⇒ lemon chia pudding 1 cup canned coconut milk, 1 1/2 cup unsweetened almond milk, 3 tablespoons sugar or honey, 1/2 cup chia seeds, 1/4 cup lemon juice, 1 teaspoon lemon zest. Blend in blender or stir well to combine and put in fridge for 3-4 hours. Top with granola, fruit and shredded coconut flakes!
⇒ lemon pasta: heat olive oil, 2 cloves of fresh pressed garlic, juice and zest of 1 lemon and 1/2 cup heavy cream over low heat until reduced. Add cooked linguine to sauce plus 1/4 cup reserved pasta water. SO GOOD!!!
⇒ candied lemon peels: cover sliced lemon peel in water and bring to a boil. drain water and repeat 3 times. Make a simple syrup with 1 cup water and one cup sugar - simmer until dissolved. Add boiled lemon peel and simmer for 20-30 mins until no longer bitter. Roll in sugar and eat as a snack or use for garnish.

Greetings from Canada! What I wouldn't give to have a lemon tree in my backyard! Thanks for sharing these great tips. I would like to add that you can also freeze lemon zest. I always make sure to zest lemons before I juice them for the freezer. Nothing like lemon juice to brighten up your salmon or chicken in the dead of a Canadian winter!
As always love the tips. But a huge reminder for lemon lovers (I love lemons, but am paying dearly for my lemon infatuation), it will erode the enamel of your teeth. Don't eat too many foods and sauces or drink too many drinks with lemon juice a day. Granted I ate lemons like they were the only food available.
Don't brush right after eating or drinking anything acidic. That will erode the enamel really quick: Acid + abrasive = teeth issues for life. Also probably should have put in a horror warning before saying that, in case any dental people are reading. It's the equivalent of the Psycho shower scene music.
Just go easy on the lemons. When I was in my young twenties my dentist thought I was bulimic. I stopped eating lemons at 22. Decades later, I'm still a constant at the dentist and have spent so much on dental care. If you drink something with lemon juice, use a straw to keep as much away from teeth as possible.
That said, I'm totally making that pasta sauce. I still love lemons, I just have to limit the amount used in drinks. Food recipes are usually okay.
