    Get ready for summer with this tasty treat. Sweet strawberries and tart lemons make for a perfect refreshing pairing.
    6 c. cleaned and hulled strawberries, fresh or frozen
    4 c. fresh squeezed lemon juice
    6 c. sugar
    Ladle hot concentrate into a hot pint or half pint jar leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    This is a family favorite here (try it with blackberries!). I do half fresh squeezed and half bottled lemon juice and it works well.

    Never tried canning concentrated drink mixes, looks good Carol, I am going to try this. Funny how when two people go through canning books they never notice the same things, but wonder why they missed that when they see it made.

    I love fresh strawberries because the hulls go into ice cube trays with filtered water. I freeze that and give to my chickens. They love it.

    I just made this and also used frozen strawberries in addition to washing my lemons and cutting into quarters then I put them through my juicer. It worked really well! This is so delicious and will make a wonderful gift. Thanks for sharing!

    I did make this and,opened a jar when my twin sister was over for lunch yesterday.it was sooo delicious my sister wants me to make her some. I did leave the pulp from the lemon in. I plan on making more for the summer, I also used frozen strawberries .

    I would roll the lemons on the counter to get lemons softer and producing all the juice out of them. Looks great.

    Making this now! But FYI, ‘organic’ is a $ word. Farmers still use pesticides on them. It’s more expensive because yield is less (farmer here).

    I ordered the steamer canner through your site today. My husband said it is my 50th wedding anniversary gift. We were married Saturday January 1, 1972. My old enamel canner has been in use all these 50 years and is now badly rusted so it was time!

    Definitely will be doing this recipe. But before I do can you share where you purchase your candy themotor or how are getting it to sit in the pot without you holding it while it strawberry mixture comes to temp.

    Thanks for the recipe and this tutorial video. I canned only 4 pints using this recipe. I don’t know why it made such a little batch. Perhaps because I used Splenda for the sweetener. Anyway, the result was so pretty and delicious! Thank you so much!

      Carol - Thrifty Chic Housewife The All New Ball Book of Canning and Preserving page 124. It’s called strawberry syrup with the recipe for strawberry margaritas on the same page👍🏻 I know how much you love your Mexican food!
      Edit- I do tweak the margarita recipe. The recipe in the book is very strong for my taste, but I think cocktails are all about personal taste anyways right!

    This looks so refreshing. Question: To reduce the foam when canning jam, Ball says to add a half teaspoon of butter to the pot. Do you think that I could do this with the lemonade mix? Thanks, Carol.

      I don’t think you’d want the butter but you could try it. I really don’t see the foam as a problem 😊

      This recipe specifically calls for fresh lemon juice so bottled isn’t necessary for safety. Bottled lemon juice is often used in water bath canning recipes to ensure proper acidity. Most fruit is naturally high in acid and further acidity is not required for safety, as in this recipe.

    I have canned 13 pints of this so far and going for another 7 pints 😀; one of my jars with the Tattler lid didn’t seal so I mixed up my jar and . . . WOW this is sooo good

      I just started using harvest guard reusable lids. It's a branch off tattler, I think the son of the company started. I'm having issues with the lids unsealing days to weeks later. I never had that happen with regular metal lids. Have you noticed any issues with tattler? They are definitely sealed when I store them. They just come undone for some reason.

      @@cathyann6835 yes. I have learned the gasket needs to be in hot simmering water. I leave the lids in a pan on the stove with water and let them simmer until I’m ready. So I will fill all of my jars, debubble, and wipe the rims off; then take the pan off the stove and start putting on my lids. Hope this helps.

    Amazing! Planning on making this, this weekend! When I was reading the Ball book it says fruit juice could be added in replacement of sugar for jams, do you think I could use a white grape juice here instead of the added sugar? Or half the sugar?

    Hello Carol. I love your recipes, have tried too many to count, & have a question. My daughter asked me if home-squeezed fruit juice,( watermelon specifically, as well as all others) can be safely canned in mason jars at home?

I told her I could not find a tested recipe for watermelon juice & knew it's pH level is not acidic enough. I'm still somewhat new at food preservation so your help is much appreciated.

      I’m sorry but I can’t say changing the fruit would be safe to do. The recipe was tested with strawberries.

    If you throw your lemon in the microwave for a few seconds it helps to release the juice.

    Hello again I messaged you a few days ago that I was going to make this .I quite don’t understand the temperature on heating the strawberry mixture.You said to heat to 190 degrees is that Celsius or Fahrenheit?. I don’t understand I borrowed a candy thermometer from a friend in the building because, I couldn’t find one in town and,if I ordered one I wouldn’t get it until the end of the month or the 1st week of February.

    I just got the steam juicer do you think that would work for the berries? I just got 2 flats of strawberries and 2 of blueberries Blackberries are next!! When my Meyer Lemon was full of lemons we juiced a son of them and canned the juice. I have 12 pints and 1 qt so I will be using that.

    I didnt see the processing of making the mixture. So im not exactly sure how long to go in a blender to get that consistency

    How long is this shelf stable for? I made some last year and now its dark in color and has some gelatinous strawberry stuff around the top. Idk if thats normal or not.

    Yesterday I canned whole strawberries and ended up losing the seals when I took them out of the canner. 3 qts. I'm wondering if I can use the juice from those jars for this recipe? I'm asking because the internal temp must have gotten above 190°. All of the juice recipes state not to cook above 190° when preparing them.
    I do have fresh on hand but don't want to waste what I processed yesterday.
    Any suggestions?
    I will be making this today!!!

      Honestly I’m not sure on that one. You might want to consider freezing it instead.
