  • About a month ago, we experimented with canning up some store bought orange juice we had leftover from the holiday season. It worked great, and still tasted great after weeks of just sitting on the shelf in our pantry. Today, we're out of Lime juice, so I bought some in bulk and plan to portion it down into smaller increments and can it as well. This is a great way to reduce the cost per ounce of many things you may purchase. It can also help to ward off inflation of prices - since you can buy now when things are cheaper.

    You can also freeze dry and then powder lemon and lime juice. Pour it into your trays that you have already placed into your fridge-freezer and pre-freeze the liquid. Then pop into your freeze dryer and set to run. Once it's done just powder it up and store it in a mason jar. Two trays would be about 1 quart. That would save jars and space!

    I have been canning things all year long I just bought a case of tomatos and canned diced tomatoes.
    I break down store bought a large quantity of ketchup in to smaller jars , same with sun dried tomatoes packed in oil. As well Katamala olives into smaller jar for on my pantry. This way I can taste advantage of buying in bulk things I'm able to re- water bath or pressure can and save some money

      How do you do the sun dried tomatoes I have never seen that done before asking because I have a big jar of sun dried tomatoes opened in the fridge and I don't want to throw them out so do you pack the jar and water bath that way I am new at this 😀

    Never thought of canning store bought juice, but I will. I have canned grapes when I got them for less than a dollar per pound.

    Racheal, Im in upstate NY, I have a lime and a lemon tree. Just put them in a pot and keep them outside till the temps get too cold and then bring them in. One of the many joys of it is by the time you bring them in there should still be flowers on it and it will make your house smell sooooo good. You only need one cause they produce a ton. And they look gorgeous as a house plant. Youll love it go for it

    Recently got a steam canner, splurged on the Harvest one that is also a water bath canner+stockpot.
    First time I used it? It was so quiet I was like, Is this thing on?! She was.
    Using only a little water means I am now more inclined to do water bath canned things in the winter. I empty out that huge pot of water into the garden in the summer. The steam canner water went into the Berkey. Game changer to be sure!

    Ok I’m so happy you posted this! We have a lime tree in our backyard, and I’ve always just juiced and frozen what I couldn’t use, but our freezer is just not big enough. So I will definitely try this!

      Homesteading family has a video on fermenting whole lemons or limes. Great way to preserve them without having to can and process the limes.

    I got mine this summer I do such big batches I use the old canner. But jams etc this year I will be using it. My hubby from MI might have told you before Trenton downriver Wyandotte, been in SC now 20 yrs. I've taught him a lot . But I'm on board got a 50 lb. bag of onions today we dont have a gif down here need some bouliion you use in you onion soup and carmelized onions . I love you recipes. Thank you have a blessed day

    I have been using my steam canner for over two years now and I absolutely love it. I can't lift a waterbath canner to empty it anymore.

    I don’t know how my fruit and citrus will fair in Southwest Oklahoma but in the past few weeks my grape vines, blueberry, blackberry & raspberry bushes and my fig, Meyer lemon & key lime tress have arrived.

    So excited I just got my steam canner last week. I also got a water bath canner but it is huge lots of water for that one. this winter I found a double presto used canner in yellow and the same day found a used single presto canner in yellow with the jiggler, just trying to figure out what to order for them so everything is new and then I am off. I also got one of the 3 layer juicers (came down to $89 yesterday on Amazon). This is the year I will take the leap and can. I had started buying used jars first and looking for used pressure canners. By the time the shut down came you couldn't get lids your pressure or water bath canners. So I had to start buying new jars and now have enough and even ordered forjars lids. So this is the year. Thanks for the tip on orange juice and lime juice. Won't lie pressure canning scares the snot out of me but I am going to do it

      You will be fine! Just make sure each time, that the steam is coming out the vent. Enough water in the pot to make the steam.
      Open the canner ONLY when there is -0- pounds of pressure, away from your face.
      Oh, ps I was taught to can very young, my first pressure canner at 18 was Avocado Green!

    This is a great idea! I don't have limes growing but I do have a Meyer lemon tree that gives me bushels. I give away, I juice and can, I dehydrate to make spice, Moroccan preserve it in salt...... and on and on. But I have found the best way for me to use them is juiced and canned. Lemonade in the winter or cooking. Now I need lime juice LOL

    I love having a steam canner. I'm so much more willing to make jam on the spur of the moment when I don't have to worry about filling up the waterbath canner, its too heavy for me to lift once its full of water so I need the husbands help to move it and then I can't just do it anytime I have to wait for when he is home.

