Remove the meju from the soy sauce
    4. For soy sauce, strain the cotton cloth and store it in a jar
    5. Mash the drained meju with your hands, mix the meju powder, glutinous rice paste, and season with soy sauce
    6. Squeeze the miso into the jar
    7. Sprinkle with red pepper seed powder, cover with kelp, and sprinkle evenly with coarse salt
    8. Cover with a cotton cloth and let it mature for about 6 months, then remove the kelp

      네 장꽃은 피면 걷어내시구요 시간이 지나면 다 없어지니까 걱정 안하셔도 됩니다 잘 관리하세요

      올해 간장은 1년정도 숙성시킨 후 청장으로 국이나 나물무칠 때 쓰시면 되구요 묵은간장에 섞어 보관하시면 맛이 깊고 진한 진간장이 됩니다 오래 묵을수록 맛있지요

    고추씨 가루는 어디에서 구입해야 하는지요?

      고추장 담글 때 한티재에서 고춧가루 주문 했는데 고추씨가루를 약간 보내줘서 그걸 사용해요

      초기에는 당연히 흰꽃이 필수 있어요 체로 걷어내시고 미세먼지 없는날 뚜껑 열어 두세요 가을 지나면 깨끗하게 될거예요 걱정 안해도 됩니다

    선생님께 여쭤보고싶어서 글 올립니다.
    메주가 소금물에 잘 안 잠겨서 공기에 노출된부분에 푸른곰팡이가 피었어요.
    깨끗하게 걷어내고 소금물에 잘 담궈놓았는데 된장을 만들어 먹어도되는지 여쭤보고싶어서요

      메주가 장물에 잠겨 있지 않으면 곰팡이가 생길수 있어요 그 부분만 제거하시면 된장 담그는 것은 큰 문제는 없어요

    된장이 쓴맛이나고 검고 너무 짜요
    해결방법이있을까요

      된장 맛이 짜면 쓴맛이 나기도 해요 짠맛이 많으면 대두콩을 푹 삶아서 으깬다음 된장에 섞어 저장하면 간이 싱거워집니다된장 겉부분은 색이 좀 짙지만 속은 노랗게 되구요 오래 묵을수록 빛깔이 진해집니다

      된장은 싱겁거나 습한데 두면 그럴수도 있구요 간장은 햇볕 좋은날 뚜껑 열고 햇볕을 쪼여 줘야 해요 특히 장마철때 습해서
      탕나기 쉬워요
      보관과 관리를 잘 하셔야 해요

    선생님은 된장에다 고추씨가루 안넣으시네요 저는 이번에 고추씨가루를 넣었더니 쌉쓰름한 맛이나요 ㅠ 숙성이되면 괜찮을까요ㅠ😮

      된장은 매운맛을 낼 필요는 없어서 고추씨가루는 안넣었는데요
      고추씨가루 넣었다고 쓴맛이 나진 않을뗀데요
      좀 숙성시켜 보시지요

    저는 메주가를 때 보니 메주속이 카키색곰팡이로 가득차 있더라구여
    그냥섞어놓긴했는데 찝찝하긴합니다
