It’s mandatory for Korean schools to hire a licensed nutritionist to plan the lunch menu. They monitor the fat/carb/protein/sodium/sugar/vitamin lvls & calories for each day’s pairing of food. America definitely has the resources to make this happen so I guess it’s just a matter of will, or the lack there of.

Then about ten years ago everything changed, and now, everything must come pre-made, they aren't allowed to actually cook anything from scratch. It all comes from a food service, loaded with salt. It's super cheap food, and owned by a large political donor to boot.

    1. Perfect vegan food represented by Korean Buddhist temple food
    2. An endless variety of soup dishes
    3. Kimchi: Vegetables fermented with animal protein represented by cabbage kimchi. In the past, only Koreans made and ate it. There are over 800 types of kimchi.
    4. Jeotgal: A fermented animal-based sauce made from seafood. In Korea, there are more than 140 different types of salted fish.
    5. Ssam: It means wrapping all the ingredients you want to eat in various leafy vegetables represented by lettuce. However, unlike burritos, you have to swallow them in one bite, so you need to adjust the amount of ingredients to be wrapped appropriately.
    6. Herbal Medicine Ingredients : Herbal medicine ingredients are not only eaten for special diseases or health, but are also often used for general home cooking. For example, as ingredients for Samgye-tang, Mulberry, Tree Aralia, Eleutherococcus Sessiliflorus, Mongolian Milkvetch, Korean Angelica, Ginger, Jujube and Korean Ginseng are used.
    7. Namul : South Korea is the country that eats the most dishes made with only vegetables without meat and seafood protein. Namul are foods made with one edible plant as the main ingredient. Examples of the types of Namul include Shepherd's Purse, Stringy Stonecrop, Korean Angelica-tree, Korean Wild Chive, Butterbur, Bracken, Doellingeria Scabra, Bamboo Shoot, Chamnamul and Cirsium Setidens.
// Etc... Korea shows a distinctly different food culture from neighboring countries in Far East Asia (China, Mongolia, Vietnam, Japan).

fermented vegetables is pretty common in europe... lol!
also the modern kimchi has nothing business with the historical kimchi! cause modern kimci's main core is the cihili paprika... chili paprika is a native american plant! even the cashew!
also that perfect vegan food what represent korean buddhist... btw korea had their own religion which is a shamanic religion! buddhism was not too "popular" (only in a shorter time) also the confucism just taked everything! btw...
korea is mostly "religionless" (confucism is not a religion but a lifestyle-pilosophy)

@@gipsymelody1268a few misconceptions on your part as a student of Korean Studies. Korea is not religionless. While 50% has irreligion, most of them still has traditional beliefs rooted in Korean traditional religions and shamanism and 50% is divided between Christians and Buddhist. There is just a heavy secular disctinction in Korea so that no religion is dominating. Perfect for democracy. Also, the claim that modern kimchi is different from historical kimchi? Lol, there might be variations but Kimchi has been recorded and fermented vegetables have been reported to be eaten in Korea as early as 5000 BC. Way before any European civilization lol. Kimchi is made using KOREAN chilis, lol. Your claim that its imported american chilies and is just powdered paprika chili is far from the truth. Its Korean chili that has been native in Korea for thousands of years and the way of making kimchi has been relatively the same for thousands of years. Check your facts.

In Korea, all schools, either public or private, should have a professional nutritionist plan for everyday meal.
Calory, balance of nutrition based on the age of the students are deeply considered, and I heard that there is even an officialguidelines for it as well.
I still remember the whole country breaking up with disputes when the government was trying to legalize FREE MEAL FOR ALL STUDENTS, but now it is something we can proudly introduce to the world. One of the things that I am very much proud of this country.

During the pandemic, Phoenix, Arizona's schools are giving the lunches to the parents at a drive-up location. Because not every parent was opting to choose to get the food, most parents who were opting to receive the lunches were receiving way too much food for their own uses. My neighbor has been giving me her excess food, and wow, it's revolting, truly. The typical meal is low-fat, but high-carb, and poor quality proteins. There is tons of slimy, bright orange macaroni and "cheese" (I am truly not sure what that stuff is). Day after day of mini wieners wrapped in pancake batter. Plenty of grilled cheese. ( But again, is that cheese? I am unsure.) Chicken nuggets made of pressed chicken, that is weird and spongey and tastes of nothing but salt. Loads of fries. Tons of juice boxes, complete with high-fructose corn syrup. The only vegetable I have ever seen has been a section of corn-on-the-cob, and that is really just yet another starch.
Frankly, our kids are eating garbage, and learning poor eating habits at that. It is no wonder mosteveryone here in the USA is addicted to carbs, is massively overweight by the time they are 15, and has such a narrow interest of what foods are acceptable. Something has to change.
From a nutritional point of view, it is said the typical Asian eats something like a smaller portion of 71 foods per day, and the typical American, only 12. (Food means everything, such as cinnamon, sesame oil, a slice of pickle, a handful of cilantro leaves, a tiny bit of shrimp paste, etc. and not just the big stuff like a fillet of salmon, an apple, a glass of milk, etc.)
It is thought Asians age slowly because, at least in part, their diet is more nutritionally-sound than ours, in part because they are getting exposed to a wide variety of foods, thus ensuring getting at least some of many types of nutrients. We Americans eat not only a small number of foods per day, but the same foods over and over our whole lives. It's quite something to ponder, really.

In other words, this food, as a school lunch, is way better than fast food (which is what US food sometimes reminds me of; at least when I Was in school). Definitely no McDonald's or Burger King. a single stale dry slice of frozen pizza
a sandwich on the driest stale bun you could imagine
a “salad” that was a bowl of lettuce (lined with a tortilla for some reason) with little balls of chicken on top
or whatever the “hot meal” of the day was. Usually a dry hamburger or hot dog with beans as the only side
Also, it’s different in every school but we only had 20 minutes for our school lunch time. I don’t think we could’ve had time to eat these Korean meals even if they were served!

When I was in high school the food for the first two years was great, we had a program where the culinary kids got to make the food and there was always something good. Then they changed the laws and we couldn’t make the food anymore. It became a variation of bread and cheese with a sad green apple and bag of plain lays chips every day. Like cheese pizza without the sauce, nachos with no meat or other toppings, plain white bread and cheese sandwiches, warm noodles with half melted cheese, and instead of any other cheeses the cheese was always fake orange American cheese. I skipped every single lunch after that.