      I can't lift a filled waterbath canner either. I put it on the stove, and use a smaller pot to fill it. When I'm done using it, I reverse the process and empty it using a pot, until I can lift the canner, itself. Been doing that for years since I began to lose strength in my hands. It's a few more steps, but worth it, in the long run to get the job done, when I want to do it.

    I love my FruitSaver steam canner for small batches too! When I have a hour I take my fruit juices and make jelly I never thought about canning lemon and lime juice!

    I live in the Phoenix AZ area, where citrus is abundant in the early months of the year, and people start giving it away by now. I just canned orange juice and now sour orange juice, and have canned lemon jelly. Hoping to get more lemons to can more juice and hopefully some limes. Love that you posted this, first with the leftover OJ, and now with this!

    Great idea! I have a Victorio Water Bath/Steam canner(it even has the same dial on the lid)...so great when using larger jars!

    I live in Canada and way back in 97 I bought a aluminum steam canner. I still use it every year. It’s ugly but works great. Nothing fancy but looks like yours in shape. It doesn’t have a gauge. Victorio. I think that is how it’s spelt…also makes a steam canner. Love the idea of canning lime juice.

    I've frozen grapes and they make a nice snack--kind of like a grape Popsicle. You can also put the frozen grapes into smoothies.

    I have the Harvest steam canner from Roots and Branches (looks like a regular pot with a gauge on the lid). It is the BEST thing ever!! I don't think I'll ever water bath can again.

    Another great video! Definitely will try this if I can find a large bottle of lime juice! I like this idea though, not only does it save money , buying in bulk, but when you can can it in smaller jars for recipes, you don’t have to worry about it possibly going to waste in your refrigerator! Prices are crazy here too! I love grapes too, but the most I’ll pay is $1.97 lb. If the price is higher, I will go without!

    I make lime pickle every year, it’s our favorite. You don’t use lime juice but canning lime that’s a powder.

    Wow grapes here at Meijer are $1.79 for non-organic and $4.49 for organic. Wonder why yours are so outrageous!
    I sort of did the same thing a while back. I am a Walmart + member and once when I received a grocery delivery, I got a free bonus gallon of fresh orange juice. I normally only use it in cooking just every now and then but certainly didn't want to waste a free item! So I canned mine too and it's come in very handy a few times now. I love lime juice, will have to check that out also.

    I am elderly and disabled which gives me constant blatter infections. Limeade will often flush an infection away. We have a source of inexpensive limes which is a local Mexican market. I bought a bunch of limes, sliced them and canned them.

    Awe grapes are 99cents a pound here in southern Ohio. I’d say I send ya some via mail but they probably wouldn’t last the trip. Thanks for sharing your canning videos one day I hope to get some canners.❤️

    Good concept to consider, to explore. What do we do if we can't procure it locally? Citrus is indeed an item that doesn't grow around here. Another, for us, is anything that grows in salt water. I hadn't thought about it, until watching this video. There are guidelines for canning oysters. Uhmmmm

    Grapes here are so spendy by Fremont Michigan. And don’t look that good . Yup dear I won’t touch them prices nope . I canned up 14 quarts of lemon juice a few months ago we use a lot of it GODBLESS sweetie

    We freeze dried lime slices and then powdered it. It is a great flavoring agent. I wonder if the heat affects the taste. Will be interested in future videos using it. It looks like it separated.

    Rachel, I love your way of thinking when it comes to preserving things for future use. Because like you said yes things seem to be going up astronomically. But I guess the question I have is wouldn’t lime juice last pretty long anyways in the refrigerator? Or because that was a gallon size of lime juice it was too hard to store any refrigerator? And does the lime juice last a longer amount of time then with the gallon container would last?

      We are near OKC and my husband buys lemons for his juicing… it’s crazy how high citrus has gotten! I’m going to order the lemon juice on Amazon and freeze it in quart freezer bags laid flat so he can just throw it in fresh… 🤷‍♀️

    I keep getting lots of limes in my food CoOp -I juice them & can or make limeade concentrate and can it-ready for lots of yummy summer drinks and desserts😋. I often get orange juice in CoOp too-before it went bad canned it up! (So glad I remembered you doing that or I may not have to

    I just bought a gallon of my husband’s favorite hot sauce. Then I realized that I have to refrigerate it after opening and I don’t have the space. When I saw this video, I wondered if I could can the hot sauce. How do you know how long to process something that is a combination of ingredients, and I don’t necessarily know everything that’s in it. Water bath or pressure can? I would love your thoughts!     Great idea for storing juice. Would this still be good for using in canning though? I have no idea if the acidity levels change once heated. Just wondering.

    That steamer canner is on my list. Lol. Could you have used all of what was left in the bottle and still used your quart and a half jar if you added enough water to top it off? Can you do top offs?
