  • Hello! Today on Flat Tire Farm, we work through our second stage in the series on zero waste processing for lemons. We're going to find ways to use every bit of a case of organic lemons and have nothing to throw away. Today JUICE is on the loose. We’re going to WATER BATH CAN LEMON JUICE and make LEMON CURD!!

    LEMON CURD INGREDIENTS
    2½ cups fine sugar
    ½ cup lemon zest (freshly zested), optional
    1 cup lemon juice
    1/2 cup unsalted butter, cut into chunks
    7 large egg yolks
    4 large whole eggs
    For the RASPBERRY LEMON CURD, I just added 1 cup raspberries, 1 more whole egg, and reduced zest to ¼ cup

    I stumbled onto this video & omg I'm hooked! I love your energy & humor. Then when your husband pulled out the eggs from his hoodie - that was priceless & hysterical. Now I need to find out what you did with the lemon seeds. Can't wait to check out your other videos.

    Im just finding your channel. You are adorable. 😂 you do a great job explaining things. I was bkessed with a bunch of lemons and was looking for how to can lemons. This fit the bill.

    Yum! I have never made lemon curd! Will definitely have to get that on my shelf! Have you ever tried using a steam bath canner? I just got one and it literally is a game changer. It uses so little water and way less energy than a traditional water bath canner. Thank you for another solid video!

    My mouth is watering... AGAIN! And its ALL your fault! (And the cutie patootie taste tester of yours!) His reaction is reason enough to make your lemon curd!! The problem for me is... I have no idea what to do with lemon curd! I'll be 113 in trucker years in a few days & I have no idea how to use lemon curd! Sooo... help a sistah out! Please?

      It's like a super rich lemon custard. Actually, I think that exactly what it is. Mr. Reeve's advice involves eating it right out of the jar, but most people use it in lemon bars, topping for cheesecake, you know all the healthy stuff.     I just did the lemon curd. Getting the zest off them is a pain in the fingers and this takes a long damn time. Definitely worth it!

      Yay!! I’m hoping to make grapefruit curd next! Zesting was definitely my least favorite part.😬

      The lemon curd is amazing! Definitely will make it again. I also saved the white stuff.. can’t spell the name of it and the voice to txt doesn’t understand me. It is in the freezer waiting to be boiled for pectin! My daughter want some lemon sugar bad so I will be zesting the rest of the lemons 🤨 but I can’t complain too much because she stirred the curd for almost a half hour today for me! I made a double batch and got 10 jars! That surprised me.

      @@Mindy56743 that’s so awesome! I’m so glad you’re finding this useful. My advice for using the pectin that didn’t make it into the video is this: when you go to make jam, get the berries or fruit juice to boil, then add the pectin and boil for a minute or two, Turn the heat off the, jar it and process like usual. I think I ended up with only a soft set in my raspberry jam because I added the pectin too early and it broke down too much before I jarred it. Your daughter was a shining star today.

      I have come to the realization that it's essentially a good way to preserve eggs. A protein rich dessert. 11 eggs!

      @@FlatTireFarmHomesteadingAlaska that is a very good idea. I am planning on making a crapload of pasta to use up eggs. I wonder if you could use the bottled lemon juice for the lemon curd?

      @@Mindy56743 yes you can totally use bottled lemon juice. You can also use bottles lime juice! Mmmmm. I’ve been thinking about pasta for egg storage too. How do you store it? Dry it and it’s shelf stable? Or in the freezer?

      @@FlatTireFarmHomesteadingAlaska it is supposed to be shelf stable but I plan to do a test on that. I am planning to do a huge batch dehydrating it and leaving some at room temperature and freezing the rest. I will check on the room temperature at 3 and 6 months to see how it goes

    When you water bath can lemon juice, does it change the flavor?

      Hey friend, great question. I find that the taste is a little more bland and not as “fresh” tasting as fresh squeezed. However, it tastes soooo much better than store bought. Store bought is so bitter, reminds me of earwax. Ha! Thanks for the question.
